To Whom It May Concern:

My name is Colette Akhimien. I am a senior, Nutritional Sciences major from Indianapolis, Indiana, and I am
enthused to express my intent in becoming a Registered Dietician Nutritionist in the spring of 2022. As a passionate
public servant and emerging leader, I believe I will be a great addition to the workforce by promoting nutrition
education, access and equity in all communities I find myself in.

Growing up in a Nigerian-immigrant household, food and medicine has always been an integral part of my life. My
father, in particular, stressed the importance of well-balanced, home-cooked meals. Having a pharmacist and a
nurse as parents, preventative health has always been a key point in my life. I particularly remember summers
helping my father keep up with his small vegetable garden. Although I may have taken these learning experiences
for granted, I now know and deeply feel it is my purpose to further educate myself and others about the
importance of health through a nutritional scope.

As science has always been my favorite subject, it has not always been my best subject. This is what makes it even
more endearing. I consider myself open-minded as I am always eager to expand my knowledge. It was not until I
came to Howard, however, that I began to expand my career possibilities in the science field. When I originally came
to Howard, I had a passion for cooking and learning about fresh produce cultivation, as well as food’s effect on our
daily life. Though I had this passion, I lacked purpose. I was in a major that I did not see myself having a career in
and although I would have made a “comfortable living”, I feared I would be committed to something I had no
interest in. Finally, I switched to Nutritional Sciences under the advisement of Howard University nutritional
sciences departmental faculty. I realized that I did not have to compromise my passions in lieu of a stable,
enjoyable, and impactful career but rather I could have it all.

Having been in the Howard University Coordinated Program in Dietetics for a full year now, I have further rooted
myself in my purpose through my involvement in several organizations on and off campus. I am involved in a non-
profit organization called Comprehensive Medical Mentorship Program, which serves to educate, connect, and aid
those seeking careers in medical and health related fields at all levels. I serve as the fundraiser chair as well as a
member of the community service committee and continue to do so to date. I have been able to plan fundraising
events and attend community service events such as food and clothing drives, feeding the homeless, and helping
local schools during their back to school events. This year, I was also able to further immerse myself by educating
others on the topics of health and wellness through my position as a programs event committee member on the
College of Nursing and Allied Health Sciences Student Council and with my position as Treasurer of the Howard
University Nutrition and Dietetics Club.

Having been blessed with the opportunity to attend university in a major city such as Washington, D.C., I have also
been able to identify holes in the health system. Seeing the negative impacts of food insecurity, health and social
inequities, and health disparities plaguing black and brown communities, I feel empowered to serve as a change-
seeker. I also have personal interest as my mother was recently diagnosed with diabetes. As a seeker of change, I
firmly believe a health revolution within minority groups will begin with the habits and practices of the youth.
In order to combine my passions of food and cooking, with my purpose to improve health and wellness
practices, I plan to work as a nutritionist and/or teacher in an urban community following the year I
graduate from the Coordinated Program. In addition, I plan to further my education by pursuing a
masters’ in global health and agricultural sciences with a concentration in urban food systems. Lastly, I
plan to continually implement nutrition and wellness into my own private clinic/ business by starting a
program/organization dedicated to employing and involving youth in food cultivation, cooking, and
general nutritional health education. My dream is that this program will be able to provide experience,
education, and affordable fresh produce markets in areas most affected by food insecurity and health
disparities. As I have substantial aspirations, I believe further experience within sustainability and food
systems as they pertain to minority communities, I will be able to create impact and implement ingenuity
within the scope of dietetics practice.
