In this study, effects of molecular structure transformation of canna starch (CS) in oxidation condition on physicochemical characteristics of thermoplastic starch were examined. Thermoplastic starch (TPS) samples of CS and respective oxidized starch (in 1, 3 and 5% of sodium hypochlorite, w/w) were prepared by using an internal mixer with the presence of 30 wt% of glycerol as plasticizer. The physicochemical, morphological, thermal, and mechanical properties of native starch-based TPS (NTPS) and oxidized starch-based TPS (OTPS) samples were evaluated. The content of carboxyl and carbonyl groups in oxidized canna starch (OCS) increased with the increase in the content of oxidant, leading to an improvement in the plasticization of CS. FTIR spectra of OTPS samples showed the stronger interaction between oxidized starch and plasticizer. SEM images of fracture surface indicated that the morphology of OTPS samples were smoother than that of NTPS samples. XRD patterns confirmed that the crystallite type of starches was also clearly changed after extrusion process and the decrease in crystallinity of OTPS samples is attributed to effects of both oxidation and plasticization. DSC results indicated that Tg of OTPS was greatly influenced by the carbonyl and carboxyl content and the higher content of these groups in oxidized starched could help the plasticization becomes easier. The better plasticization in OTPS samples resulted in the better mechanical properties and thermal stability of OTPS. The outcome suggested that the use of oxidized starch is an effective method to improve the plasticization in preparing thermoplastic starch.

Gelatinization of starch content in pet foods can be impacted by several factors including moisture, retention time, and ingredients used. Starch gelatinization has been associated with digestibility but isn’t well studied using ingredients common in non-traditional canine diets. The objective of this research was to examine the impacts of dietary ingredient profile (traditional vs non-traditional) and assess impacts to total starch content and starch gelatinization. Traditional diets (n = 10) utilizing meat-based ingredients including chicken, chicken by-product meal, meat and bone meal and plant-based ingredients including rice, barley, oats, and corn were examined in comparison with non-traditional diets (n = 10) utilizing meat-based ingredients including alligator, buffalo, venison, kangaroo, squid, quail, rabbit, rabbit and salmon along with plant-based ingredients including tapioca, peas, chickpeas, lentils, potato, and pumpkin. Representative samples were collected via grab sample technique (5 samples/diet) and were assessed for total starch content as well as percent starch gelatinization. Difference between ingredient type was assessed using a Students t-test in SAS 9.4. Significance was set at P < 0.05. Distribution of total starch content based on ingredient type (traditional vs non-traditional) revealed that mean total starch content was higher in traditional diets as compared to non-traditional diets (P <0.0001). Conversely, starch gelatinization was found to be higher in non-traditional diets (P < 0.0001). Total starch content and total gelatinized starch had a strong negative correlation (P < 0.01) in traditional diets, though no correlation was observed in non-traditional diets. This negative correlation indicates a decrease in total gelatinized starch associated with increased total starch content. These novel data reveal important differences between starch content and gelatinization and could impact manufacturing processes for ingredient types as well as feeding recommendations. Unpredicted variation between ingredient formulations could potentially lead to decreased digestibility and absorption and may result in nutrient deficiencies.

Along with the rapid development of the trend in the health sector, various studies have been conducted to find alternative healthier foods, one of which is reducing fat consumption. Currently, many researchers focus on one of modified starches that can be utilized as a fat replacer is starch modified with OSA (octenyl succinic anhydride). In the last decade, there have been quite a lot of publications related to OSA starch, further the number is still increasing. This review discusses the synthesis method of OSA starch and its optimization, functional characteristics, and its application to be a fat replacer in many kinds of products daily consumed. Various pre-treatment methods could be applied to create OSA starch which has higher degree of substitution values. The presence of conjugate bonds with the OSA group in starch polymers could produce very amphiphilic starch characteristic so as to have an emulsifying function. Emulsions shaped from OSA starch were utilized as fat replacers in foods with high level of fat content. Partial OSA starch substitution was successfully utilized as a fat replacer for several types of food products with similar sensory attributes or even slightly better than the native product. The resulting product could be defined as a healthier choice because it had relatively lower fat and calorie content. Even so, adjustments through further study are still needed so that the food produced is able to have a higher level of sensory acceptance relative to native food without fat substitution.

