The capability of mushroom tyrosinase to catalyze the oxidation of tyrosine residues of Bombyx mori silk fibroin was studied under heterogeneous reaction conditions, by using a series of silk substrates differing in surface and bulk morphology and structure, i.e. hydrated and insoluble gels, mechanically generated powder and fibre. Tyrosinase was able to oxidize 10-11% of the tyrosine residues of silk gels. The yield of the reaction was very low for the powder and undetectable for fibres. FT-Raman spectroscopy gave evidence of the oxidation reaction. New bands attributable to vibrations of oxidized tyrosine species (o-quinone) appeared, and the value of the I853/I829 intensity ratio of the tyrosine doublet changed following oxidation of tyrosine. Abstract The inulin-type fructans, inulin and fructooligosaccharies (FOS), are part of dietary fibers for production of functional foods with improved health benefits. The increasing application of these components in food technology needs reliable methods for their analysis and control. The aim of the current review is to present and compare the main analytical methods for inulin determination in food products. This study summarizes not only the common applied spectrophotometric and enzymatic methods, but also describes in details chromatographic techniques-HPLC, GC and TLC, IR-FT and real time 1 H NMR spectroscopy. Some of suggested analytical assays, especially spectrophotometric, enzymatic and HPLC-RID methods are applied for routine analysis in analytical practice for monitoring of some process in food technology and control in food labeling. Special attention has been paid to nondestructive IR-FT spectroscopy that reveals the potential to identify the presence of inulin by typical for β-→1 glycosidic bond. Some typical shifts are shown for structure elucidation or hydrolysis of inulin by NMR spectroscopy.

The Turin Shroud was extensively scientifically investigated in 1978. In its pinkish red bloodstains, normal features of human blood were found, but also seemingly anomalous ones. In the present study, hitherto unnoticed details of the data are presented, Shroud data and more modern reference data are compared, and the results of a few experiments with linen, madder dye and blood are shown. It turns out that the Shroud’s ‘anomalous’ data are strong consistent evidence that its bloodstains contain acid heme-madder lake, of which the heme derived from cold acid postmortem blood and the madder had been applied to the Shroud at manufacture. It implies that the bloodstains were formed on the Shroud before the still not reproduced body-image was. Several other ‘red-color’ hypotheses for the Shroud’s bloodstains are discussed and dismissed.

Titanium and its alloys are widely used as implant materials. Their integration in the bone is in general very good without fibrous interface layer. However, titanium and its alloys have certain limitations. Metal ions are released from the implant alloy and have been detected in tissues close to titanium implants. The release of these elements, even in small amounts, may cause local irritation of the tissues surrounding the implant. Cell and tissue responses are affected not only by the chemical properties of the implant surface, but also by the surface topography or roughness of the implants. To overcome the problem of ion release and to improve the biological, chemical, and mechanical properties, many surface treatment techniques are used. Any surface treatment that would elicit favorable response from tissues can be applied to enhance the usefulness of the implants. In view of this, the current review describes surface modification of titanium and titanium alloys by ion beam implantation.

Dairy ghee is a prominent synergistic fat product that is comprised of various health benefiting compounds such as milk fat globule membrane, conjugated linoleic acid, and short-chain free fatty acids. It emanates numerous beneficial actions on human heath are anticancer, antidiabetic, anticholesterolemic, antimicrobial, antioxidant, antiatherogenic and anitadipogenic properties. In order to increase the quantity for marketing purposes, ghee is adulterated with low quality fats. These adulterated low quality fats have long-chain fatty acids and trans-fats which causes cardiac diseases, obesity and renal dysfunction. Hence, the present study aimed to detect the adulterant in ghee by Fourier transform infrared spectroscopy method. It also shows the quantitative increase of adulterated animal body fat with ghee. The peak C=C increases with the raise of alkene concentration. The N-H bend peak, which represents amines, determines the trans-fat adulteration, causes health-related issues. Thus, FT-IR technique proved the ideal tools for detecting and estimating the degree of ghee adulteration.

Carboxymethylated tamarind (CMT) has been synthesized by reacting tamarind kernel powder (TKP) with sodium salt of monochloro acetic acid (SMCA) in the presence of sodium hydroxide. This new material was characterized by a variety of materials characterization techniques, namely intrinsic viscosity measurement, FTIR spectroscopy, 13C NMR spectra, thermal studies (TGA and DTA), static light scattering (SLS) technique for determination of weight average molecular weight and elemental analysis (C, H, N and O). Context: Drug solubility is one of the most important physicochemical properties for the development of new pharmaceutical products, which, in our study, is a new synthetic molecule, which has been shown to have a potential neuroprotective effect in rat.

Aims: To evaluate the equilibrium solubility of JM-20 within the physiological pH range and aqueous chemical stability.

Methods: It was performed at pH 1.2, 4.5 and 6.8 at 37 ± 0.5°C for 27 h by the method of the saturated flasks. HPLC and FTIR were used for the study of aqueous stability and to evaluate the molecular structure of the non-ionized fraction by DSC/TGA.

Results: Concentrations calculated at pH 1.2 were higher than at pH 4.5 and pH 6.8. A retention time greater than pH 4.5 and 6.8 after 24 h was detected in the aqueous stability study at pH 1.2, in addition to other peaks in these chromatograms. Analyses by FT-IR and DSC/TGA demonstrated the absence of polymorphism in the dissociated fraction of saturated solutions.

Conclusions: The JM-20 presented at 6 hours its maximum steady state of solubility, being inferior to pH 4.5 and 6.8. It is corroborated by the qualitative analysis by HPLC, that the compound is chemically unstable from 24 h to pH 4.5 and 6.8. By FT-IR and DSC/TG it was elucidated that the fractions of the molecule not dissociated, did not undergo structural changes in it, and it is inferred that there is no polymorphism.
