Happy New Year! Without sounding grumpy, Im not really a big fan of January. After the excesses of Christmas, I resent the changes, feeling guilty for not instantly switching from mulled wine to cranberry juice, or pyjamas to gym kit. Taking the tree down is always a bitter moment (was that corner always that bare? Do we really have to take it down?). Everything looks plainer, and dark nights without fairy lights are all the longer. But, on the positive side, we have a fantastic January issue packed full of lovely food that just happens to be healthier. Flavoursome, satisfying and easy on the eye, our warm salads on page 37 promise to be healthier but not too goody two shoes! Weve also chosen the nations favourite meals and created lower-calorie and lower-fat versions (page 29). I make the turkey burgers at least once a week but have to admit that mine comes with a dollop of low-fat crme frache at the very least and a cheeky glass of wine. You only live once!

Asdas free-range egg noodles are produced by Kanes Foods in Worcestershire. The unique thing about these noodles is theyre made fresh in our factory every single day of the year apart from Christmas Day, says Production Director, Mark Harris (left). This means theyre much better quality than dried egg noodles, which are manufactured, dried and rehydrated when cooked.
Our process is completed daily and our noodles are truly fresh. Theyre a great meal solution with stir-fry vegetables and sauces. Mark Harris
To make these noodles, we use an authentic recipe of our, free-range eggs, water, salt and turmeric, says Mark. Each week, Kanes Foods supplies Asda with 86,000 bags (42 tonnes) of fresh egg noodles. Theyre super quick to prepare and you can create delicious Asian dishes, including stir-fries, soups and cold salads.
My favourite way to eat these noodles is to stir-fry fresh prawns with an Asda Hot & Spicy Stir-fry vegetable pack, add a handful of fresh egg noodles and nish off with some Asda Sweet Chilli Sauce, says Mark. There are many types of noodles available (see panel, above), but Kanes Foods focuses on fresh egg noodles, as well as dehydrated rice noodles.

All Asdas tender spring greens are grown in the UK, and theyre one of our best-selling cabbages at this time of year. To make sure they are as fresh as they can be, we get them from the eld to the store in 24-48 hours. Not bad, eh?

This versatile cabbage arrives early in the year and its bright green leaves are sweet, tender and packed with avour. Spring greens are easy to prepare: simply remove and wash the leaves, then slice or chop. You can use them in stir-fries and soups or, for a tasty side dish, lightly steam the leaves and toss with a little butter and black pepper.

Parsley
Whether its the traditional curly kind or the stronger avoured at-leaf variety, parsley is the most widely used of all the herbs. Finely chopped fresh parsley leaves are great in soups, stews and dressings; the stalks can be added to stock; or use a sprig of parsley for a classic attractive garnish.

Rub the hazelnuts with kitchen paper to remove the skins, then roughly chop. Leave the nuts and seeds to cool. Put the oil, vinegar, soy sauce and sugar in a pan and heat until it comes to the boil. Remove from the heat, whisk to combine and leave to cool. Mix the pineapple, carrots, spring onions, hazelnuts and seeds with the dressing. Put the lettuce leaves on plates and serve the slaw on top.

