CHAPTER I

INTRODUCTION

A coffee shop is a kind of restaurant that sells coffee. Café is an establishment that

primarily serves coffee of various types like espresso, latte and cappuccino.

Pastry is the name given to various kinds of baked products made from ingredients such

as flour, sugar, milk, butter, shortening, baking powder, and eggs. Breads and pastries from the

Philippines are well-liked by their equally self-effacing Filipino or Pinoy makers, who take

delight in the thought that their baked creations nourish their bodies and lift their spirits

The group found out that the province of Abra has a different coffee shop and different

pastry or bakery shop business. The group was interested to build a coffee shop and a pastry

shop. The reason why we build a coffee shop and the same time a pastry shop so that when

someone comes to have a coffee and need a little bread then it’s so easy to get into a pastry shop

which they in one place. You don’t need to go or buy in another pastry shop because we have it.

Breads and pastries from the Philippines are well-liked by their equally self-effacing

Filipino or Pinoy makers, who take delight in the thought that their baked creations nourish their

bodies and lift their spirits.

In fact, Pinoy should be able to recall a morning of eating hot pandesal with his or her

family, an afternoon of eating siopao with friends, or the surprise of opqening his or her lunch

box at school and seeing a large, puffy, creamy ensaymada.

In the Philippines, breads and pastries are not just for eating. They are a tradition.

Filipinos share these breads and pastries with their loved ones, bringing them home

as pasalubong or gifts, and eating them together with family and friends during special

occasions.

Much has changed in the tastes and lifestyles of most Filipinos. Many of us are now

heavy eaters of muffins, bars, scones, turnovers, buns and rolls, croissants, Danish pastries,

French breads, and other non-Filipino breads and pastries.

Filipinos people are coffee lovers. Remember how everyone keeps drinking hot coffee

even though the country is naturally hot, even on rainy season, which is because they cannot help

themselves, but take that cup of coffee. For many Filipinos, coffee is life. No wonder the coffee

and frappe industry is continuously striving right now.

You may have grown up in a household where your parents or older siblings often drink

coffee, which is probably the reason why you learn how to drink coffee early in your life, too.

Actually, as strange as it may seem, there are some kids as young seven who already have a

liking coffee.

Filipinos often take coffee in the morning to help them get energized and prepare for the

long day. Some even pour coffee over rice as “sabaw”. Filipinos love to dip bread or biscuits in

coffee. Just like Oreo cookies and Milk, Coffee and biscuits seem to be perfect fit. Aside from

biscuits, Pandesal is also an awesome partner of coffee. Pandesal is every Filipino’s staple

breakfast food and all-time favorite bread. Pair with coffee, or dip it in coffee and you’re good.

Coffee is also often taken during snacks.

In the modern age of artisanal coffees and glossy-end machinery, it’s easy to get lost

when thinking of the word “cafe.” The aroma of freshly brewed French Roast and the velvety

feel of supple couch cushions flood the mind, but cafe culture is more than a simple pit stop for

our daily cup of joe.

Cafes are structured around a few major components, two of the most prominent being

the active sale of coffee and the people it draws in. Much like the deeply tangled web that is the

coffee industry, cafes carefully balances the social, cultural, and economical motley that comes

with both the beverage itself and the complications of being a public sanctuary. 

Coffee may be the commodity that gave rise to the institution, but the population filing

through the cafe doors provided the business its purpose. While American cafes saw their origins

with the second wave of coffee starting in the mid-1960s, cafes have far deeper roots than

Starbucks or a 20-year-old mom-and-pop shop. 

Cafes rose to prominence in Europe during the late 17th century as a result of their

importance in the social sphere, as well as their ease of convenience. While restaurants and

eateries specialized in meals, cafes minimized their selection in favor of providing patrons with

coffee and affordable admission. This made it especially accessible to the working class to whom

the establishments served as a retreat to foster community and promote the exchange of ideas

and philosophy. Both a blessing and a curse, this age became known as the Age of

Enlightenment.

While the local ale house provided many with the ability to converse, cafes remained a

favorite confluence for the politically interested, specifically those who didn’t have the platform

or means to voice their qualms elsewhere. Citizens upset by the upscaled pricing or legislations

of their new regime could find solace in discussing these issues with their fellow cafe-goers. In

an age of shifting ideologies and modest economic turmoil, British cafes gave the unheard a

voice and the ability to debate and host intelligent conversation, which would have otherwise

been drowned out beneath the authority of the elite. 