Currently, petroleum-derived plastics are widely used. However, one of its main disadvantages is its low degradation time, which is not beneficial to the environment. Therefore, natural polymers are an alternative to overcome this obstacle. Among the natural polymers, starch can be highlighted. Thus, the objectives of our investigation were to obtain sisal nanofibers using low concentrations of acid solutions to produce and characterize corn starch nanocomposites reinforced with these nanofibers. The films were produced by a casting technique using commercial corn starch and glycerol as plasticizing agents; the nanofibers were obtained using acid hydrolysis. The films were subjected to tensile tests to evaluate their resulting mechanical behaviors. The results of X-ray diffraction and transmission electron microscopy analyses revealed the possibility of obtaining cellulose nanofibers using a sulfuric acid concentration lower than that previously reported in the literature. The nanocomposites reinforced with plant nanofibers showed lower tensile stress and elongation characteristics than the matrices without nanofibers.

Starch content in wheat is an important characteristic for various purposes. Starch is composed of two components known as amylose and amylopectin, and the proportion between these two components plays a crucial role in determining the properties and structure of starch. One of the key genes involved in starch biosynthesis in wheat is granule bound starch synthase I (GBSSI), also known as the waxy protein, which synthesizes amylose in the endosperm. A mutant cultivar, named Gunji-3, was created by crossing the waxy type wheat (Shinmichal 1) with the wild type bread wheat (Keumkang). When comparing the Wx-B1 allele of the waxy protein gene in Gunji-3 with that of the waxy type wheat, there were 12 SNPs and one deletion difference. Additionally, when comparing amino acid sequences with Wx-B1 alleles, differences at two positions are found, indicating that the mutant carries new Wx-B1 allele which is named as Wx-B1o. In terms of the physicochemical properties of Gunji-3 starch, it had a lower amylose content than the parental wheat varieties and showed higher protein content and greater swelling power. These newly introduced waxy type wheat could provide important basis not only for understanding the starch characteristics of wheat but also for various breeding programs.

Starch being renewable and biodegradable is a viable resource for developing sustainable and environmentally friendly materials. This work explores the potential of starch/Ca2+ gels based on waxy corn starch (WCS), normal corn starch (NCS), and two high-amylose corn starches, G50 (55% amylose content) and G70 (68% amylose content) as flame-retardant adhesives. Being stored at 57% relative humidity for up to 30 days, the G50/Ca2+ and G70/Ca2+ gels are stable without water absorption or retrogradation. The starch gels with increasing amylose content displayed increased cohesion, as reflected by significantly higher tensile strength and fracture energy. All the four starch-based gels show good adhesive properties on corrugated paper. For wooden boards, because of the slow diffusion of the gels, the adhesive abilities are weak initially but improve with storage extension. After storage, the adhesive abilities of the starch-based gels are almost the same except for G70/Ca2+, which is peeled off from the wood surface by itself. Moreover, all the starch/Ca2+ gels exhibit excellent flame retardancy with limiting oxygen index (LOI) values all around 60. This work demonstrates a facile method to prepare starch-based flame-retardant adhesives simply by gelating starch with a CaCl2 solution, which can be used in paper or wood products.