Cheats lasagne
This clever slim-line version of the family classic has layers of leeks as well as pasta. Weve also used oil-free sauce and half-fat Cheddar cheese in this recipe, too
2 leeks, trimmed 500g Asda Butchers Selection Lean Beef Mince 75g carrots, diced 75g celery, diced 150g mushrooms, chopped 1 level tbsp plain our 1 Knorr Reduced Salt Beef Stock Cube x 142g can tomato pure 1 level tsp dried oregano 400g can Asda Green Lentils, drained and rinsed 2 sheets Asda Fresh Lasagne 3 level tbsp cornour 425ml skimmed milk level tsp English mustard 50g Asda Mature Half Fat Cheddar, grated 2 tomatoes, sliced Basil and salad, to serve Preheat the oven to 190C/ 170C Fan/Gas 5. Slice along the length of the leeks to the middle so you can open them out. Reserve 8 outer leaves and cut into 8cm lengths. Finely slice the inner leaves. Add the outer leaves of the leeks to a pan of boiling water and simmer for 5 minutes until really tender. Drain and rinse under cold running water. Pat dry with kitchen paper. Put the mince, carrots and celery in a large pan and cook over a medium heat until the meat has browned. Add the mushrooms and nely sliced leeks and cook for 5 minutes, stirring often. Remove from the heat and stir in the our. Dissolve the stock cube in 300ml hot water. Add to the meat sauce with the tomato pure and oregano. Simmer for 15 minutes, stirring often. Stir in the lentils. Put a third of the sauce in a 26cm ovenproof dish. Lay a third of the leek leaves and half the lasagne sheets on top. Cover with another third of the meat and the rest of the sheets. Add a last layer of meat and cover with the rest of the leek leaves. Mix the cornour with a little milk to make a paste. Put in a pan with the rest of the milk and the mustard. Heat until simmering, whisking with a wire whisk all the time, to make a smooth sauce. Remove from the heat and stir in the grated cheese. Season with pepper. Pour over the lasagne and lay tomato slices on top. Bake for 30 minutes. Garnish with basil and serve with salad.

Homemade soda bread tastes delicious and has a gorgeous crust thats so satisfying. The secret to making this yeast-free loaf is to handle the dough as little as possible the exact opposite of making ordinary bread and bake it as soon as its made. Plain our is used instead of breadmaking our and the raising agent is bicarbonate of soda combined with a slightly acidic liquid. Traditionally, buttermilk is used as an aid to rising the dough, but here weve combined natural yogurt with milk to get the same result.

Preheat the oven to 220C/200C Fan/Gas 7. Line a baking tray with baking paper. Sift the our, bicarbonate of soda, salt and caster sugar into a large bowl. Sifting ensures the bicarbonate of soda is distributed well in the our, which means the loaf will rise evenly.

Mix the yogurt with 150ml of the milk. Add to the our mixture in the bowl and mix with a large spoon until the mixture comes together you may need to add a little more milk to make a soft but not sticky dough.

Flour your hands and bring the mixture together. The bicarbonate of soda starts to work as soon as it mixes with the liquid, so you need to work quickly and handle the dough as little as possible. Gather the dough into a ball and put on a oured work surface. Shape into a round loaf about 20-22cm across.

Transfer to the baking tray and, using a sharp knife, cut a deep cross in the top. Bake in the oven for 30 minutes. If the loaf starts to brown too much, cover the top with a loose piece of foil shiny side up for the last 5 minutes. To test if the loaf is cooked, tap the bottom if it sounds hollow, its ready.

How to make it
Asdas Fish Pie Mix, 3.20 (325g), features succulent pieces of haddock, Scottish salmon and smoked haddock and all these delicious avours together make one great pie the family will enjoy!
Preheat the oven to 190C/ 170C Fan/Gas 5. Put the potatoes in a pan, cover with cold water and bring to the boil. Simmer for about 15-20 minutes until tender. Drain and return to the pan. Stand over a very low heat for a minute to drive off excess moisture. Mash the potatoes with 25g butter and 4tbsp milk. Season well, cover and set aside. Meanwhile, put all the sh in a large, wide-based pan. Add the shallot, bay leaf and 300ml milk. Cover and heat gently until the milk is just simmering. Simmer gently for 10 minutes or until the sh akes easily. Strain off the milk and discard the bay leaf and shallot. Break the sh into large akes and put in a fairly shallow, oven-proof dish. Set aside. Melt the rest of the butter in a pan. Remove from the heat and stir in the our. Stir over a low heat for a minute. Gradually whisk in the milk, using a wire whisk, and then bring to the boil, whisking all the time until the sauce is creamy. Stir in the parsley. Season to taste you may not need salt because the smoked haddock will be salty. Pour over the sh and mix gently. Cover the sh with the mash the easiest way is to put large spoonfuls over the top, then gently spread and level with the spoon. Sprinkle over the cheese and bake for 25-30 minutes. Alternatively, allow the nished pie to cool at the end of step 6 and freeze. You can also chill the pie for up to 24 hours. It will take about 40 minutes to cook straight from the fridge. If frozen, defrost in the fridge for 8 hours and then cook for 40 minutes.

