Soup

Tomato Soup
Ingredients
 Butter – 50 grams
 Yellow onion – 1 onion
 Garlic – 3 cloves
 Crushed tomatoes – 250 grams
 Chicken stock – 3 cups
 Sugar – 1 tbsp
 Black pepper – ½ tsp
 Whipping cream – ½ cup
 Parmesan cheese – ½ cup

Procedure
 Saute Aromatics – heat a non-reactive pot over medium heat. Melt in 4 Tbsp butter then sautee
onions until softened and golden (10-12 min). Add minced garlic and saute another minute.
 Make the tomato soup base – stir in two 28 oz cans of crushed tomatoes with their juice, your
chicken stock, chopped basil, sugar and black pepper. Bring to a boil then reduce heat, partially
cover and simmer 10 minutes.
 Blend if desired – use an immersion blender in the pot or blend in batches using a blender (be
careful not to overfill the blender with hot liquid) and return soup to the pot.
 Add cream and parmesan – stir in the heavy cream and shredded parmesan. Return to a simmer
and season to taste if needed.
 Serve – ladle into warm bowls and garnish with more parmesan.’

Appetizer
Fried Breaded Eggplant
Ingredients
 olive oil 3 tsp
 unseasoned bread crumbs 2 cups
 grated Parmesan cheese ½ cup
 garlic powder ¼ tsp
 dried oregano ¼ tsp
 dried basil ¼ tsp
 salt ½ tsp
 ground black pepper ½ tsp
 eggs 2
 Water 1 splash
 eggplant, peeled and sliced into 1/4-inch rounds 1

Procedure
 Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil; coat
with about 1 teaspoon olive oil.
 Combine bread crumbs, Parmesan cheese, garlic powder, oregano, basil, salt, and pepper in a
shallow dish. Combine eggs with a splash of water in a separate shallow dish.
 Dip eggplant slices in egg mixture, then press into bread crumb mixture to coat both sides;
arrange on the prepared baking sheet. Drizzle the remaining 2 teaspoons oil over breaded
eggplant slices.
 Bake in the preheated oven until golden brown, 20 to 25 minutes. To further brown the
breading, turn on the broiler and broil until the desired color is reached.

Broccoli Potato Salad with Blue Cheese
Ingredients
 broccoli 1 small head
 baby potatoes 12 pieces
 dried cranberries ⅓ cup (5 Tbsp)
 crumbled blue cheese 50 g
 spring onions, green onions, sliced 4 pieces

Honey mustard Dressing

 olive oil 5 Tbsp


 cider vinegar 2 Tbsp
 honey 1 Tbsp
 mustard 1 Tbsp

Procedure
 Boil the potatoes for about 15 minutes, until cooked through. Drain and place in a large bowl.
Set aside to cool.
 Whisk all of the dressing ingredients together in a small bowl until a creamy dressing has
formed.
 Toss the broccoli, potatoes, cranberries and spring onions together in a bowl and pour the
dressing in. Toss until combined.
 Add the crumbled blue cheese and toss just until it’s incorporated.
 Serve immediately or keep in the fridge for up to 3 days.

Chicken Sandwich
Ingredients
Buttermilk Marinade
 boneless skinless chicken thighs pounded to even thickness 4 pieces
 buttermilk 1 cup
 Sriracha or your favorite hot sauce 2 tbsp
 salt, pepper, garlic powder 1 tsp each
Flour Mixture
 all-purpose flour 1 cup
 cornstarch 3 tbsp
 paprika powder 1 tbsp
 salt, pepper, garlic powder, cayenne powder 1 tsp each
Spicy Mayo
 Mayonnaise 1/2 cup
 Sriracha or your choice of hot sauce 2 tbsp
 Buns 4 pieces
 Oil 1 cup
 Lettuce 100 g
 Tomato 2 pieces
 Pickles 1 whole

Procedure
 Chicken - combine buttermilk, Sriracha, salt, pepper, and garlic powder. Add chicken thighs and
marinate in the fridge for at least 4 hours or overnight.
 Flour Mixture - Whisk together flour, cornstarch, paprika, salt, pepper, garlic powder, and
cayenne powder in a large bowl.
 Add 2 tbsp of the marinade to the mixture and mix with a fork. Dredge the chicken with the flour
mixture, making sure each piece is evenly coated. Prepare the sauce by mixing together Sriracha
and mayonnaise.
 Heat oil in a deep skillet until it reaches 325˚F (165˚C). Fry the chicken for about 3-4 minutes on
each side, or until golden brown. The thickest part of the chicken should register 165˚F (75˚C).
 Generously spread the spicy mayo on both sides of the buns and add your preferred toppings
 and the chicken. Serve immediately and enjoy!