The aim of this study was to establish the blood glucose response to different cooking methods of pasta. Participants consumed three identical meals in a random order that were freshly cooked (hot), cooled and reheated. Blood glucose concentrations were assessed before, and every 15 minutes after ingestion of each meal for 120 minutes. There was a significant interaction between temperature and time (F_{(8.46-372.34)} = 2.75, p = 0.005), with the reheated (90 minutes) condition returning to baseline faster than both cold (120 minutes) and hot conditions. Blood glucose AUC was significantly lower in the reheated (703 ± 56 mmol L^-1 min^-1) compared with the hot condition (735 ± 77 mmol L^-1 min^-1, t(92) = -3.36, pbonferroni = 0.003), with no significant difference with the cold condition (722 ± 62 mmol L^-1 min^-1). To our knowledge, the current study is the first to show that reheating pasta causes changes in post-prandial glucose response, with a quicker return to fasting levels in both the reheated and cooled conditions compared with the hot condition. The mechanisms behind the changes in post-prandial blood glucose seen in this study are most likely related to changes in starch structure and how these changes influence glycaemic response.

Due to the non-degradability of petroleum-based packaging materials, serious environmental pollution and the depletion of non-renewable resources have become pressing issues. In order to actively promote green production and address these concerns, there is an urgent need for new packaging materials to replace traditional plastic products. Starch-based packaging materials, composed of starch, fiber, and plasticizers, offer a degradable and environmentally friendly alternative. Starch alone cannot undergo thermoplastic processing due to its inherent structural characteristics. Therefore, researchers have explored modifications by incorporating plasticizers to create processable thermoplastic starch (TPS). However, there are challenges related to the high crystallinity and poor compatibility between TPS and fibers, resulting in decreased mechanical properties. To address these challenges, a novel approach combining plasticizer optimization and response surface method (RSM) optimization has been proposed to enhance the mechanical properties of starch-based packaging materials. This method leverages the advantages of composite plasticizers and process parameters. The findings demonstrate that the composite plasticizer effectively disrupt the hydrogen bonding and granule morphology of starch, leading to a significant reduction in crystallinity. Based on these findings, the optimal process parameters are determined using the RSM, resulting in a forming temperature of 198 °C, forming time of 5.4 minutes, and AC content of 0.84 grams. Compared with the non-optimized values, the tensile strength increases by 12.2% and the rebound rate increases by 8.1%.

The processability of conductive polymers such as polyaniline (PANI) still poses a challenge due to their properties. The use of stabilizers, compatible and able to interact with PANI, to obtain dispersible and stable colloids is described in this work. To this aim, potato starch has been used as a steric stabilizer for the preparation of polyaniline (emeraldine salt, ES)/starch biocomposites, by exploiting oxidative polymerization of aniline in aqueous solutions containing different ratios of aniline and starch (% w/w). The polyaniline/starch biocomposites were subjected to structural and spectroscopic analyses, thermal analysis, morphological analysis and electrochemical analysis. The samples were then tested for their dispersibility/solubility in various organic solvents. The results showed the formation of PANI/starch biocomposites with an overall smaller size than starch particles, with improved aqueous dispersion and solubility in organic solvents. Although X-ray diffraction and differential scanning calorimetry analyses indicated a loss of crystallinity in the biocomposites, the cyclic voltammetry tests showed that all PANI ES/starch biocomposites display improved redox exchange properties.

Various slow-release fertilizers (SRFs) have been developed and commercialized, particularly over the past two decades, with the primary aim of mitigating environmental issues associated with excessive fertilizer use. A range of methodologies, including chemical and physical reactions, incorporation into carriers with porous and layered structures, and coating techniques, have been explored and refined. On the other hand, dry and desertification are big challenges for agriculture in many countries in the world. Application of hydrogels or superabsorbent polymers as carrier materials to develop SRFs could add the function of moisture retention. This paper reviewed the development of application eco-friendly starch hydrogels as fertilizer carrier and water retention to develop SRFs, in particular starch-based superabsorbent polymers through grafting copolymerization with acrylamide. The reviewer includes both scientific issues like general microstructures of various starch hydrogels and releasing mechanisms, and technical development involving copolymerization technologies, multi-initialization and loading fertilizer into hydrogel etc. Starch, recognized as one of the most abundant carbohydrate polymers, is both biodegradable and renewable. It exhibits excellent chemical stability and high reactivity. The fabrication technique of starch hydrogels though grafting polymerization have been developed from batch chemical reaction in aqueous solution to high efficient and no-solvent reactive extrusion. The benefits of SRFs based on starch hydrogel encompass enhanced soil aeration, prevention of soil deterioration, minimization of water evaporation, environmental pollution control, reduction in plant mortality, and prolonged nutrient retention within the soil. Based on the literatures and our experience, we have not only discussed and summarized the achievements, but also pointed out the weakness of current technologies and proposed research directions in this review.

