Spanish Cuisine

About Custom
You won't find much difference in the way things are done in Spanish (or Latin American) restaurants from
the way they are done in the USA. You wait for a server. You're seated, menus are given. They ask what
you'll drink (bebidos) and if you want appetizers (tapas). n some places the tapas come free with the drink.
The server brings bread or tortillas, and appropriate condiments, takes your order, and then you're served.
You ask for la cuenta (the bill) and then you return it with payment (plus 10% tip).

n some countries it is customary to use a phrase to say something before or after a meal in a "good eating"
or "to your health" fashion. For example, in some Central American countries you say "buen provecho"
when you serve the food to someone, and in some it is customary for the one dining to say "buen
provecho" or "muchas gracias" after the meal. n Spain it is customary to say "que aproveche" or "buen
provecho" before the meal when serving, and the response by the guests (or diners) would be "gracias".

Because much of the Spanish speaking world is Catholic it may be customary for a prayer or blessing over
the food be offered- in a family setting. n a restaurant, however, it is just as unusual as it is in the US to
find someone praying over or blessing their food publicly.

About the Cuisine
There are dishes that are customarily served during certain holidays that are unique. Some are unique to
specific countries, or regions, too. Here are a few examples:
Paella is served in Spain during the springtime festival, Las Fallas. t has rice, meat or fish, saffron, paprika,
and a variety of other spices.
Churros are served most commonly as breakfast and snacks in Spain. They are a fried pastry in stick (or
twisted) shape. Some are filled with fruit or chocolate, like the USA version of a jelly-filled doughnut.
Mantecados and polvorones are almond cakes, and turrn is candy made from almonds and honey. All are
Christmas tradition in Spain, specifically in the southern regions.
Tortillas are more like omelettes in Spain, compared to the fried flatbread we're used to hearing about from
Mexico (or other Central and South American countries).
Jamn serrano is country ham and has varieties that are sweet, spicey, or slightly pink (raw).
Flan in the USA is a kind of tart, but in Spain and much of the rest of the Spanish speaking countries it is a
custard desert with soft caramel on top.
Gazpacho is a cold Spanish breadsoup. There are several varieties of gazpacho- all depend on the
tradition of the area or family. Sometimes it has tomato as an ingredient, but not always. t is usually served
with meat or a hard-boiled egg.
Horchata is a drink made with either almonds or rice. t is usually served warm (not chilled, but at room
temperature).
Tamales aren't Spanish in origin. Tamales are Native American in origin. They are made of steam cooked
cornmeal wrapped in corn husks or platanos skins. Depending on the availability, tamales will have some
meat or chili inside. Sweet or desert-like tamales will have raisins or other fruit added.
Pltanos are servered in Central and South America. They are relatives of the banana but are starchier.
Usually they are fried and served as a side dish.
Burritos are from Mexico made with flour tortillas wrapped around refried beans, rice, meat, fish, cheese,
tomatos, chili, or other fillers. The USA version isn't much different, but is very popular.

Focus:
The purpose of this lesson is to give false
beginners the skills to order food in a restaurant.
This lesson follows a simple format of an
introduction and discussion, followed by a role-
play activity.
Preparation:
The teacher will need to print off and photocopy
four sheets: restaura3t me3us, the waiters'
activity sheet, the customers' activity sheet,
a3d the role-play prompts
Introduction:
Tell the students that they will be ordering food
from restaurants today. nvite one student up to
the front and give the student a menu. After the
student has had a short time to look at the menu,
say,"May take your order?"
Usually, the student will say something very
basic, "Hamburger. f this is the case, walk to
my pretend kitchen, cook up a pretend
hamburger, and when am done, pretend to spit
in it. The class will usually laugh and the student
who ordered it may be surprised.
f the student gives a more sophisticated answer,
then write it on the board and then we begin to
discuss other ways of ordering food.
Discussion:
The purpose of the above demonstration is a
lesson in pragmatic competence. Just barking
out orders can be perceived as being rude and
may have real consequences. After the student
sits back down, ask the class why spit in the
student's imaginary hamburger.
As a class we briefly discuss ways to order
food: 'll have a hamburger, please 'd like the
seafood spaghetti. Then we go over other
aspects of the conversation to the right.

Now, comes the real focus of the class: a role-
play activity to practice ordering food.. Divide the
class into three: one third of the class will
begome restaurant waiters and the other two
thirds will partner up and go around to the
various restaurants and order food.
The waiters should receive their 'Special of the
Day' prompt cards and their activity sheet. As
customers visit their restaurants, waiters have to
write down the orders on their activity sheets.
Likewise, the customers write down what they
ordered on the customer activity sheets.
Now, if you want to throw in an unscripted
wrench into the works, you can hand out the
complaint cards to the customers and see how
both customers and waiters react. You can also
instruct a few waiters to be rude and insulting on
purpose.