Men from any social class could patronize the cafes; however, those in higher standing

often avoided them for fear of losing status. They later regarded cafes as a nuisance. For forces

of the upper echelon, cafes provided sanctum for their subjects and employees outside of their

control, leaving room for the seeds of rebellion and change to be planted. This line of reasoning

painted cafes as representations of equality and justice, something that earned them the attention

and eventual wrath of King Charles II, who described the establishment as “a place where the

disaffected met and spread scandalous reports concerning the conduct of His Majesty and his

Ministers” in an attempt to discourage the congregation. His efforts were fruitless.

Cafes met their natural end following King Charles’ rule due to the increasing popularity

of tea. However, British cafes bred a generation of activists, writers, and artists, setting the

precedence for coffee house culture to come.

The social and economic position of coffee houses and cafes allowed for a meeting place

receptive to all men regardless of occupation. This wasn’t true only in old Europe. 

In the mid-20th century, Bogota, Colombia, featured several cafes across its sprawling

cityscape. The prominent cafe culture was similar to London’s, laying the groundwork for

intellectuals, activists, and artists to intersect. As the hub of a coffee-farming country, coffee was

far from being exclusive to a coffee house. There were coffee bars, coffee clubs, even coffee

pools. The drink aligned itself with secular values and helped bridge the intellectual and physical

gap that might have otherwise separated men from various social standings. Much like British

coffee houses, men frequented these cafes after finishing up at their office jobs, but it was also a

hub that granted artists, journalists, and writers equity to the property, some doubling as galleries

and convention centers. As in London, this attracted the attention of higher powers, to the

Colombian cafes’ tragic detriment. 

Beyond providing working-class men much-needed catharsis, coffee houses provided the

general public with a method of unification and political revitalization that eventually deepened

the divide between parties in what would become the Colombian conflict. With uprooted former

militaristic powers colliding with some of the greatest minds of the generation, it was hardly a

secret that cafes posed a very serious threat to Colombia’s already unstable government. When

serious insurgency rose from the general public, the conflict brought about the end of the

political coffee house. 

France is another prime example of the political and social cafe. In the 1900s, Parisian

cafes were hotbeds for thought, philosophy, and art, attracting the likes of Jean Cocteau, Ernest

Hemingway, and F. Scott Fitzgerald. In America, coffee houses were points of planning protests

during the Vietnam War, a process later deemed “G.I. Cafes.” While the gravity of cafe culture

has declined, they remain cultural incubators for artists and intellectuals.         

In 1960s New York, coffee house culture was limited to Chock Full O’Nuts, a local chain

that offered a modest cup of joe and a muffin on a good day, and a few mom-and-pop shops that

managed to maintain integrity post-Depression. In 2020 America, the definition of “coffee

house” has expanded. 

The most recognizable modern cafes tend to be commercial chains that rose in response

to coffee’s second wave. Unlike British cafes, which used its population to grant the cafe

purpose, American cafes have benefited from the U.S. capitalist mentality. There is not one

particular crowd associated with the American cafes — they are frequented by the well-dressed

businessman on his way to work in the morning as often as the screenwriter set up to work at the

espresso bar. 

Modern cafe culture is tied inextricably to the coffee industry upon which it’s founded,

and as coffee shifts, so does the American cafe. Rather than present a united front to engage in

discussion across social standing, coffee houses have become specialized to attract a crowd

based on the type of coffee they serve. This means the general business model has switched from

one that’s community-based to one that’s commodity-based, which has helped revitalize the

coffee industry as a whole. 

Coffee lovers around the world who reach for their favorite morning brew probably

aren’t thinking about its health benefits or risks. And yet this beverage has been subject to a long

history of debate. In 1991 coffee was included in a list of possible carcinogens by the World

Health Organization. By 2016 it was exonerated, as research found that the beverage was not

associated with an increased risk of cancer; on the contrary, there was a decreased risk of certain

cancers among those who drink coffee regularly once smoking history was properly accounted

for. Additional accumulating research suggests that when consumed in moderation, coffee can be

considered a healthy beverage.

Coffee beans are the seeds of a fruit called a coffee cherry. Coffee cherries grow on

coffee trees from a genus of plants called Coffea. There are a wide variety of species of coffee

plants, ranging from shrubs to trees.

