Garlic is a globally used spice due to its pungent taste and a fishy deodorant and digestive stimulator. Owing to the widespread use of garlic in both Oriental and Western medicine, further investigations on garlic extracts might carry important implications in the industry. In this study, we conducted extraction of garlic extraction by two conventional methods and an ultrasonic assisted method. The processes were optimized with respect to various quality parameters including polyphenol, flavonoid content, and antioxidant activity. The results showed that extracting garlic under the ultrasonic support will show higher efficiency than the non-ultrasonic extraction. The optimal extraction parameters are: 70% ethanol solvent, 10/1 solvent / material ratio, 40 °C temperature and 40 minutes time. Introduction. This review examines the current state of technology for ultrasonic isolation of biologically active components from medicinal vegetal raw materials. The main emphasis is placed on "green" technologies that intensify the processes of isolation of components such as flavonoids.Text. Modern technologies imply the use of combined methods, including, in addition to ultrasound, significant grinding of raw materials before the extraction process, the use of supercritical solvents (liquefied gases) under excessive pressure. The effect of ultrasound power and temperature on the output of the extracted components was also considered.Conclusion. 1. To increase the yield of biologically active compounds from plant raw materials among various physical methods of extraction intensification, the use of ultrasound dominates. 2. Ultrasonic extraction can be divided into several main types: extraction in an ultrasonic bath, the use of submersible ultrasonic emitters, as well as the combination of ultrasonic extraction with additional types of influence. 3. In the literature, examples of the use of ultrasonic extraction for the isolation of phenolic compounds are most fully presented, it being noted that the parameters need to be selected individually for each individual plant. 4. The power of ultrasound and the nature of the extractant can affect the course of oxidative processes in the extract, and such phenomena are characteristic not only for too high capacities, but also for low ones. 5. Ultrasound can significantly increase the yield of biologically active compounds even in aqueous extraction of fresh raw materials. 6. The spectrum of extractants selection for ultrasonic extraction of plant raw materials is quite large. Both organic solvents (ethanol, methanol, ethyl acetate, acetone) and water can be used, as well as mixtures of various extractants.

Abstract The development of targeted drinks is a priority in the field of healthy eating. For their production, plant raw materials are actively used, containing a wide variety of biologically active substances. The presence of these ingredients helps to improve many physiological processes in the body, as well as to increase its immune status. Numerous studies have confirmed the high efficiency of ultrasonic effects on various technological processes. Ultrasonic extraction was carried out at t = 20 °C and an ultrasonic wave frequency of 22 kHz. As a result of research, it was found that with ultrasound exposure, an equilibrium state is achieved within 15 minutes. In order to develop new recipes for drinks, natural raw materials, their chemical composition and the effects on the human body have been studied. The selected ingredients in a certain quantitative ratio made it possible to obtain drinks with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the drink and the aftertaste, as evidenced by the comparative organoleptic evaluation of the samples. The functional properties of the developed drinks have been confirmed experimentally. In the drinks, the following were determined: the content of macronutrients, antioxidant activity, the content of vitamin C, the duration of the shelf life. The use of the method of ultrasonic extraction in the technology of preparing drinks allows one: to reduce the preparation time by half, to reduce the amount of raw materials by 15 %, to increase the content of macronutrients by 45 %, to increase the content of vitamin C by 35 %, to increase the antioxidant activity by 45-50 %, increase stability during storage by 50 – 60 %, increase organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional drinks.

Flavonoids are one of the important active ingredients from Acanthopanax senticosus, with a variety of biological functions, such as antioxidant and antibacterial properties. The aim of this work was to investigate enzyme-assisted ultrasonic extraction of A. senticosus flavonoids and their enrichment and antioxidant properties. We found that the optimal extraction process after Box–Behnken response surface optimization had the following parameters: a 3:2 ratio of cellulase to pectinase, enzyme mixture amount of 6960 U g−1, enzyme treatment time of 59.80 min; temperature of 53.70 °C, and pH value of 6.05. The yield of total flavonoids reached 36.95 ± 0.05 mg g−1. The results for different polar solvent enrichments showed that the highest flavonoid (61.0 ± 0.344 mg g−1), polyphenol (24.93 ± 0.234 mg g−1), and saponin (17.80 ± 0.586 mg g−1) contents were observed in the 1-butanol fraction, and the highest polysaccharide content (20.04 ± 0.783 mg g−1) was in the water fraction. Pearson correlation analysis revealed that the antioxidant potential of the extract was related to the higher amount of flavonoids and phenolics in the extract. We thus found an effective A. senticosus flavonoid extraction and enrichment procedure, which can serve as a reference method.
