2014 - Des céréales et du lait au Sahara et au Sahel, de l’épipaléolithique à l’âge des métaux2014 •
Cereals and milk in the Sahara and the Sahel, from the Epipaleolithic period to the Metal Age. The diversity of the current culinary traditions in the Sahara and the Sahel, centered on cereals and giving to dairies a very variable part, indicates the complexity of their history. This article proposes a synthesis and reflections on this subject from the known archaeological remains. It remains difficult to recognize the use of wild cereals as food resources from 20 000 BC (time of appearance of the stone grinding equipment in the Libyan desert). New investigations, some of which successful recently, may be able to give determining elements to elucidate this question. The first attempts of pearl millet domestication appear during the IIIrd millennium B.C. in the West African Sahel region. Domestication of other cereals which are still cultivated today seems to begin at least two thousand years later, judging by the discoveries of botanical rests. The development of cereal culture implies the management of sowing, grain storing, guarding and protection of fields and defense of the harvests. It further implies economic specialisation, development of craftsmanship, envy, development of trading, and hence, the accentuation of different social categories and political rivalries. Since the beginning of breeding in Africa, that is to say from the VIth millennium B.C. to present, Saharan herdsmen have exploited the dairy production of their animals. Several documented sources demonstrate this: figurative milk-producing female animals and milking scenes in Saharan rock art, slaughtering of young calves and kids in the Libyan desert, fat from cow’s milk preserved inside potsherds found in the Tadrart Akoukas.

RESUME : Les pays du Maghreb, ont connu durant les quatre dernières décennies, une succession de périodes de sécheresses intenses et persistantes. En Algérie cette sécheresse a été caractérisée par un déficit pluviométrique important, et a touché l'ensemble du territoire. Elle a sévit particulièrement dans les régions qui bénéficient d'un climat semi aride. A l'échelle du bassin versant d'Oued Mellègue, la situation pluviométrique a été marquée par un déficit généralisé. En se basant sur le calcul des indices de sécheresse les plus utilisés en Algérie, à savoir : l'indice de l'écart à la moyenne, le rapport à la normale des précipitations et l'indice standardisé des précipitations (SPI). Ces indices ont permis de mettre en évidence que le haut bassin versant d'Oued Mellègue a connu une période de sécheresse prolongée durant la décennie 1980-90. L'analyse des valeurs de l'indice standardisé des précipitations (IPS) montre que toute la période d'étude a été marquée d'épisodes de sécheresses légères. L'examen des années de sécheresse fait apparaitre une fréquence plus élevée où on n'a jamais enregistré une décennie qui ne comporte pas 05 années sèches. INTRODUCTION Le changement et la variabilité climatiques ont inquiété depuis quelques décennies les scientifiques et les gestionnaires du secteur de l'eau à cause de leurs effets immédiats sur les ressources en eaux et l'environnement. Dans les zones arides et semi-arides de l'Afrique du Nord, les réserves d'eau sont tributaires des aléas climatiques ce qui cause leur précarité. En effet, la sécheresse qui a affecté les pays du bassin méditerranéen lors des dernières décennies s'est manifestée d'une manière particulièrement sévère, persistante et avec une extension remarquable (Meddi et al, 2009). Cette sécheresse est due à une augmentation des températures et à une accentuation de la variabilité climatique résultant de la modification de la répartition des précipitations (Hassani, 2008). Ces changements climatiques ont été annoncés par l'Intergovernmental Panel on Climate Change (IPPC, 2001 et 2007) qui a prouvé une modification affectant l'équilibre énergétique du système « Terre-océan-Atmosphère-Biosphère».

L'agriculture soissonnaise au Moyen Age : contraintes et traits originaux de la production céréalière2003 •
L'article analyse tout d'abord les contraintes politico-militaires, climatiques et pédologiques qui pèsent sur l'agriculture de la région soissonnaise aux XIIe et XIIIe siècles, avant d'approfondir la recherche sur la culture des différentes espèces de céréales : orge, seigle, froment, méteil, avoine. Les témoignages relatifs aux cycles de culture et à la rotation triennale sont abordés en dernière partie, ainsi que les engrais et les amendements des terres.
This paper is based on research on ethnic identification and the construction of hierarchy through health and food ways among so called “Maghrebian Arabs”, living in the Aquitaine vineyards. The data analysed results from anthropological research carried out for two years on several communes between Saint Emilion (départe- ment 33) and Bergerac (département 24). Employed on the vineyards, the fathers and mothers in these com- munities come from modest backgrounds. They were part of the first wave of migration in the Bordeaux area in the 1970s; they come predominantly from the area of Mekhnès in Morocco or Thelpete in Tunisia. The basis of the fieldwork concerns 25 families. Foodways and beliefs are one of the best ways to identify symptoms of “magi- cal thinking”. Eating is an act that goes well beyond the simple physiological fact of ingestion: it is also a means of defining oneself, for we are what we eat (and we also are what we do not eat). How then do migrants or children of migrants incorporate the imaginary characteristics of a food? The beliefs about food among the Maghreb immigrants in Aquitaine allow us to observe these proc- esses in action. These youngsters who feel strongly that they belong in the rural world of Aquitaine adjust their foodways according to the relationships between town/ country, Morocco/France, Islam/secularism, unhealthy/ healthy, adjusting them to the requirements of the social majority. Thus “eating healthily” can be associated either with western nutritional rules, or with Islam, or with rural life or even to all of these at the same time.

Jijel tirerait son nom du berbère «Ighil-Ighil» , de colline en colline ou en se referant à l'antiquité romaine, on a « IGILGILI » de « JILJIL », cercle de pierres sur lequel, la cité s'est construite pour échapper aux invasions venant du Nord.
