BC-5th c AD) unearthed in the valleys of the Moselle and the Petite Seine, as well as on the plateau of the Plaine de France. Since the 1990s, preventive archaeology has been intensive in these areas of Lorraine and Île-de-France due to an increasing pressure of land use for constructions and gravel mining. The archaeological data accumulated over more than two decades now allows spatial studies at the scale of these micro-regions. With regard to the exploitation of these landscapes, we are presenting a synthetic review of archaeobotanical and archaeozoological studies with the aim to discuss pastoral and agricultural production and the organization and development of agricultural systems. Comparison of these multidisciplinary data obtained from these study areas highlights some remarkable differences which are reflecting the regional diversity of the agricultural shaped countryside in Gaul.
