Introduction

This work has been prepared as a project study for the installation of a small company
dedicated to the production of fine pastries and the personalized delivery of cakes.

The results obtained will help us to have knowledge of the different areas in which a
company of this type is immersed, from the idea of the project, the legalization of the
business, taxes, human resources, logistics, the market situation, the product positioning
and others.

For the study, the characteristics of the product and the target population to whom it is
directed were taken into account. Because they are from a medium-high economic
segment, they have certain characteristics in terms of their pace of life.

To reach results, secondary information (studies carried out) was mainly used in a survey,
due to the short time, results were inferred from these studies, and the respective
conclusions were reached .

YO. PROJECT'S NAME:
“ Dely Pastry Shop”

1.2 PROJECT ACTIVITY:


DELY is a small company dedicated to satisfying the excitement of the birthday
customer when they receive their cake because we want to keep this moment in their
memory.

1.3 FEATURES:
 The company will direct production to 60% fine pastries and 40% snacks.
 The activity refers to the production and distribution process through direct sales to
customers at the premises or through delivery service.
 Production will guarantee the use of adequate, quality and good presentation
inputs.
 The level of technology, although oriented to a small scale, will be that which
guarantees adequate production according to the specifications provided.

1.4.-MISSION:
The Mission of DELY Pastry Shop is to develop top quality products, based on
excellent raw materials, with commitment, honesty and love for what we do, thereby
providing the customer with an excellent and innovative experience, in a comfortable
environment, with a service friendly, where everything is arranged towards the total
satisfaction of our most demanding clients, generating in them the desire to repeat it
and in turn transmit it to their loved ones.

The Vision of DELY Pastry Shop is to be recognized and admired for its products and
human quality with which it provides its services, highlighting work efficiency and
timely delivery of the product at the metropolitan and national level; innovating with
quality in an environment of harmony and joy of work.

1.6 GENERAL OBJECTIVE OF THE COMPANY:


Offer food products to satisfy the needs of human consumption, through raw
materials, transformation and sale, and with trained personnel; thus contributing to
the economic development of the population.

1.7.-SPECIFIC OBJECTIVES

 Know, master and apply the new pastry techniques current in the world.
 Correctly execute the repertoire of Peruvian and international pastries.
 Know, master and put into operation all the utensils and machines at the service of
the pastry shop.
 Plan, organize and direct the operation of the gastronomic area focused on pastry
in restaurants, hotels and the like.
 Determine the cost of raw materials and its impact on the price of finished
products.
 Ensure the safety of the food chain and check its quality.
 Perfect and optimize the correct use of raw materials, seeking their best
performance.

The DELY pastry shop is located in Santa Clara on Av. The stars on the central road
in front of Plaza see. The premises have all the basic services such as drinking
water, electricity, telephone, sewage; It also has space to serve customers when
they need to serve desserts and taste them instantly, ventilation, etc.

Other customers do not have the same opinion since They say that those who are
here in Santa Clara only have higher incomes during seasons and holidays and the
rest of the months they only do so to save their investments and pay rent and basic
services.

These people will be a support for the production area and must know the productive
activities of the business which will allow them to cover the set of work requirements:

dedicated.
