Course Reflection

Rebecca Anguiano reflects on her learning outcomes from ETHS 2430-03 course. Course Reflection-Student Outcomes
5/3/16
1. Students should be able to think critically.
When looking back at the course, I believe that the issue I had chosen to present
about in class, definitely demonstrated my own effective critical thinking skills, and most
importantly in a way I hadnt thought of before. The issue I had decided to look into was
Child Obesity, specifically focusing on Hispanic and Latino students and how they are
affected by it. When going through the process of collecting data and gathering enough
information for the issue, I had realized that the Hispanic and Latino students are most
commonly affected from it through diseases and academic achievement. Because of my
findings, thinking critically for an effective strategy really helped me recognize that not
everyone will think the same way.
When it comes to the Hispanic and Latino population, it was up to me to analyze
my own strategy and make sure it can actually be applied to the culture itself. I say this
because, there are so many misconceptions and personal beliefs that not all
Hispanic/Latino people might agree with or not meet eye to eye with my strategy.
Considering that I come from a Hispanic/Latino family myself, it was still challenging to
keep my mind open enough to realize that there are so many other obstacles to consider
rather than just focusing on the good of the children. In the end, when it came time to
brainstorm a strategy and breakdown information to make it understandable enough that
this is a problem and needs attention, I gained the knowledge and creativity to
successfully think of a strategy on my own. All of this is something I know will help me
achieve my goals in future courses. I plan carrying that experience with me from now on
as well.
2. Students should develop quantitative literacys necessary for their chosen field of study.
To demonstrate my understanding of interpreting information, once again I use
my final project presentation as an example. As mentioned before, thanks to this
assignment I had gone through the process of gathering data and information that would
be good enough evidence for my presentation. Through the process, I had discovered
several forms of statistics including graphs, pie charts, and researchers results from
recent studies. All of which were related to child obesity and its correlation between
Mexican American students.
When it came to planning out my presentation, I realized that I needed specific
information that would be applicable to my argument and most of all my strategy. With
that said, I decided to look for a recent percentage on how many Mexican American
students would be considered overweight today, how much child obesity rates overtime,

and most importantly what are the effects of being overweight and how it can actually
decrease academic achievement overall. Once I had found what I need, it was up to me
analyze the studies or the results from researchers, or the table charts and graphs and be
able to explain that given information in a way the audience would understand. Because
of this assignment I was able to break down complex data into my own words for the
readers and audience. Since then, I know I have expanded my knowledge and skills in
being able to analyze this work, therefore it is something I plan on using in future course,
and am sure this experience has only helped get better at it.
3. Students should develop the knowledge and skills to be civically engaged, and/or to work
with others in a professional and constructive manner.
Without the help of this class, I wouldnt have been able to see through the eyes
of my peers and come to an understanding of the various cultures and ethnic backgrounds
surrounding me. Throughout the semester I learned about how the Mexican American
culture differs from the American culture and what it truly means to be culturally
competent. One specific event that I know can definitely demonstrate this is one we had
done as a class. I believe it was our final class assignment when we had been put into
groups of four and job was to create a tower with the tools provided, the only problem
was one of us couldnt speak, the other wasnt allowed to see, another couldnt use their
hands, while I was required to be 5 feet away.
It was this very assignment that had really shown how important it is to have an
open mind. Learning to work with others despite their situation was the main idea of the
assignment and that was something that has stuck with me since. Other assignments that
demonstrate our understanding of the culture was through eating Mexican authentic
foods, visiting and reflecting off the Mexican American wall arts, and local Mexican
American sites. All of this and more showed me that not only diverse the culture could
be, but how important it is to make sure we accept one another and learn about the
different cultures rather than minimizing them over time. Overall, with the help of this
class I was able to learn about myself and my true capacities by being able to analyze
complex information. At the end of it all, I was able to recognize how much more my
identity means to me as well as other people and their cultures, I learned to have a sense
of self getting to know who I am as a Mexican American, and most importantly I
developed an appreciation for the ethnic backgrounds around me and learned to work
with several cultures and beliefs.