Storage tips
Bread
Store bread in a cupboard. Once opened, fold the wrapper under the loaf or re-tie to keep it air-tight.
Potatoes
Remove from their plastic bag as this tends to make them sweat. And store them in a cool, dark place.
Tomatoes
For optimum taste, tomatoes should be stored and served at room temperature rather than the fridge.
Fruit
Ripe fruit will last longer in the fridge, except bananas and pineapples keep them in the fruit bowl.
Meat and sh
Cooked meat and sh will keep in the fridge for up to three days (cool and leave no longer than 90 minutes, then wrap it well). Raw and cooked meat should be kept separate at all times. Store raw meat in a sealed container on the bottom shelf of the fridge so it cant touch or drip onto other food.

Soup tips
Thicken it
a large carrot, slice a trimmed leek and cook in 1tbsp oil with a chopped large onion for 6-7 minutes. Add 750ml chicken stock, (homemade or made with a stock cube). Simmer and add 150g pearl barley. Cover and simmer for 35 minutes. Add 300g leftover cooked chicken, torn into bite-sized pieces, along with 100g shredded savoy cabbage. Simmer for 5 minutes until the chicken is piping hot. Serves 4

Make mince
Leftover roast beef can be minced with a hand mincer or food processor. Freeze, then use another time to make a meat sauce.
Freeze tomatoes
Fresh tomatoes can be used instead of canned ones in a Bolognese sauce. Simply remove their stalks and freeze the tomatoes whole in freezer bags. Dont defrost before cooking, as theyll go mushy!
Add carrot
4 our tortillas on a board and top with 350g leftover Bolognese sauce. Sprinkle over 100g grated Cheddar cheese and top each one with another tortilla. Cook on a griddle or in a frying pan for 3 minutes on each side until heated through. Sprinkle with chopped fresh coriander and serve with salad. Serves 4

Leftovers tips
Make a bake
300g penne in a pan of boiling water for 12 minutes. Meanwhile, fry a sliced onion in 2tbsp oil until soft. Add a deseeded and sliced large red pepper and cook for a further 2 minutes. Slice 6 leftover sausages and add to the pan with 12 cherry tomatoes. Cook for 4 minutes. Drain the pasta and toss with the other ingredients and a handful of torn fresh basil. Serve with crusty bread. Serves 4

Fruit sauce
Use any leftover raspberries to make a delicious fruit sauce served with ice cream or other fruits. Whizz with a handheld blender or in a processor, with a splash of orange or apple juice and a little icing sugar. Freeze in small containers.

Bread winners
You can blitz crusts and slices into breadcrumbs and freeze to use in stufngs or to make a crispy coating for strips of chicken or sh dip in beaten egg, breadcrumbs, then bake or fry. Alternatively, you can use breadcrumbs for home-made meatballs or burgers they act as a good binder for meat. Theyre also great for adding to the top of lasagne and cauliower cheese. And its always handy to keep a sliced loaf in the freezer. Pop a frozen slice into the toaster it just takes a little longer to toast.
Using your freezer more can help save time, money and effort. Just think of it as a colder cupboard. As well as freezing leftovers, use it to store reduced items or multi-buy offers on bread, meat, sh and fruit.

Let the kids dive in and have fun building these tasty home-made tacos. Theyre also a great way to encourage them to eat and enjoy their veggies

2tbsp olive oil 1 level tsp Asda Onion Granules 1 level tsp mustard powder 400g can Asda Chopped Tomatoes with Garlic 2 level tsp soft brown sugar 5 level tbsp tomato pure 2 level tsp dried mixed herbs 2 x 300g cans haricot beans in water or cannellini beans in water, drained and rinsed 4 basil leaves 4 thick slices of bread, toasted, to serve With help from an adult, heat the oil and gently fry the onion granules and mustard powder for 1 minute, stirring. Add the tomatoes, sugar, tomato pure and herbs. Heat to a simmer and cook gently, uncovered, for 4 minutes. Take off the heat and add contents to a bowl. Allow to cool slightly. With help from an adult, blitz the tomato sauce with a handheld blender until smooth. Return the sauce to the pan and add the haricot beans. Simmer over a medium heat for 3-4 minutes. Tear the basil leaves into pieces and stir into the sauce. Serve on toasted bread. TOP TIP Add a dash of sweet chilli sauce for a bit of warmth or BBQ sauce for a smoky avour.