Baby Back Ribs
Ingredients
 Pork Baby back ribs 800 grams
 Aluminum foil
 Cooking spray
 Salt and Pepper ½ tsp each

Barbecue Sauce

 Ketchup ¼ cup
 Sugar ¼ cup
 Onions 1
 Garlic 2 cloves
 Bbq powder 1 tsp
 Oil 2 tbsp
 Pepper ½ tsp
 Vinegar 2 tbsp
 Worcestershire sauce 1 tsp

Procedure
 Sauce - Saute Garlic, Onion in oil, Ketchup, oyster sauce, Sugar, vinegar.
 Add pepper, barbeque powder.
 Cut ribs into 4 equal portions.
 Tear off 4 pieces of aluminum foil big enough to enclose each portion of ribs. Grease each piece
of foil with cooking spray.
 Brush ribs liberally with barbecue sauce; place each portion of ribs on a piece of foil.
 Preheat the oven to 300 degrees F (150 degrees C).
 Bake ribs wrapped tightly in foil in the preheated oven for 2 ½ hours. Remove ribs from foil and
serve with more sauce, if desired.

Lasagna Roll Ups
Ingredients
 Lasagna Sheets 500 grams
 Cooking oil 2 tbsp
 Garlic(chopped) 6 cloves
 Carrot(minced) 1 cup
 Celery(chopped) 1/3
 Ground Beef 250 grams
 Salt 1 tsp
 Pepper t tsp
 Olive oil ¼ cup
 Spaghetti Sauce 1 kg
 Tomato Paste 2 tbsp

 Bay leaves 2

Cream Cheese Mixture

 Cream Cheese 8 ounces

White Sauce

 Butter 2 tbsp

 Milk 1 ½ cup

Toppings

 Mozarella ¼ cup
 Parsley 1/3 cup

Procedure
 Cook Lasagna Sheets according to package instructions, once cooked drain and set aside.
 Saute onions and garlic, add carrots and celery, cook until soften.
 Add ground beef, season with salt and pepper then saute until the beef is cooked
 Add spaghetti sauce, tomato paste, water, bay leaves and the beef cube.
 Mix well and cover, Simmer for 30 minutes.
 Remove Bay leaves, Add sugar, salt and pepper to taste.
 Simmer for another 2 minutes.
 Set Aside Sauce to Cool
 Mix Cream cheese, basil leaves, chopped, mozzarella cheese
 Spread the Cream Cheese on Lasagna sheets, Add meat sauce and roll tightly.
 Spread some meat sauce in the baking dish and put the rolls in it.
 Melt some butter in a pan, add flour, cook until bubbly and add milk while stirring.
 Add salt to taste, then cook until the sauce thickens
 Drizzle the white sauce on top of the roll ups and put mozzarella cheese
 Bake in a preheated oven at 180 c for 10-15 minutes.
 Garnish with Parsley

Creamy Garlic Shrimp
Ingredients
 Peeled and deveined shrimp 250 grams
 garlic 2 cloves
 spinach ½ cup
 heavy cream ½ cup
 parmesan cheese ½ cup
 red crushed pepper 1/8 cup
 butter ½ tbsp
 paprika 1/4 tsp
 salt pinch
 pepper pinch

Procedure
 Heat oil and butter in a large skillet over medium-high heat
 Season the shrimp with salt, pepper, and paprika on both sides
 Cook the shrimp for 30 seconds on each side and then remove it from the skillet
 Add more oil if needed, and cook the garlic and red crushed pepper for 15 seconds
 Stir in the fresh spinach and season with salt and pepper and cook for 1-2 minutes.
 Pour in the heavy cream and add the fresh parmesan cheese. Season with salt and pepper if
needed. Cook for 6-7 minutes or until it thickens nicely.
 Once the sauce thickens, place the shrimp back into the skillet, cover with a lid and cook for an
additional 30 seconds over low heat.
 Garnish with fresh parsley, if desired and enjoy.

Egg and Bacon Canape
Ingredients
 Hard boiled eggs, peeled 3
 Whole or white toast 3 slices
 Mayonnaise ¼ cup
 Mustard ½ tsp
 Fresh herbs 1 tsp
 Hot sauce Dash

 Cooked bacon, cut into bite sized 2 slices

Procedure
 Slice hard boiled eggs, crosswise into ¼ inch slices.
 Using 2 inch circle cookie cutter, cut rounds out of toast to make 12 circles
 In small bowl, combine mayonnaise with mustard, herbs, hot sauce, and pepper
 To assemble: Top toast with 1 egg slice, ¼ tsp dollop of mayonnaise a piece of bacon and garnish
with fresh herbs.

Ingredients
 Cooked Rice 4 cups
 Butter 1 tbsp
 Oil 1 tbsp
 Shallots(chopped) 2
 Garlic(minced) 2 cloves
 Red bell pepper(finely chopped) 1/2
 Turmeric powder ½ tsp
 Soy sauce 1 tbsp
 Salt pinch
 Pepper pinch

Procedure
 In a bowl, break rice to separate grains.
 In a wok or wide, heavy bottomed skillet over high heat, combine butter and oil. Heat until
butter is melted. Add shallots, garlic, and bell pepper. Cook stirring regularly, until limp, Add
turmeric powder. Continue to cook, stirring regularly, for about 1 minute.
 Add rice and gently toss to fully coat. Spread the rice on entire cooking surface of pan for about
45 seconds or until grains start to sizzle and then toss again to redistribute.
 Add soy sauce and season with salt and pepper to taste. Continue to cook, tossing gently, for
about 1 to 2 minutes or until rice grains are heated through and evenly colored. Serve hot.
