INTRODUCTION
HILTON IN BRIEF.
Hilton Hotel, the most recognized name in the industry, stands as the
stylish, forward thinking global leader of hospitality. Today Hilton
welcomes guests in more countries than any other full-service hotel brand,
with more than 540 hotels and resorts in 78 countries across six continents
with about 173,000 rooms worldwide. From inaugural balls and Hollywood
award galas to business events and days to remember, Hilton is where the
world makes history, closes the deal, toasts special occasions and gets away
from it all. Hilton remains synonymous with hotel because of its innovative
approach to products, amenities and service.
Conrad N. Hilton
Founder of Hilton Hotel Chain
4
Hilton Hotels are upscale, full service properties catering to
business travel and leisure guests. They are a chain of over 500 hotels all
over the world from Rome to Omaha. Hilton Hotels are enjoying a
phenomenal growth in online sales. Hilton hotels are the place for you if
you want a distinctive hotel. The original company was founded in 1919
by Conrad Hilton.
Mr. Hilton bought his first hotel in Cisco, Texas in 1919. And, of
course there's always Paris. Paris is the great-granddaughter of Conrad
Hilton, founder of the Hilton hotels and source of an estimated $300
million family fortune. Paris Hilton is the daughter of one of the sons of
Mr. Hilton, a hotel magnate. Conrad Hilton (1887-1979) was born in San
He was determined that his hotel to be the best in every city and
5
coined the phrase, "take me to the Hilton".
6
HISTORY OF HILTON
The Hotels Statler Company was acquired in 1954 for $111,000,000
in what was then the world's most expensive real estate transaction.
The company separated its international operations into a separate
traded company on December 1, 1964, known as Hilton International
Co.. In 1967 Trans World Corp., the holding company for Trans World
Airlines, acquired the separated company. In 1986 it was sold to UAL
Corp., the holding company for United Airlines, who became Allegis
Corp. in an attempt to re-incarnate itself as a full service travel company
encompassing Westin Hotels and Hertz rental cars in addition to Hilton
International and United Airlines. In 1987 after a corporate putsch, the
renamed UAL Corp. sold Hilton International to Ladbroke Group plc, a
British leisure and gambling company, which in May 1999 adopted the
name Hilton Group plc.

Place Entertainment).
8
In February 2009, Hilton Hotels Corp., announced that its
headquarters were moving from its three buildings on Civic Center
Drive in Beverly Hills to the lower cost Fairfax County, Virginia, located
between Washington, D.C. and Dulles International Airport. Just across
the Potomac River is Montgomery County, Maryland, home to a number
of Hilton's competitors including Marriott International, Ritz-Carlton,
Host Hotels & Resorts, and Choice Hotels, and was also considered for
the relocation along with Washington. The move also put management
closer to its overseas operations in Europe.
While Blackstone saw an opportunity to streamline the company and
push Hilton's expansion overseas when Blackstone pursued Hilton in
2006 and 2007, the buyout saddled the company with $20 billion of debt
just as the economy was turning down. The debt had very liberal terms,
so there was no danger of default, but when travel slowed, the company
suffered. In April 2010, Hilton and Blackstone restructured the debt.
Blackstone invested a further $800 million of equity and the debt was
reduced to $16 billion.

Hilton Club; and Doubletree by Hilton Resorts. There are more than
200 hotel properties in gateway cities, airport locations and suburban
markets throughout the United States.
15
5. EMBASSY SUITES-
16
Embassy Suites hotels are independently owned and operated
by franchisees, though a few are company owned and/or
managed. Competitors may include Cambria Suites.
The interior of the hotel may have a tropical rain forest setting
complete with waterfall, bridges, a large dining area, and
panoramic elevators. One of the key features of Embassy Suites
is the Cooked-to-Order Breakfast, which consists of a breakfast
buffet of eggs, traditional breakfast meats, breakfast potatoes,
and either pancakes, waffles or French toast. Guests are also
encouraged to create their own custom omelettes, choosing from
traditional scrambled eggs or egg whites paired with up to ten
different toppings.
17
6.HILTON GARDEN INN-
18
Most Hilton Garden Inn properties consist of an interior
tower-style building. Standard public spaces include a single-
story lobby building with a Porte Cochere, Front Desk, lobby
seating area, an on-site restaurant, and the "Pavilion Pantry"
24-hour convenience market with snacks, beverages,
microwavable items and assorted sundries. Most locations
feature a pool, whirlpool, and fitness center as standard
property amenities. High speed internet and WiFi access is
available throughout the hotel, and a 24-hour business center
with computers and printers is available in all locations.
Since there is a restaurant on-site, breakfast is not
complimentary, although the on-site restaurant serves a full
breakfast buffet along with an a la carte menu. There is also a
"Bed and Breakfast" rate available.
The Hilton Garden Inn brand began in the late 1980s under
the name CrestHill by Hilton. Due to a slow real estate phase,
only 4 of 25 proposed hotels were built. Of these four original
hotels, only two are still part of the chain today. They are
located in Lancaster, Pennsylvania and Valencia, California.
The brand was reintroduced in 1996 as Hilton Garden Inn and
has grown from four hotels to over 450 properties in around
ten years.
19
7.HAMPTON INN-
20
Hampton Hotels are characterized by the 100% Satisfaction
Guarantee. In 1989, Hampton became the first national hotel brand to
offer such a promise. It states: "Friendly service, clean rooms and
comfortable surroundings every time. If youre not satisfied, we dont
expect you to pay. Thats our commitment & your guarantee. Thats
100% Hampton."
Hampton Hotels were originally launched as a division of Holiday
Inn, then owned by Promus Hotel Corporation, a Memphis,
Tennessee, holding company that also owned Embassy Suites Hotels
and Doubletree Hotels. In 1999, Promus Hotels was acquired by
Hilton for $3.7 billion. Now, the Hampton brand is part of the Hilton
Focused Service Group. The brand competes with AmericInn Hotels,
La Quinta Inns & Suites, Comfort Inn/ Suites, Drury Inn/Suites,
Holiday Inn Express, Fairfield Inn by Marriott, and Baymont Inn &
Suites.
As of May 2011, there are over 1,700 Hampton locations
worldwide.
In early 2004, Hampton kicked off a $100 million renovation of
the entire brand entitled "Make it Hampton". While "Make It
Hampton" was the brand's response to similar renovations by
competitors, it was the first renovation of its kind to focus on a higher
volume of updates.
21
8. HAMPTON INN & SUITES-
22
9.HOMEWOOD SUITES BY HILTON-
23
The first Homewood Suites was founded in Omaha,
Nebraska in 1989. For the next ten years, the hotel chain was
owned by Memphis-based Promus Hotel Corporation, which
also owned Embassy Suites, Hampton Inn and Doubletree.
Hilton purchased Promus in 1999 for $3.1 billion dollars,
making Homewood Suites a Hilton brand alongside the other
three Promus chains. In 2000, Homewood Suites changed its
name to Homewood Suites by Hilton, reflecting the change of
ownership that went into effect the year before.
Homewood Suites provides a free hot breakfast and
Mondays-Thursdays have a free Welcome Home reception,
consisting of draft beers, house wine, soft drinks and a light
dinner.
24
10.HOME2 SUITES BY HILTON-

