sources, including rivers, lakes, wells,
rainwater collection, and the ocean
• Building water and wastewater systems
actually consist of a number of subsystems
with appropriate isolation devices between
the subsystems
• Each subsystem may have special
equipment installed to create water
conditions appropriate for the use being
served

• Pipes made of galvanized iron, steel, copper,
or plastic contain water under pressure
• The pressure is supplied by water utility,
property’ pumps, or a combination of these
• The pipes contain valves that may be used to
isolate parts of the system, shutting off water
supply

• Building wastewater systems are generally
designed to use a gravity flow system
• Wastewater system components dealing with
grease will have the wastewater flow thru a
grease separator (grease trap)
• Water system in buildings are usually designed
to group rooms together vertically with
bathroom back to back for easy maintenance
• Wastewater systems are vented to the
atmosphere and have traps to keep sewer
gases and odors from entering the building

in importance, depending on how water is used. Within
United State, Environmental Protection Agency (EPA)
tests and establishes National Primary Drinking Water
Regulations for public water system.

Cost of waste treatment is high  Local governments are

taking closer look at the wastewater of hotel & restaurant
• BOD – Biochemical Oxygen Demand – the quantity of
oxygen used in the biochemical oxidation of organic matter
under standard laboratory procedures for 5 days
• FOG – Fats, Oils, and Grease detect in standard laboratory
test procedure.
• TSS – Total Suspended Solids that float on or are suspended
in water and are removable by laboratory filtering

 4. WATER HEATING
• Hot water needs for guestrooms, laundry and
kitchen applications are probably the largest at
lodging facilities
• Employee locker rooms and health club facilities
can also be significant users
• Guestroom hot water exist at all hotels. Hot water
should be controlled under 46oC in the bathroom
• Since kitchen require water at 82oC, most system
designers include a separate water heater or
booster heater for kitchen needs

5. WATER SYSTEM MAINTENANCE CONCERNS

with water systems:
• Treating water to make it appropriate to the
application or need
• Replacing anode rods in water heaters
• Cleaning filters and strainers
• Lubricating pumps
• Checking hot water temperature settings
• Checking pressure relief valves on water heaters

• At some hotels, water is a key element of the

entertainment and recreational facilities
• Water is commonly used in exterior
landscaping treatment – ponds, flowing
streams, fountains and more. Sometimes
these elements are brought indoor
• More common is the use of water for the
recreational facilities such as water parks,
slides, and surf pools

 7. WATER CONSERVATION
• With rising water costs, decreasing water
availability and governmental restrictions of
water usage, hospitality business have several
reasons to reduce water usage
• Hotels have taken action to reduce water
usage such as installing low-flow shower
heads or reuse water (gray water)
• Growing applications for gray water include
landscaping and golf course irrigation

• Recently, hotels have been shifting to using
ozone laundry technology to replace the use
of chlorine bleaches. This new technology
helping to reduce of chemical and water usage
• Incorporating submeters on water lines and
regularly reading water meter can help in
water conservation programs
• Submeters on irrigation lines can help identify
leaks that are often difficult to find because
they are burried and may run long around the
property
