This has led to an increased interest in traditional fruit cultivars and related products. Traditional apple cultivars in Bosnia and Herzegovina are a valuable source of desirable genetic characteristics including important pomological, nutritional and technological characteristics of the fruit. The sugar and organic acid profile of fruit is an important component of chemical composition and provides valuable information regarding the authenticity of fruit products. They also have an effect on the sensory properties and nutritional value of fruit products. Ten traditional and two international commercial apple cultivars were analyzed, using HPLC, for individual sugars (sucrose, glucose, fructose and sorbitol) and individual organic acids (malic, citric, shikimic and fumaric acids). Fructose was the most abundant among sugars that were quantified in apple fruit, followed by glucose, sucrose and sorbitol. Malic acid was predominated among the individual organic acids in both traditional and international apple cultivars, followed by citric, fu-maric and shikimic acid. It was also found that cultivar had a significant influence on individual sugars and organic acid in the fruit. Generally, traditional apple cultivars had higher sugar content and lower organic acid in relation to international ones and with respect of this they are sweet and good for direct consumption and " pekmez " production.

Specific aims were to evaluate and compare consumer acceptability of scab-resistant apples in relation to commercial cultivar ‘Golden Delicious’ Reinders as well as to define the most important pomological characteristics (fruit size, firmness, content of soluble solids and acids) of scab-resistant apples and compare these with above mentioned commercial cultivar. The antioxidant content of processed fruit products is largely dependent on the antioxidant content of fresh fruit, the type of process as well as the storage duration and its conditions. Some authors suggest that consumption of cornelian cherry or other fruits containing anthocyanins has the potential to reduce the risk of diabetes and obesity. Fruits were assayed for physical properties (fruit and stone weight, fruit length, width, thickness, and stone length and width) and soluble solids, total acidity, reducing sugar, ascorbic acid, total phenol and anthocyanin contents. The cornelian cherries weighed from 1.6 g (Bugojno area, 2012) up to 2.1g ( Konjic area, 2012). Ascorbic acid ranged from 253.62 (Bugojno area, 2012) up to 440.60 (Konjic area, 2013) mg 100g-1 fresh weights. Anthocyanin content ranged from 389.10 (Konjic area, 2012) up to 398.92 (Bugojno area, 2012) mg cyanidin-3- glucoside equivalents 100 g-1 fresh weight whereas the amount of phenol ranged from 2158.55 (Konjic area, 2012) up to 2750.38 (Konjic area, 2013) mg gallic acid equivalents 100 g-1 fresh weight.

Therefore the content of β-D-glucans (BG), physical, chemical and sensory properties of barley biscuits were determined in relation to share of added wheat flour, flour extraction and baking temperature. A three experimental factors experiment was designed. Four different mixtures of barley and wheat flours were used for biscuit production: barley flour 100%; barley/wheat flours in combinations 75/25, 50/50 and 25/75, according to procedure described in AACC method 10-52. All samples were prepared with 2 different flour milling fractions: barley and wheat whole meal flours (A flours) and barley and wheat flours of 87% extraction (B flours). The temperatures used for baking were 150 and 200 0C for 15 and 7 min, respectively. Total of biscuit samples were made in duplicates while all analyses were performed in triplicates.