Turmeric starch (TS) has gained significant attention due to its potential health benefits, this study intended to investigate the dose-dependent effects of TS on colonic fermentation in rats. Four experimental diets containing different levels of TS (5%, 10%, and 20% w/w) were formulated and fed to male Fischer 344 rats for two weeks and compared with rats fed 0% TS diet (TS0). The results showed that increasing doses of TS resulted in reduced body weight gain and lower visceral tissue weights compared to the TS0 group. These effects may be attributed to the high content of resistant starch in TS, which contributed to lower caloric intake. Colonic fermentation analysis revealed that higher doses of TS resulted in increased short chain fatty acids (SCFA) production, specifically increased cecal acetate content and decreased cecal pH dose-dependently. Notably, beneficial bacteria from the family Oscillospiraceae, genus Lachnospiraceae NK4A136 group, and Ruminococcus spp. were enriched in the TS-fed groups, further supporting its beneficial effects on gut microbiota and SCFA production. Furthermore, these results suggest that TS may have beneficial effects on colonic fermentation in rats.

Fagao is one of China's traditional gluten free staple foods made by rice or corn flour. Corn Fagao prepared by co-fermentation with sourdough and yeast exhibits better quality and less staling compared to traditional yeast-fermented Fagao. The physicochemical properties of corn Fagao batter during the sourdough-yeast co-fermentation were investigated. The results showed that compared with yeast fermentation, the gas production and viscosity of the batter increased by co-fermentation. The co-fermented batter shows higher hydrolysis of starch and less amylose content. The integrity of starch granules in co-fermented batter was damaged more seriously, the crystallinity and short-range ordered structure were less than yeast fermented batter, even though the crystal structure type of starch did not change obviously. The peak viscosity, minimum viscosity, final viscosity, decay value and recovery value of corn batter are reduced by co-fermentation, which can improve the thermal stability of the batter and slow down the aging. Co-fermentation also results in a more pronounced reduction in protein subunit contents than yeast fermentation. The changes in the physicochemical properties of corn Fagao batter help explain the quality improvement of corn Fagao made from co-fermentation method, and may provide theoretical references for co-fermentation with sourdough and yeast to other gluten free foods.

The research improves the strength of plastic using avocado seed starch and PLA. The effect of blending avocado seed starch and PLA was optimized using the RSM approach by using two variables: water absorption and biodegradability. Mixing them using RSM gave the best result: 1.8 g of starch and 3 g of PLA. Degradable plastic has a (tensile strength of 10.1 MPa; elongation at break of 85.8%; young modulus of 190 MPa). Infrared spectroscopy showed that the plastic had a -OH bond at 3273.20 cm-1, 3502.73 cm-1, 3647.39 cm-1, a CH2 bond at 2953.52 cm-1, 2945.30 cm-1, 2902.87 cm-1, a C=C bond at 1631.78 cm-1, and a C-O bond at 1741.72 cm-1. The plastic decomposed in soil. It was organic and hydrophilic. Thermal tests, the plastic can withstand heat well, losing weight at 356.86°C to 413.64°C, forming crystals and plastic melts at 159.10°C—the same as PLA. Melt flow test, sample melts before measurement, therefore not measurable—process conditions that affect. Water absorption of 5.763% and biodegradation rate of 37.988% decomposed for 12 days. In morphology analysis, the starch and PLA fused to form a smooth surface. RSM found value was close to 1. RSM gave the best process parameters.

