Coconut burfi is a delicious sweet specially made during the festival

of Deepawali, the Indian festival of light. It is made from coconut and milk, garnished with raisins. Coconut barfi is a part of a class of Indian sweets known as Barfi. Barfis are made from milk and are solid with various shapes and sizes, square being the most common one. These are numerous types of barfis. Each region boasts of a speciality of barfi. Coconut Barfi is also known as Kopra Pak. Narkeler naru is another type of coconut sweet dish. To prepare coconut barfi, you will require 2 to 3 cups of fresh grated coconut, 2 cans of condensed milk, 1 tbsp cardamom powder, 1/2 cp sugar, 1 cup blanched and sliced almonds, 6 tbsp ghee. Put the condensed milk, coconut and sugar in a pan and heat it over medium heat. Cook the mixture and keep stirring till it is 1/4 th its original volume. Now mix the ghee. Keep on cooking till you can see the ghee separating from the rest of the semi-solid material. Next add the cardamom powder to the mixture. Remove from heat. On a flat surface, spread the fudge evenly into a half inch thick layer. Now sprinkle the almonds all over the surface. Cut even sized squares and allow them to cool down. Coconut burfi is ready to be eat.

Coconut Ladoos:
Ingredients Rava (Sooji) - 2 cups Evaporated Milk - 150ml or 5oz Unsalted Butter - 1/4 cup (You can also use ghee instead) Dry Shredded Coconut Powder - 1 cups Sugar - 2 cups Cardamom Powder - tsp Saffron - 1 pinch, powdered (optional) Raisins cup (roasted in a little butter) Cashew/Almond/Pistachio - cup (coarsely) Method 1.Melt the butter in a non-stick pan. 2.Add the rava and fry until you get a nice aroma. 3.Add shredded coconut and sugar and mix well on low heat for few seconds. 4.Add raisins, nuts, saffron, cardamom powder and mix well. 5.Add the evaporated milk and turn off the stove. 6.Keep mixing for few minutes until the evaporated milk is well incorporated. 7.Remove pan from stove to prevent the rava from getting burnt.

8.While the mixture is still hot, take a small quatity of the mixture and roll it into balls. You can the balls as small or as big as you want.

Nankatais:
Ingredients All Purpose Flour - 1 cup Unsalted Butter/Ghee - 1/2 cup Powdered Sugar - 1/2 cup Cardomom Powder - 1/4 tsp Baking Powder - 1/2 tsp Salt - a pinch Pistachios/Raisins/Cashews/Almond Method 1. Take a mixing bowl with the room temperature butter in it. Add the powdered sugar to it and cream together till the mixture becomes light and fluffy. 2. Sift all the dry ingredients (flour, cardamom powder, baking powder and salt) into a seperate bowl. 3. Add this to the creamed butter mixture little at a time and keep mixing. Knead it to form a soft dough. Cover the dough and let it rest in the refrigerator for 10-15 minutes. 4. Preheat the oven to 300 degrees F (150 C). Make small gooseberry sized balls of the dough. Smoothen the balls by rolling in between your palm. You can also use a cookie cutter to shape the cookies. 5. Place each ball in a cookie sheet. Leave some space in between as the cookies will expand when it bakes. If you want to make it more rich, press a pistachio or raisin or cashew or almond on top of the balls gently. 6. Bake at 300 degrees for 12-15 minutes until the bottom of the cookies turn light golden brown. 7. Remove from the oven and gently transfer the cookies to a cooling rack. The cookies will be very soft at this stage. 8. After it cools completely, store in an air tight container for upto a month. Serve as a snack with a cup of tea.

For crunchy biscuits, replace 1 cup flour by 1/2 cup flour, 1/4 cup of rava and 1/4 cup crushed nuts.

Banana Cake
Ingredients

Bananas - 2-3 All purpose flour - 1 1/2 cup Butter/Vegetable oil - 1/2 cup Sugar - 1 cup Egg - 1 Vanilla extract - 1 tsp Baking soda - 1 tsp Salt - a pinch Nuts (Cashews/Almonds) - 1/4 cup Raisins - 1/4 cup Method 1. Mash the bananas nicely and mix the butter and sugar with it. 2. Beat the egg separately and add it to the above mixture. 3. Add the salt and baking soda to the flour. 4. Add this flour mixture to the wet ingredients mixing continuously by hand or using a hand mixer until everything is incorporated nicely. 5. Mix the raisins with little dry flour. This will prevent it from sinking to the bottom. 6. Finally add the nuts, raisins and vanilla extract and fold together using a patula. 7. Pour the mixture into a greased pan and bake for 25- 35 minutes in a oven preheated to 350 degree F. 8. Check if the cake is done by inserting a toothpick in the center of the cake. It should come out clean.
