 Welcome everyone, today we are going to
understand a topic “ Food preservation “. Through
this presentation we will going to delve into food
preservation and some old modern techniques of
preserving food and preservatives and how they
works.
 What is food preservation?
 Why we need food preservation?
 What are preservatives?
 Food preservation in ancient time?
 Different methods of food preservation?
_ Drying
_ Salting
_Sugaring
_Fermentation
_Freezing
_Pasteurization
_What preservative used in which food?
 Food preservation is the method of preserving
food in a order to prevent it from decaying and
from other microbes like fungus and bacteria.
 It helps to increase food supply during shortage
period.
 It increases self life of food.
 It reduces the cost of food.
 So that we can enjoy seasonal fruits and
vegetables.
 Personal satisfaction.
 Food is easily available
 The substances that are added to our
food to prevent it from spoilage and
harmful microbes like fungus and
bacteria. These substances known as
preservatives.
 Drying is the process of preserving food by removing water and
moisture from it. It is done by various methods like sun drying, air
drying and drying near an open fire.
 Salting is one of the widely used for preservation method since
ancient time. It is mostly used for preserving fish and meat.
 Ancient culture have used sugar as a preservative. Sugar draws
water away from the microbes, leaving them dehydrated.
 Fermentation is a metabolic process that converts sugar into
alcohol. It takes place in the absence of oxygen.
 Freezing is the idea to stop bacterial and fungal infection. Freezing
reduces water activity and reduce temperature. Therefore, it
prevent food from microbes.
 Pasteurization (heat process) kill the bacteria that are harmful
pathogens and can spoil our food.
Oil and salt are used for preserving pickles
. Sugar are used for conserving jellies and jams
.Pasteurisation is a method of preserving food by heating like
milk
Freezing is a method of preserving food because it reduces the
temperature which prevent food from microbes