The nature of the blue color in the iodine-starch reaction (or, in most cases, iodine-iodide-starch reaction, i.e. as I2 as well as I- are typically present) has for decades elicited debate. The intensity of the color suggests a clear charge-transfer nature of the band at ~600 nm, and there is consensus regarding the fact that the hydrophobic interior of the amylose helix is the location where iodine binds. Three types of possible sources of charge transfer have been proposed: (1) chains of neutral I2 molecules, (2) chains of poly-iodine anions (complicated by the complex speciation of the I2 - I- mixture), or (3) mixtures of I2 molecules and iodide or polyiodide anions. An extended literature review of the topic is provided here. According to the most recent data, the best candidate for the “blue complex” is a I2-I5-I2 unit – expected to occur in repetitive manner inside the amylose helix.

The addition of prebiotics is one of the most important ways to improve the techno-functional properties of bread. In this study, the effects of resistant starch, polydextrose, and inulin on the wheat flour, dough, and bread properties were investigated. In farinography results, resistant starch significantly increased the development time (2:18) with a boosting effect, but polydextrose (1:48) and inulin (1:36) weakened the dough (P &lt;0.05). Inulin, polydextrose, and resistant starch had the most effect on reducing water absorption (40, 43.2, and 48.9) respectively (P &lt;0.05). According to extensography data, inulin had the best result in baking compared to other polysaccharides. In terms of baked breads, samples containing resistant starch had high moisture that could be due to starch gelatinization and moisture-retaining, which delays the staling process of bread. Inulin, polydextrose, and resistant starch prebiotic ingredients affected dough rheological properties and bread quality, and organoleptic characteristics, however, resistant starch was the best.

Abstract: Reserve starch, the main component of durum wheat semolina, is constituted by two glucan homopolymers (amylose and amylopectin) that differ in their chemical structure. Amylose is mainly a linear structure formed of α-1,4 linked glucose units, with a lower polymerization degree, whereas amylopectin is a highly branched structure of α-1,4 chains linked by α-1,6 bonds. Variation of the amylose/amylopectin ratio has a profound effect on the starch properties which may impact wheat technological and nutritional characteristics and their possible use in the food and non-food sector. Therefore, some breeding programs were focused on the production of high (HA) and low amylose (LA) genotypes using transgenic and conventional strategies. A great interest was aroused by new genotypes enriched in amylose for their beneficial effects for human health in the prevention of non-communicable diseases. Differently the low-amylose genotypes find applications in different industrial sectors (i.e. frozen and baby foods; starch-based sweeteners and industrial alcohol) for their unique properties. In this work a set of genotypes, with a range of amylose from 14.9 to 57.8%, derived from the durum wheat cv. Svevo was characterized at biochemical and rheological level and used for the production of pasta. A negative correlation was observed between amylose content and semolina swelling power, starch peak viscosity and pasta stickiness. A worsening of the firmness was observed in the low amylose pasta compared to the control (cv. Svevo), whereas no difference was highlighted in the high amylose samples. The resistant starch was higher in the HA pasta compared to the control and LA pasta. Noteworthy, the extent of starch digestion was reduced in the high amylose pasta while the low amylose genotypes offered a higher starch digestion, suggesting other possible applications.