Ordering food in a restaurant is one of the most basic - and daunting to some beginners - task that
beginners need to learn. This lesson uses some of the beginners materials you can find at esl.about.com
including some basic dialogues and a challenging listening comprehension.
O Ask students to name different types of food they can find in a restaurant. Write the vocabulary on the
board and make sure students also take note.
O Give students the dialogue and menu, and ask them to read through it carefully. Point out the use of
"would like" for asking for and making request. You may also want to make sure they notice the use of
"here you are" instead of "please" when handing someone something (a rather common mistake
beginners make).
O Pair students up and ask them to use the menu (or a more interesting menu you may have lying around)
to role play through ordering a meal. Both students should switch roles a number of times.

I'm Going to the Supermarket

Choose a student to begin. This student will say, "'m going to the supermarket to buy [food item beginning
with "a"]." The next student will then say, "'m going to the supermarket to buy [food item beginning with "a"
named by first student] and [food item beginning with "b"].

Play continues, with each student recalling all previously mentioned items and adding another item in
alphabetical sequence. f a student misses an item or cannot think of an item to add, he or she is out. The
last remaining student wins.

f play continues after all letters have been exhausted, students repeat all previously named words, then
add a new word beginning with "a" and continue through the alphabet once more. For example, "'m going
to the supermarket to buy apples and . . . zebra meat and apple juice . . . "

Note: The letters "q," "x," and "z" may be ommitted if you like. Or you may encourage creativity--quiche, a
xylophone-shaped cake, zebra meat, etc...



Paella
Paella is a typical Spanish dish and is traditionally cooked in a "paellera" - a round flat pan with two handles
which is then put on the table. t is normally made using shellfish but can also be made with chicken or rabbit.
n many Spanish villages, especially in coastal areas, they use a giant paellera to cook a paella on festival days
which is big enough to feed everybody.
A paella is very flexible so if you don't have the exact ingredients or if you find some of them hard to get hold of,
substitute them for something similar. Getting fresh shellfish can be a problem, but you can always use
frozen fish and use fish stock instead of water to increase the flavour.
There are literally hundreds of ways to cook a paella and every cook has their own favourite recipe.
Here's mine (it will serve 6 people depending on how hungry you are):
NGREDENTS:
1 small onion, finely chopped
1 green pepper, finely chopped
red pepper, boiled until soft and then cut into long thin strips
2 medium-sized tomatoes, skinned and finely chopped
2 carrots, finely chopped
100g peas, cooked
200g prawns (if using cooked prawns substitute fish stock for the water)
200g small clams
200g squid
12 mussels
350g rice (traditionally short grain rice is used but prefer to use long grain)
2 cloves of garlic, coarsely chopped
a pinch of saffron strands (if you can't get saffron, use yellow food colouring instead and
add it once you have added the liquid)
a sprig of parsley, finely chopped
olive oil
about 800ml water


PREPARATON:
MUSSELS: Wash the mussels, removing the beards. Throw away any that don't shut on contact with water.
FRESH SQUD: Rub off the outer dark skin. Pull out the insides (including the transparent back bone) and
pinch the eye away from the tentacles. Save the tentacles. Cut the squid into rings.
CLAMS: Wash in water and then put in a bowl with some salt so that the grit comes out. Throw away any
that are open.
PRAWNS: Whether you peel them or not is up to you. f you decide to peel them, save the shells and boil in
water for about ten minutes. Save the liquid and add later instead of water.
GARLC: n a pestle and mortar, grind the garlic, saffron (if using), parsley and a pinch of salt.
RECPE:
Heat some olive oil in a large frying pan. Add the onion, green pepper and carrot and fry gently for about five
minutes. Add the chopped tomato and squid (with the tentacles) and fry on a low heat for another ten minutes.
Add the rice and stir well to make sure that it is thoroughly coated. Add water (or the water from boiling
the prawn shells or fish stock if using frozen fish), clams and the garlic/saffron/parsley mixture and bring to the
boil. Season with salt. Put a lid on it, turn the heat right down and cook very slowly for about ten minutes.
Add the prawns and peas and give it a stir. Arrange the mussels and strips of red pepper artistically on top,
put the lid back on and leave for another ten minutes - checking that it has enough water. f you think it is getting
too dry, add more water,but shake the handle of the pan rather than stir so as not to upset the pattern.
Once the rice is cooked and the mussels have opened, it is ready to eat.
