Quinoa has been a staple food for Andean populations for millennia. Today, it is a much-appreciat... more Quinoa has been a staple food for Andean populations for millennia. Today, it is a much-appreciated product on the international health-food, organic and fair-trade food markets. Quinoa producers in the southern Altiplano of Bolivia initiated this change approximately 40 years ago. On high desert land, they succeeded in developing a thriving agricultural crop for export. Although they enjoy lucrative niche markets, quinoa producers are not specialized farmers, nor do most of them live yearround in the production area. These are some of the paradoxes that characterize quinoa production in the southern Altiplano of Bolivia. Following a description of the origin, diversity and biological traits of the ‘Quinoa Real’ ecotype, on which production in this area is based, this chapter explores the importance of quinoa in local agrosystems and in the systems of agricultural and non-agricultural activities managed by southern Altiplano families. Ce rejet est d'autant plus fort que les populations semblent découvrir une agriculture «industrialisée» et ses nuisances. Alors, l'absence des textes, comme ressources de régulation, accroît les rancœurs et développe les conflits. Avec une approche restreinte aux odeurs des effluents d'élevages et en faisant référence à des terrains situés en Dordo- gne, nous développons l'hypothèse que les carences de prise en compte légale de la question des odeurs en suscitent une gestion informelle, qui trouve aujourd'hui ses limites dans le cadre d'un espace rural en recomposition. Thus, bad smells are unacceptabled. This reject is so hard as near as populations seem to discover industrial agriculture and its effects. Then, the lack of texts, as regulation means, increase resentments and conflicts. With an approch limited to husbandries waste smells and referins to fieldwork located in Dordogne, we développe the hypothesis that legal inefficiency taking care of smell problem lead to a non formal management, with find today its limits in a recombined rural space.

Linear programming is more than an optimising technique to be used in normative studies. It can a... more Linear programming is more than an optimising technique to be used in normative studies. It can also be used to mimic the behaviour of peasant [armers, provided we assume them rational. This proposition is illustrated by the results of an investigation conducted in a traditional African peasant environment in central Casamance. It was possible to analyse the conditions of competition or the complementary nature of the various cultures devoted either to food production or to productivity, or to bring out the potential effect to be expected from introducing intermediary or "soft" technologies . The results underline, once again, the crutial role played by risk and incertitude in agricultural decision-making.
