Scrambled Egg Poppers
These handy grab-and-go breakfast buns are ideal for weekday mornings. They’re sure to be a favorite with the kids.

PREP: 15 MIN. • BAKE: 25 MIN. • MAKES: 8 SERVINGS
2 loaves (1 pound each) frozen whole wheat bread dough, thawed
8 eggs
1/2 cup fat-free milk
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup bacon bits, divided
1/2 cup shredded cheddar cheese
1. Preheat oven to 350°. Divide each loaf into eight pieces. Roll into balls. Place in muffin cups coated with cooking spray. Bake 20-25 minutes or until golden brown.
2. Meanwhile, in a large bowl, whisk eggs, milk, salt and pepper; stir in 1/4 cup bacon bits. Coat a large nonstick skillet with cooking spray and place over medium heat. Add egg mixture to skillet (mixture should set immediately at edges).
3. As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, remove from the heat.
4. Using a melon baller, scoop out the center of each roll, leaving a 1/4-in. shell (discard removed bread or save for another use). Spoon 3 tablespoons cooked egg mixture into each roll. Top with remaining bacon bits and sprinkle with cheese. Bake 2-3 minutes longer or until cheese is melted.
Pull-Apart Caramel Coffee Cake
The first time I made this delightful treat for a brunch party, it was a huge hit. Now I get requests every time family or friends do anything around the breakfast hour! I always keep the four simple ingredients on hand.

PREP: 10 MIN. • BAKE: 25 MIN. • MAKES: 12 SERVINGS
2 tubes (12 ounces each) refrigerated flaky buttermilk biscuits
1 cup packed brown sugar
1/2 cup heavy whipping cream
1 teaspoon ground cinnamon
1. Preheat oven to 350°. Cut each biscuit into four pieces; arrange evenly in a 10-in. fluted tube pan coated with cooking spray. Combine brown sugar, cream and cinnamon; pour over biscuits.
2. Bake 25-30 minutes or until golden brown. Cool coffee cake 5 minutes before inverting onto a serving platter.
DID YOU KNOW?
Dark brown sugar contains more molasses than light or golden brown sugar. The types are generally interchangeable in recipes. But if you prefer a bolder flavor, choose dark brown sugar.
Meal in a Muffin Pan
This meal-in-a-pan breakfast is ideal for busy weekday mornings. I just add fresh fruit and beverages.

1 can (15 ounces) corned beef hash
6 eggs
Salt and pepper to taste
1 package (8 1/2 ounces) corn bread/muffin mix
1. Preheat oven to 400°. Grease a 12-cup muffin pan. Divide hash into six of the cups; press onto the bottom and up the sides to form a shell. Break an egg into each shell; season with salt and pepper. Mix muffins according to package directions. Spoon batter into the other six cups.
2. Bake 15-20 minutes or until muffins are golden brown and eggs are set.

Creamy Peaches
High in protein and virtually fat-free, this creamy fruit dish can double as a healthy dessert.

1 can (15 ounces) sliced peaches in extra-light syrup, drained
1 1/2 cups (12 ounces) fat-free cottage cheese
4 ounces fat-free cream cheese, cubed
Sugar substitute equivalent to 1 tablespoon sugar
1. Thinly slice four peach slices; set aside for garnish. Place remaining peaches in a food processor; add cottage cheese. Cover and process until blended. Add cream cheese and sugar substitute; cover and process until blended.
2. Spoon into four serving dishes. Top with reserved peaches. Refrigerate until serving.
NOTE This recipe was tested with Splenda no-calorie sweetener.

Jam ’n’ Cream French Toast
My grandmother used to make this for me when I was a child. You can experiment with other flavors of jam and bread.

2 tablespoons cream cheese, softened
2 thick slices cinnamon-raisin bread
2 tablespoons strawberry jam
1 egg
1 tablespoon butter
Maple syrup, optional
1. Spread cream cheese on one slice of bread. Spread jam on the other slice; place jam side down over the cream cheese. In a shallow bowl, beat egg. Dip both sides of bread into egg.
2. In a small skillet, melt butter; toast bread for 3-4 minutes on each side or until golden brown. Serve with syrup if desired.

Sausage Cheese Biscuits
These biscuits are a brunch-time favorite. I love that they don’t require any special ingredients.

1 tube (12 ounces) refrigerated buttermilk biscuits
1 package (8 ounces) frozen fully cooked breakfast sausage links, thawed
2 eggs, beaten
1/2 cup shredded cheddar cheese
3 tablespoons chopped green onions
1. Preheat oven to 400°. Roll out each biscuit into a 5-in. circle; place each in an ungreased muffin cup. Cut sausages into fourths; brown in a skillet. Drain. Divide sausages among cups.
2. In a small bowl, combine eggs, cheese and onions; spoon into cups. Bake 13-15 minutes or until browned.
Cherry Yogurt
Top this thick, rich yogurt with wholesome granola for a quick breakfast. Or layer it in a parfait glass with granola and fruit for something special. It will keep in the refrigerator for a week. Look for 100% cherry juice at the store; the cocktail blends have added sugar.

4 cups (32 ounces) reduced-fat plain yogurt
1 cup frozen pitted dark sweet cherries, thawed and quartered
1/2 cup cherry juice
3 tablespoons confectioners’ sugar
1 1/2 teaspoons vanilla extract
1. Line a strainer with four layers of cheesecloth or one coffee filter and place over a bowl. Place yogurt in prepared strainer; cover yogurt with edges of cheesecloth. Refrigerate for 8 hours or overnight.
2. Remove yogurt from cheesecloth and discard liquid from bowl. Place yogurt in a small bowl; stir in the remaining ingredients. Cover and refrigerate until serving.

Apple Sausage Puffs
I love serving these tender little puffs when I entertain during the holiday season. I need just four basic ingredients to prepare them, and no one is able to resist.

START TO FINISH: 25 MIN. • MAKES: 2 DOZEN
1 pound bulk pork sausage
1 medium apple, finely chopped
3 ounces cream cheese, softened
3 tubes (8 ounces each) refrigerated crescent rolls
1. Preheat oven to 375°. In a large skillet, cook sausage and apple over medium heat until meat is no longer pink; drain. Stir in cream cheese.
2. Unroll one tube of crescent dough; separate into eight triangles. Place 1 tablespoon filling on the long side of each triangle. Roll up, starting with the long side; pinch seams to seal.
3. Place point side down 2 in. apart on a greased baking sheet. Repeat with remaining crescent dough and filling. Bake 10-12 minutes or until golden brown. Serve warm.

Banana Chip Pancakes
