Problem

Can Garlic be a flavor component in making ice cream?

Objective:

 To make garlic-flavored ice cream.


 To compare the garlic-flavored ice cream to commercial homemade ice cream.

Hypothesis:

 Garlic can be a flavor in making ice cream.


 Garlic can’t be a flavor component in making ice cream

Scope and Delimitation:

The focus of this study is to determine if is there any significant difference between the Garlic
Flavored Ice cream to a Commercial Homemade Ice cream.

Investigating the performance of this study was described by the taste of Garlic Flavored
Ice cream and compared to the Homemade commercial one. This study was performed on
September 19, 2017, at Camalaniugan National High School (CNHS).

Significance of the Study:

The rationale of the study is to save money because of its affordable ingredients. And on
the other side, it aims to create another unique flavor. Garlic also gives nutrients that are good in
our bodies like Vitamin C and Vitamin B6.

Methodology
Materials :

 Spatula
 Bowl
 Saucepan
 Strainer
 Blender

Ingredients

whole milk
minced garlic
vanilla bean
 heavy cream
sugar
egg yolks

Cooking Directions

1. Combine milk, garlic, vanilla pod and seeds into a saucepan over medium heat. Once the mixture
starts boiling go ahead and remove it immediately.
2. Place 8 egg yolks in a mixing bowl, add the cream and sugar and whisk until well combined.
3. Slowly temper the egg mixture with the hot milk mixture by adding ¼ cup at a time over a
strainer.
4. Add the mixture back into the pan and make sure to keep stirring over low heat until the mixture
thickens in about 10-12 minutes (it is imperative not to boil the mixture)
5. Pour into a bowl and chill the mixture for 6 hours in the fridge
6. Once mixture is cooled, pour into ice cream machine (be sure to follow the manufacturer’s
directions

Introduction

Every summer, people drink or eat cold products like halo-halo, and shake ice cream. But
some use this as a dessert after eating heavy lunch or dinner. Sometimes, we refused to eat ice
cream because of the expensive price and we don’t know if the desserts we eat are clean or dirty,
healthy or unhealthy. It is also not allowed for those people who suffer from asthma and cough to
eat more. We also need to control eating desserts because too much sugar can cause diabetes.

So to make a change we, researchers decided to make homemade ice cream with
affordable ingredients and nutritious flavor using garlic, in that case, we can control the
sweetness of the dessert. We can also assure the cleanliness of the dessert we eat.

Garlic has many benefits for our bodies. It can reduce our risk of certain cancers. But
only recently have studies begun to focus more on cancers of the upper digestive system. The
sulfur compounds in garlic seem consistently helpful in lowering our risk of squamous cell
carcinoma (one type of cancer) throughout our upper aero-digestive tract (UADT). The benefits
of garlic intake for decreased risk of cardiovascular disease have now been extended to each of
the following conditions: heart attack, coronary artery disease, high blood pressure, and
atherosclerosis. The everyday flexibility of our blood vessels has been shown to improve with
the intake of garlic, and the likelihood of blood vessel damage due to chronic excessive
inflammation has been shown to decrease when this allium vegetable is consumed on a regular
basis.

Results and Discussion

Trial 1 The taste and odor of the ice cream are good
but the texture is not nice because the garlic
was not minced well.
Trial 2 The taste and odor of the product are better
than the trial one and so with the texture, but
some garlic was not minced well.
Trial 3 The taste and odor are good, and the garlic was
minced well.

After the experiment, we found out that garlic can be a flavor of an ice cream.
On the first trial, the taste and odor of the ice cream is good but the texture is not nice because
the garlic was not minced well. Respondents rated the taste and odor 3 which is very good. But
the texture is only 2 which is good.

In the second trial, the taste and odor of the product is better than the trial one and so with the
texture, but some garlic was not minced well. Respondents rated the taste, texture, and odor 3
which is very good but one respondent rated 2 which is good.

In the third trial, the taste and odor is good and the garlic was minced well. Respondents rated
the taste, texture, and odor 3 which is very good.

We think that the 2nd trial is the best and can be a flavor of ice cream.

Conclusion :

We, therefore, conclude that based on the data gathered, garlic can be one of the ice cream
flavors.

Recommendation :

We recommend to future researchers and generations to research further on menus that garlic
could be used as one of the ingredients or flavors.

Abstract

eating lunch or dinner. Sometimes, we refuse to eat ice cream because of its expensive price. We
don't know if the desserts we eat are clean or dirty, healthy or unhealthy. This study aims to
answer the question, can garlic be a good flavor in making ice cream? And the objective is to
make a garlic-flavored ice cream which is to compare garlic-flavored ice cream to commercial
homemade ice cream. The importance of this study is to save money and to create another flavor
of ice cream that gives nutrients that are good in our bodies like vitamin C and vitamin B. We
mix the following ingredients in set A, 85 grams whole milk, 4 grams minced garlic, 1 vanilla
bean, 240 grams heavy cream, 110 grams sugar, and 8 egg yolks. And in set B 85 grams of
whole milk, 65 grams of minced garlic, 1 vanilla bean, 240 grams of heavy cream, 110 grams of
sugar, and 8 egg yolks. For set up C, 85 grams whole milk, 6 grams fried garlic, 1 vanilla bean,
240 grams heavy cream 110 grams sugar, and 8 egg yolks. Based on the data gathered 80%
responded very well in set up A. Then in set up B 90% responded very well and in set C 100%
responded very well. So, we, therefore, conclude that set C can be one of the ice cream flavors.
