To establish a guideline for the recruitment, screening and training of sensory panelists for products

being developed in the Research & Development Department. It includes the screening test and
training for the sensory panelists.

Objective: Selection and training will increase sensory acuity, knowledge and effectiveness of sensory
panelists that will provide data required to analyze products and make importance decisions during
product development.

Time: Screening, selection and training will have a 3 sessions. One session allotted for screening and
selection. Two sessions are allotted for training.

Procedure:

Recruitment of Potential Sensory Panelist

A number of candidates from different departments are recruited and screened in order
to have enough assessors to select.

An invitation is provided from the candidates.

Screening questionairres are provided for the candidastes to accomplish in order to


determine their qualification

The candidates are pre-screened with the following criteria:


Availability, health condition, non smoker.

Screening and Selection

A brief orientation regarding sensory evaluation is conducted for the candidates to have
basic knowledge on sensory evaluation.

Identification of basic taste and ranking test are the methods used for screening.

Candidates are then notified regarding the result. Candidates who obtained 100% score
In identification of basic taste and 70% and above in ranking test are qualified as sensory
panelist and shall undergo training.

Training

Selected sensory panels will be subjected to different test which consist of:
Duo basic taste test and discriminative testing( triangle Test, duo trio-test, paired comparison test) to
enhace their enhance their ability to recognize and identify small difference in products.
