    Breakfast on the Fly

    We all know breakfast is the most important meal of the day, but how many of us actually treat it that way? More often, weekday breakfasts are treated as an afterthought—a protein bar snagged at a convenience store, a secretly sugary parfait from Starbucks coffee shop, or, worst of all, nothing.

    I’ve found that with a bit of planning (Hazelnut-Maple Granola, facing page), and an arsenal of quickie recipes (Almond-Banana Smoothie, page 28) in my back pocket, a nourishing, balanced, fueling workday breakfast isn’t out of reach. All recipes in this chapter can either be made in 15 minutes or fewer, or prepped and reheated as you run out the door to start your busy day—and since this book is about cooking for two, you’ll get yourself and your special someone off to a healthy, well-fueled start.

    Hazelnut-Maple Granola

    George and I spent our newlywed years moving from one tiny, one-bedroom home to another, but we loved to host friends—despite the cramped quarters. I like making granola when guests come to stay. I set it on the counter in a big glass jar the night before with a note inviting my guests to dig in if they wake up before I do. There’s no better feeling than welcoming your loved ones to your new home.

    MAKES 5 CUPS [500 G] GRANOLA

    ¹/2 cup [110 g] coconut oil

    ¹/4 cup [80 g] maple syrup

    2 cups [200 g] old-fashioned rolled oats

    1 cup [100 g] unsweetened flaked coconut

    1 cup [120 g] chopped raw hazelnuts

    ¹/2 cup [50 g] sliced almonds

    ¹/4 tsp Maldon sea salt

    ¹/2 cup [80 g] diced dried apricots

    ¹/2 cup [70 g] diced dried cherries

    Preheat the oven to 325°F [165°C]. Line a baking sheet with parchment paper and set aside.

    In a large bowl, stir together the coconut oil and maple syrup to combine. Add the oats, coconut, hazelnuts, almonds, and salt. Stir until all ingredients are evenly coated. Pour onto the prepared baking sheet and spread evenly.

    Bake for 25 to 30 minutes or until golden brown, stirring every 10 minutes. The coconut pieces will burn quickly, so when they are golden brown, remove the baking sheet from the
