    How to Make Crisp Roast Chicken

    Ingredients:
    1 chicken
    2 cups boiling-hot water
    1 tablespoon salt
    1 teaspoon black pepper

    Methods:
    1. Put oven rack in the middle position and preheat oven to 2000 C.
    2. Rinse chicken inside and out. Prick skin all over with a sharp fork.
    3. Pour boiling-hot water over chicken (to tighten skin). Cool the chicken.
    4. Rub the chicken inside and out with salt and pepper.
    5. Roast chicken, breast side up, until the skin is brown and crisp, then remove from the oven.