There are two main types of coffee species, Arabica and Robusta. Arabica originates

from Ethiopia and produces a mild, flavorful tasting coffee. It is the most popular type

worldwide. However, it is expensive to grow because the Arabica plant is sensitive to the

environment, requiring shade, humidity, and steady temperatures between 60-75 degrees

Fahrenheit. The Robusta coffee plant is more economical to grow because it is resistant to

disease and survives in a wider range of temperatures between 65-97 degrees Fahrenheit. It can

also withstand harsh climate changes such as variations in rainfall and strong sunlight.

Coffee beans start out green. They are roasted at a high heat to produce a chemical

change that releases the rich aroma and flavor that we associate with coffee. They are then

cooled and ground for brewing. Roasting levels range from light to medium to dark. The lighter

the roast, the lighter the color and roasted flavor and the higher its acidity. Dark roasts produce a

black bean with little acidity and a bitter roasted flavor. The popular French roast is medium-

dark.

 A medium grind is the most common and used for automatic drip coffee makers. A fine

grind is used for deeper flavors like espresso, which releases the oils, and a coarse grind is used

in coffee presses.

This is an option for those who experience unpleasant side effects from caffeine. The two

most common methods used to remove caffeine from coffee is to apply chemical solvents

(methylene chloride or ethyl acetate) or carbon dioxide gas. Both are applied to steamed or

soaked beans, which are then allowed to dry. The solvents bind to caffeine and both evaporate

when the beans are rinsed and/or dried. According to U.S. regulations, at least 97% of the

caffeine must be removed to carry the decaffeinated label, so there may be trace residual

amounts of caffeine.

province taking into account the mood of consumer.

“Healtfee and Sweets” will make its best effort to create a unique place when customers

can socialize with each other in a comfortable and relaxing environment while enjoying the best

brewed coffee or espresso, frappe and pastries with affordable prices. We will be in the business

of helping our customers to relieve their daily stresses by providing peace of mind through great

ambience, convenient location, friendly customer service, and products of consistently high

quality.

Project background talks about which the proponents of the business are, the name of the

business, the place where the business is located, the type of business, the kind of partners and

their profit and loss sharing.

In this portion, the time talks on the project schedule are taken into consideration. It speaks on

how the project will be going through from its preparation stage to its realization.

Healtfee and Sweets (Healthy coffee and pastry) is a business that will be owned and

managed in partnership of the following individuals, Mr. Mc Ricleigh Marzan of Agtangao,

Bangued, Ms. Aloha Joy Dait of Pilar,Abra, Mr. Jake Rante of Baddec, Palao, Mr. Kurt Jansen

Borja of Baddec, Palao, and Mr. Mark Lorenz Borja of Baddec,Palao. These five individuals

have agreed to have their center business which is the “Healtfee and Sweets” a coffee shop and

pastry. The firm is devoted to have their mission and vision be achieved and their business will

be of great help to the Abrenos.

Name of the business

“HEALTFEE AND SWEETS” Healtfee is a combination of the words “healthy” and

“coffee”. Sweets are for our pastry, which means the proponents offers a healthy pastry or

products, yet it is affordable. Coffee is the main product and pastry which indicates the sweets,

nature and other services of the business. The partners agreed to put them together to become

“HEALTFEE AND SWEETS” to come up with more unique have extra ordinary features of

the business that it offers to its customers.

Location

Healtfee and Sweets is located at Barangay Agtangao, Bangued, Abra along the

highway. Before Agtangao Galyera (Cockfighting Arena) and Coca-Cola Main Garage, near at

Agtangao, Elementary, School (AES) straight ahead, front of Darwin Store. Along the highway

We base the design of our logo from the word “Kawaii” that means “cute” to attract teenagers

and it can be for all ages too.

We choose this color because it’s a color that compatible or compliment. The color pink have an

impact on our moods, feelings and even behaviors. Not all people love this color but we find this

color attractive. In our logo you see the name of our shop which is “Healtfee and Sweets” and

there’s a coffee and bread there.

A. PROJECT SCHEDULE

Activity I. Business Planning (January-June 2022)

Business planning is important in establishing or starting a business it is one of the most

important requirements before putting up a certain business.

This business is hard we need time to think how to be better coffee shop and pastry ,how

we can standout to others coffee shop and pastry, we need to think more and it will require

careful method of planning, determination, hard work and greater effort. Furthermore researches

and surveys must be considered in order to be more knowledgeable about this business.

The business must have a good plant in order to survive in any.

