Slow-Cooked Salsa
I love the fresh taste of homemade salsa, but as a working mother, I don’t have much time to make it. So I came up with this slow-cooked version that practically makes itself!

PREP: 15 MIN. • COOK: 2 1/2 HOURS + COOLING • MAKES: ABOUT 2 CUPS
10 plum tomatoes
2 garlic cloves
1 small onion, cut into wedges
2 jalapeno peppers
1/4 cup cilantro leaves
1/2 teaspoon salt, optional
1. Core tomatoes. Cut a small slit in two tomatoes; insert a garlic clove into each slit. Place tomatoes and onion in a 3-qt. slow cooker.
2. Cut stems off jalapenos; remove seeds if a milder salsa is desired. Place jalapenos in the slow cooker.
3. Cover and cook on high for 2 1/2-3 hours or until vegetables are softened (some may brown slightly); cool.
4. In a blender, combine the tomato mixture, cilantro and, if desired, salt; cover and process until blended. Refrigerate leftovers.
NOTE Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

Cheesy Bean Dip
This reworked version of a favorite Mexican party dip has all the great taste of the classic, but it uses lower-fat ingredients to advantage.

1 1/2 cups (6 ounces) shredded reduced-fat Mexican cheese blend
1 1/2 cups (6 ounces) shredded reduced-fat cheddar cheese
1 can (16 ounces) fat-free refried beans
1 can (10 ounces) diced tomatoes and green chilies
1 package (8 ounces) reduced-fat cream cheese, cubed
1/2 cup reduced-fat sour cream
1 tablespoon taco seasoning
Tortilla chips and assorted fresh vegetables
1. In a large bowl, combine cheeses; set aside 1 cup for topping. Add the beans, tomatoes, cream cheese, sour cream and taco seasoning to the remaining cheeses; stir until blended. Transfer the mixture to a greased 2-qt. baking dish; sprinkle with the reserved cheeses.
2. Bake, uncovered, at 350° for 20-25 minutes or until bubbly around the edges. Serve warm with chips and vegetables.

Garlic Pumpkin Seeds
What to do with all those leftover pumpkin seeds after carving your jack-o’-lantern? Try this microwave-easy recipe. It works well with butternut or acorn squash seeds, too.

1 tablespoon canola oil
1/2 teaspoon celery salt
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt
2 cups fresh pumpkin seeds
1. In a small bowl, combine the oil, celery salt, garlic powder and seasoned salt. Add pumpkin seeds; toss to coat. Spread a quarter of the seeds in a single layer on a microwave-safe plate. Microwave, uncovered, on high for 1 minute; stir.
2. Microwave 2-3 minutes longer or until seeds are crunchy and lightly browned, stirring after each minute. Repeat with remaining pumpkin seeds. Serve warm, or cool before storing in an airtight container.
NOTE This recipe was tested in a 1,100-watt microwave.

Tomato Basil Snackers
Fresh basil, summer-ripe tomatoes and melted mozzarella cheese top toasted English muffins in this fabulous afternoon pick-me-up.

2 English muffins, split and toasted
2 tablespoons fat-free mayonnaise
3 plum tomatoes, cut into 1/4-inch slices
6 fresh basil leaves, thinly sliced
1/8 teaspoon pepper
1/2 cup shredded part-skim mozzarella cheese
Place English muffin halves on an ungreased baking sheet; spread with mayonnaise. Top with the tomatoes, basil, pepper and cheese. Broil 4 in. from the heat for 3-4 minutes or until cheese is melted.

Saucy Asian Meatballs
This meatball recipe originally called for beef and pork and a different combination of seasonings. I used ground turkey and altered the seasonings to create a healthy, fresh-flavored variation.

1 pound lean ground turkey
2 garlic cloves, minced
1 teaspoon plus 1/4 cup reduced-sodium soy sauce, divided
1/2 teaspoon ground ginger
1/4 cup rice vinegar
1/4 cup tomato paste
2 tablespoons molasses
1 teaspoon hot pepper sauce
1. Preheat oven to 350°. Place turkey in a large bowl. Sprinkle with garlic, 1 teaspoon soy sauce and ginger; mix lightly but thoroughly. Shape into 1-in. balls; place in a 15x10x1-in. baking pan. Bake 20-25 minutes or until meatballs are cooked through.
2. In a large saucepan, combine vinegar, tomato paste, molasses, pepper sauce and remaining soy sauce; cook and stir over medium heat 3-5 minutes. Add meatballs; heat through, stirring gently to coat.

