How To Peel And Deseed Tomatoes And Peppers
Peppers
Preheat your broiler. Place the peppers on a broiler pan about 2 inches from heat. Let broil for about 10 minutes (for chili, poblano, jalapeno peppers etc) and 15 minutes (for bell peppers) turning 3 to 4 times, until the skins are charred. Remove the peppers and place in a bowl. Cover for a few minutes until you can handle with your hands. Peel the peppers, cut open and discard the seeds. Chop or slice the peppers as the recipe demands. You can make a batch of this and keep in the fridge for several days.
Tomatoes
Choose tomatoes that are fully ripe. Add water to a pot and bring to a boil on the stove. Remove the tough green stem and cut an X on the bottom of each tomato. Add the tomatoes to the boiling water for 40 to 60 seconds. Remove the tomatoes and immediately drop in a bowl of ice water. Remove from the ice water and peel the skins with your fingers or a knife. Slice each tomato in half crosswise and squeeze gently to remove the seeds. Use the tip of a knife to ease out any hidden seed.