Activity II. Collection of Resources (July 2022 -December 2023)

Before putting up a business, collection of resources and capital are the most important

things to prepare. The collection of resources and capital is one of the hardest parts in building or

starting a business. The proposed capital of the business is 15 million. The capital comes from

our savings.

Activity III. Construction of building (January-March 2024)

Constructing of the building is one of the hardest parts of having a business. There are lot

of things to consider like meeting with the architect and engineer, and hiring people to work for

the construction and making the building safe for the customers. It takes a very long period of

time to build a building so it must be monitored properly.

Activity IV. Hiring of Employees (April-September2024)

Selection and hiring of employees, is really hard to do, because there is a need for the

partners to select and hire employees that are qualified and fit to the position being offered. They

must be of high knowledge particularly in running the business.

Hiring the right people is very important for a new and just started business, to have

effective and efficient employees which be of great help to the business in achieving its goals

and for possibility of growth in order to more successful and more competitive coffee shop and

pastry. Behind a successful business is the people working within, thus selection and hiring of

the best employees really count in order for the business to be more competent in world of

business where there are many and giant competitors.

Activity V. Purchasing (October 2024-March 2025)

One of the preparations of purchasing of equipment’s, machineries and products that are

needed to be made is the successful operation of the business needed for the successful operation

of the business. The partners will personally monitor the purchase of equipment’s, machineries

and products to be used to ensure that everything will be at its best.

Activity VI. Furnishing (April 2025-January 2026)

For the final touch of the business, the building machineries, equipment’s and products

that are needed for the operation of the “Healtfee and Sweets” must all ready and all set. The

partners ensure that everything inside and outside of the business are organized and attractive.

Activity VII. Advertising (Febuary- June 2026)

Advertisement is one of the most important aspects in establishing a business. The

proponents decided to advertise the business on Febuary – June 20256 so that the customers will

be aware and be familiarized with the business. Distributing fliers, posting tarpaulins to nearby

places of the business and airing radio advertisements are mode of advertisement plan that the

proponents will be going to used and consider.

Activity VIII. Opening (July 10, 2026)

After five years of deep preparation, “Healtfee and Sweets” are now ready to serve its

customers. The proponent has chosen July 10, 2026 because it is the month of rainy seasons. It is

an advantage for the business to start its operation on the said month because Filipino loves

coffee in rainy seasons.

This answers how the project shall be manage before and during the operating periods,

pointing about the firms or persons involved or to be involve in studying the different aspects of

management personnel, skills and number of labors required specifying the duties and time to be

devoted to the project, qualifications, compensations and fringe benefits of employees.

Walking Around and Participative Management Style.

GENERAL POLICIES

Operating Hours

The morning shift of “Healtfee and Sweets” will come to the store 5:00 am and

their out time is 3:30 pm and for the night shift they are required to go to store at 10:00 am

and their out of time is 9:00 in the evening. The employees are required to have their day

offs in every week, Sunday. There will be no special holidays however the staff will have

their shifting schedule for those holidays. The special occasion or the anniversary of the

business is on every 10th day of July.

Compensation

The employees received their salaries on the 15th and 30th of every month. Absences

of the employees must be deducted to their salary as per day according to their positions.

They received their salaries through cash, which the company will provide it.

The management also offers double pay for holidays, Sick leave and vacation

leaves are also offered to the employees. The bonuses will be given based on their

performance, Christmas bonuses and Certificate of recognition for every outstanding

employee.

 General Manager – for female they are required to wear corporate attire which

includes a collared blouse, black coat, black knee length skirt, stockings and black

high heels. For males corporate attire includes black suit, polo shirt, slacks and black

CHAPTER V

TECHNICAL STUDY

The technical study shows the planned lay-out of the business building. It shows the

elevation of the building such as the front elevation, rear elevation, right side elevation, left

side elevation and top view elevation including the perspective of the building. It tells about

the different rooms/ areas found in the building by the presentation of the floor plan the

floor plan shows the different parts of the business establishment.

The technical study is important because if there is no lay-out and technical plan

there will be no business that will be established.

Project Site

Site plan show a building, foot print, travel ways, parking drainage facilities, sanitary

sewer, water lines, trails, lighting and landscaping and garden elements.