This lightened-up recipe is loved by friends and family—and it tastes so indulgent with 1/2 pound of bacon! Taste of Home slashed the calories, fat and sodium in my dish, but not one bit of real bacon flavor.

1 large egg, lightly beaten
1/2 pound sliced bacon, cooked and crumbled
1/2 cup reduced-fat ricotta cheese
1/2 cup shredded part-skim mozzarella cheese
1/2 cup shredded reduced-fat cheddar cheese
1 small onion, finely chopped
1/4 teaspoon garlic powder
Dash cayenne pepper
Dash pepper
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
1. In a small bowl, combine the first nine ingredients. Place tart shells on an ungreased baking sheet; fill each with 2 teaspoons mixture.
2. Bake at 350° for 8-10 minutes or until filling is set and shells are lightly browned. Serve warm.

Spicy Tomato Juice
People love the spicy taste of this zesty juice all year-round. It’s a delicious mixer, too.

12 pounds tomatoes
9 dried ancho chilies
3 medium onions, chopped
1 celery rib, chopped
1/4 cup chopped seeded jalapeno pepper
1/2 cup sugar
1 tablespoon Worcestershire sauce
2 teaspoons salt
1/4 teaspoon pepper
1. Fill a Dutch oven two-thirds full with water; bring to a boil. Score an X on the bottom of each tomato. Using a slotted spoon, place tomatoes, one at a time, in boiling water for 30-60 seconds. Remove tomatoes and immediately plunge into ice water. Discard peel; chop tomatoes and place in a stockpot.
2. Add the chilies, onions, celery and jalapenos. Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until vegetables are tender. Cool slightly. In a food processor, process juice in batches until blended. Strain and discard seeds and pulp. Place puree in a Dutch oven.
3. Stir in the remaining ingredients; heat through. Cool. To serve, refrigerate until chilled or transfer to storage containers. May be refrigerated for up to 3 days or frozen for up to 3 months.

1/2 cup chopped seeded peeled cucumber
3 tablespoons lime juice

In a large bowl, combine the first 11 ingredients. Serve with tortilla chips.

Makeover Stuffed Potatoes
We tried this makeover version of an all-time favorite, and my friends and I loved it. We barely noticed the difference! Best of all, we kept all of the cheeses in the original.

PREP: 45 MIN. + COOLING • BAKE: 15 MIN. • MAKES: 40 APPETIZERS
20 baby Yukon Gold potatoes (2 pounds)
6 ounces fat-free cream cheese
3/4 cup reduced-fat sour cream
6 bacon strips, cooked and crumbled
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded sharp cheddar cheese
2 green onions, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1. Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 8-10 minutes or just until tender. Drain.
2. When cool enough to handle, cut each potato in half lengthwise. Scoop out the pulp, leaving thin shells. Remove 1/3 cup pulp (discard or save for another use).
3. In a large bowl, mash the remaining pulp with cream cheese. Add sour cream and half of the bacon. Stir in the cheeses, green onions, salt and pepper; spoon into potato shells.
4. Place in a 15x10x1-in. baking pan. Sprinkle with the remaining bacon. Bake the potatoes, uncovered, at 400° for 15-20 minutes or until heated through.

THE SKINNY
Makeover Stufed Potatoes use fat-free cream cheese and reducedfat sour cream in slightly lesser quantities than the original. They also call for less bacon and salt, but they keep the same amount of favorful cheeses.

Crisp Finger Sandwich
I love snacking on this delicious sandwich with its crisp English cucumber. I have also made batches of these for parties and showers, using a small party loaf of whole wheat or sourdough bread.

2 tablespoons reduced-fat spreadable garden vegetable cream cheese

Deviled Eggs
This lighter version of a classic uses only half of the egg yolks of the original recipe and calls for soft bread crumbs to firm up the filling. We replaced the mayo with fat-free mayonnaise and reduced-fat sour cream. These contain 1/3 fewer calories than the original and half the fat.

3. In a small bowl, combine cumin, paprika, oregano, salt and chipotle pepper; add shrimp, tossing to coat. Thread shrimp onto eight soaked wooden appetizer skewers.
4. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat grill rack. Grill shrimp, covered, over medium heat or broil 4 in. from heat 3-4 minutes on each side or until shrimp turn pink.