TYPES OF SETUPS FOLLOWED IN BANQUETS:
CONFERENCE STYLE-
Also, called the board room
style, is recommended for groups that have less than 20 people. This
arrangement can be setup by placing (2) six feet long rectangular
banquet tables side by side. The chairs will be placed around the
perimeter of tables.
LECTURE STYLE-
If your event consists of general meetings
and/or lectures, the lecture style arrangement is suggested. This layout
works well with almost any size group. Chairs are placed in rows one
behind the other and are facing the front of the room towards a podium
or head table.
U-SHAPE-
For presentations that have less than 25 people,
it is recommended that the room be set up in the U-shape arrangement.
For this arrangement, simply place your 6 foot rectangular folding or
banquet tables in a U-shape configuration and place the chairs on the
outside of the tables.
HOLLOW SQUARE-
The hollow square setup is very similar
to the U-shape. The major difference is that both ends are closed. This
arrangement can accommodate more guests and is generally geared
more towards discussions.
79
CLASSROOM STYLE-
The classroom style setup is primarily
used when guest or participants have to do some writing or note taking.
Seminar tables can be used to seat up to three guests who are seated on
one side of the table and facing forward towards the lecturer.

FOOD
PRODUCTION
81
Food Production
Food & Beverage Production is the core area of the
Hospitality industry. Major aspect of the Hotel industry is food
as it is the true reflection of hospitality.
The heart of the hotel is the kitchen. Guests who patronize
these hotels would visit them for various reasons, for locality,
comfort, pricing and even for the food that is served and
presented to them. Also there are some who visit these hotels for
the purpose of having a meal or snack. Whatever the case
82
maybe, the kitchen plays an important role for the existence and
sustenance of the hotel.
It is one of the largest areas of food and beverage department
comprising of various kitchen and their sections. The number of
kitchen, manpower and work efficiency depends upon the size
and type of the hotel, and the types of meal and service to be
catered, from the commercial viewpoint. It contributed major
revenue in any catering business. Kitchen is well designed area
in which food is prepared and looked for customer service. The
verities of meals are prepared and looked by the skilled and semi
skilled culinary crafts and the key person, and food is served in
specific areas of the catering establishment.

Garde Manger is considered by many to be the most
demanding station/job in any kitchen. Garde Mangers need to be
able to apply proper seasoning to food that is going to be served
cold and in other cases, season food that is going to be served
hot.
HMIA has a superb Garde manger section where cold dishes
(such as salads, appetizers, canapes, pates and terrines) are
prepared and other foods are stored under refrigeration. The
person in charge of this area is known as the chef garde manger.

HOUSEKEEPING
94
Housekeeping
As the name suggests, housekeeping operations are related to
the upkeep of the hotel. Housekeeping is basically concerned
with the smooth running of the place, as it has to maintain the
hotel from the lobby to the room to the restaurants and the
cleaning of the public areas. This Unit intends to introduce you
with the housekeeping activities and will also apprise you with
the managerial aspects of the Housekeeping Department. An
95
attempt has also been made to establish its linkages and healthy
relationship with other departments of the hotel.
The Org. chart of Housing Keeping Department in HMIA is
as follows:
The linen room is the centre stage for the supporting role that
the Housekeeping Department plays in the hotel. Most linen
rooms are centralized and act as a storage point and distribution
centre for clean linen. Usually, a par stock is maintained on each
floor or at each unit to suffice immediate requirements.
Although the term linen originally referred to those fabrics
made from the fibre derived from the stem of the flax plant,
linen in this context means all launder able articles and often
includes pillows, mattresses, shower curtains, fabric lampshades
and upholstery that are also handled by the linen room.