Plant Size and Production Schedule

The location of Healthfee and Sweets is accessible to the people who travel early in

the morning because the establishment is located at the Agtangao,Bangued,Abra along the

highway. The business exact location is near at the Coca-Cola Main Garage and Agtangao

Cockfighting Arena, in front of Darwin Store. The plant size of Healtfee and Sweets is 500

squares meters.

The purchasing schedule of our coffee including drinks is weekly purchase. And for

the Pastry supply needed for the shop will be purchased weekly as well.

Building and Facilities

Healtfee and Sweets building has a land area of 500 square meters, the size of the

building is 300 square meters and the remaining space is for parking space. The estimated

amount of the establishment of the construction of the building is ₱5,000,000.00 including

the labor and contingency.

Floors

Healtfee and Sweets is composed of a 1 story building with spacious parking area.

First floor is made with cream artistic tiles.

Comfort Rooms

Healtfee and Sweets have three comfort rooms. Two comfort rooms are located at

the inside. The first one is the employees comfort room which is located at the employees

quarter and the second one is for girls customers comfort room and the third one is for boys

customers comfort room which is located inside.

Storage Rooms

The Storage Room is located at the ground floor where things and foods are being stored

accordingly and kept safety when not being used.

Healtfee and Sweets storage room is divided into two shelves. First shelve is for

ingredients needed for pastry shop and for the second shelve is for ingredients for the

coffee.

Utilities

Utilities of a business require will depend on the nature and size of the operation.

Utilities such as electric bills, internet and telephone bills, water bills are essential services

that are needed to acquire by different people especially for their business/businesses

because it plays a very important role in the society especially in the social and economic

development.

Healtfee and Seets will be spending an estimated amount of Ten Thousand Pesos

(₱10,000.00) for the electric bills, Five Thousand Pesos (₱5,000.00) for the internet and

telephone bills, and Five Thousand Pesos (₱5,000.00) for the water bills for the monthly

expenses and Two Hundred Forty Thousand Pesos (₱240,000.00) annually.

Waste Disposal Management

Waste management or waste disposal is all the activities and actions required to

manage waste from its inception to its final disposal. This includes amongst other things,

collection, transport, treatment and disposal of waste together with monitoring and

regulation. It also encompasses the legal and regulatory framework that relates to waste

management encompassing guidance on recycling.

Healtfee and Sweets waste will be disposed separately. There will be trash bins

labeled as “Biodegradable” and “Non-biodegradable”.

Recycling is an easy and natural eco-friendly process that takes the non-

biodegradable waste turns into chairs that useful. The Healtfee and Sweets prefer to

Recycling and make chairs to donate to the school to those schools,who are lacking chairs.

“Make and Donate” that’s why their waste must be disposed properly because we are not

just promoting our business we want to help to.

CHAPTER VI

FINANCIAL STUDY

This portion determines the profitability level of the project which is generally

defined as the relationship of the net income after taxes to the total investment. It is largely

based on the available opportunity cost in particular period of time and place.

The financial study also involves through coverage of all the monetary information

of the business. It includes the total projected cost (pre-operating expense), sources of

financing, financial assumptions, estimated gross income, and depreciation schedule

(annual), and projected income statements, projected cash flow statements, balance sheet for

a period of 5 years and the profitable ratios.

The financial study will be doing its important role in assessing if the feasibility

study is feasible and its subject for recommendation of pursuing it.

employment for the Abreños. The business also makes sure that they will satisfy the needs

and wants of the customers and also if encourage tourists to come and visit the place to

experience an accommodating and relaxing ambiance of the business. Providing high

quality of products yet with very affordable prices is the main objective of Healtfee and

Sweets.

The Healtfee and Sweets makes sure that they are a good help to the government of

Abra. They pay their taxes to the government to help improve the life of every Abreños.

they taste our coffee. To legalize the existence of the business, and as a social responsibility

it considers paying all the fees, taxes and all the obligations required by the government that

is needed to be accomplish. The amount of taxes to be paid by the Healtfee and Sweets

will be of great help to the municipal and provincial government because the business will

consider this as a help and support to all the necessary expenditures of the government for

the improvement of the socio-economic condition of the province. Thus, it will contribute to

the upliftment of the standard of living of the people of Abra and will contribute to the

improvement of the economy.

Domestic Market

Healtfee and Sweets will purchase the raw materials they need in the province of

Abra as a help for the Abreños. Farmers from Daguioman will be their supplier of the

coffee bean needed at their Coffee shop. All products or materials needed to run the

business will be purchase here in Abra, depending the products availability.