Thirty-three per cent of us avoid foods that contain fat* but its about knowing the difference between the good and bad types. Good fat helps our bodies absorb certain nutrients its a source of energy and essential fatty acids, and is crucial for a healthy metabolism and cell renewal. DIFFERENT TYPES OF FAT There are two main types of fat: saturated and unsaturated. Although both contain the same amount of calories, only unsaturated fats are considered better for you. EFFECTS OF SATURATED FAT The liver turns saturated fat into cholesterol too much can increase your risk of heart disease and raise your blood pressure. To help decrease cardiovascular disease the leading cause of death in the UK we should reduce bad fats in our diet. WHAT DOES REDUCED FAT LABELLING MEAN? If a food is described as reduced fat, it doesnt necessarily mean its low in fat just that the food is at least 30 per cent lower in fat than the standard equivalent. So if the food is high in fat in the rst place, the reduced-fat version may still be high in fat. For example, a reduced-fat mayonnaise could still have an amber trafc light. Also bear in mind that food marked as reduced fat can often be high in calories, because the fat is replaced with sugar. So check your labels to get savvy on the fat and calorie content.

MONOUNSATURATED FATS can also help lower cholesterol. They are a signicant component of the Mediterranean diet, primarily in the form of olive oil, says Hayley. Other sources include olives, avocados and certain nuts and seeds. Monounsaturated fats have been credited with lowering levels of heart disease. Both polyunsaturated and monounsaturated fats are good for the heart and circulation. SATURATED FATS are found in animal-derived sources, such as meat, high-fat dairy items and eggs so limit your intake of butter, cheese, cakes, biscuits and pastries. Saturated fats can also be found in some vegetable fats such as palm and coconut oils.

TRANS FATS fall into two types: the naturally occurring type, pe, found in small amounts in dairy products and meat; and d the t kind that is created when liquid oils are hardened into partially artially y hydrogenated y g fats. By making time to do this, you can save time in the long run. Donate or recycle childrens outgrown clothes and toys charities often appeal for toys in good condition or hold a car boot sale. Encourage your little ones to be tidy with storage designed with kids in mind. Have a ruthless clear-out of your wardrobe. Anything that doesnt t, doesnt make you feel great or you havent worn in a year, can go. Make the most of the space youve cleared by using multi coat hangers for skirts and trousers or tiered hanging units that fasten over a wardrobe rail. You dont need to keep all your paperwork forever. Cash machine slips and credit/debit card receipts can be shredded once theyve appeared on your statement, and payslips can go once youve checked them against your P60. Bills and statements more than two years old can be shredded unless youre self-employed, in which case you need to hang on to them for at least six years. For the rest of your ling, 10 folders should be enough, with labels such as Family, Medical, Property, Household Bills, Car, Work, Statements, Warranties, and Receipts, Tax, and Miscellaneous. Then take the in-and-out approach when a new policy goes in, the old one goes out. But if you really want to cut down on the ling and help the environment, too, you could always go paperless and get all your utility bills and bank statements online. Beautiful boxes Whether you put them on display or keep under the bed, boxes are a godsend for storing clothes, shoes and bags. Kitchen drawer divider Use an old kitchen drawer divider or cutlery tray to stash stationery, till receipts, jewellery and all your odds and ends. Itll make everything so easy to nd. Charity box Keep a box or crate in your garage, shed or under the stairs and put all your unwanted items into it. When its full, pop along to your local charity shop and donate the contents.