Seaweeds, notably cochayuyo (Durvillaea incurvata), are recognized for their rich macro- and micronutrient content, along with their inhibitory effects on the α-glucosidase enzyme. The present study aims to evaluate the effectiveness of this inhibition in actual starchy food products under in vitro gastrointestinal conditions. The study utilized freeze-dried cochayuyo, extracted using hot pressurized liquid extraction with 50% ethanol at 120 C and 1500 psi. The inhibition mechanism of α-glucosidase was determined, and the polyphenol composition of the extract was analyzed using Ultra-High-Performance Liquid Chromatography. The study further evaluated the extract’s impact on starch digestibility, total phenolic content, and antioxidant capacity in noodles as representative starchy food under gastrointestinal conditions. The results indicate that the α-glucosidase inhibition mechanism is mixed. Phenolic compounds, primarily tetraphloroethol, could contribute to this anti-enzymatic activity. The extract was observed to decrease starch digestibility, indicated by a lower rate constant (0.0158 vs. 0.0261 min-1) and digested starch at an infinite time (77.4 vs. 80.5 g/100 g). A significant increase (~1200 vs. ~390 µmol TROLOX/100 g) in antioxidant activity was also noted during digestion when the extract was used. Thus, the study suggests that the cochayuyo extract can reduce starch digestion and enhance antioxidant capacity under gastrointestinal conditions.

The aquaculture sector has become increasingly reliant on soybean meal (SBM) and soy-derived proteins, because of their large abundance, low price and favorable amino acid profile. However, for Atlantic salmon, a major aquaculture species, the inclusion of soybean meal, and soy protein concentrate (SPC) in certain combinations has adverse impacts on its gut health and welfare. This study evaluated two enhanced SBM targeting improved gut health for inclusion in freshwater phase salmon diets, enzyme pre-treatment (ETS) and addition of fructose oligosaccharide (USP), respectively in comparison to untreated soybean meal (US) and fish meal (FM). The impact on growth performance, gut microbiome, and behaviors relevant to welfare was investigated. Both enhancements of SBM were found to support comparable growth performance to FM. Both targeted treatments altered the gut microbiome community. Fish fed SBM showed a tendency for more reactive behavior compared to those fed the FM-based control. All fish had a similarly low response to elicited stress, although ETS fed fish responded more actively than those fed the US diet. SBM fed fish also had lower repeatability of behavior, which may have implications for welfare. Both enhancements provide a promising basis to optimize the application of this widely used protein source.

Biomimetic foods are expected to have potential health benefits for the management and prevention of chronic diseases, such as diabetes and cardiovascular disease. In the current research, two commercially available and affordable plant proteins (soy protein isolate-SPI and pea protein isolate-PPI) at two levels (5%, 10%) were added to the Yangyu jiaotuan with an objective to develop a product with reduced glycemic properties and high protein content while maintaining its original taste and texture. The results showed that several important textural properties such as hardness and chewiness did not change significantly during the refrigerated storage. The storage modulus G′ increased with refrigerated storage time for different samples, there were significant differences among the five samples (with and without protein addition) with respect to frequency dependence during rheological measurements. The in vitro starch digestion experiments showed that the starch hydrolysis of Yangyu jiaotuan decreased considerably with the increase in PPI content and during refrigerated storage due to starch retrogradation. Protein has protected the microstructure and there was less damage when compared to samples without protein. The bimodal peaks of the particle size distribution curves showed that the newly developed Yangyu jiaotuan contains two different sizes of particles, the smaller particles (~30 μm) corresponded to PPI and starch granules, while the larger particles corresponded to the fragments of gel network of the starch matrix. Based on the above results, Yangyu jiaotuan mixed with pea protein is a convenient potato staple food product, which complies with the biomimetic potato food very well.

Waxy rice is one of the most popular traditional crops served as a staple food in China. In this study, the effect of different factors including α-amylase activity, protein, and amylopectin structure on the pasting properties of four waxy rice varieties were investigated. Rice flours treated with AgNO3 solution, DL-dithiothreitol (DTT) or protease, suggested that both α-amylase activity and protein significantly decrease the pasting viscosity of waxy rice flours. Chain length distribution of amylopectin as measured by high performance ion exchange chromatography (HPAEC-PAD) showed that starch with higher ratio of short chain leading to a higher pasting viscosity. X-Ray diffractograms showed that the crystal type of all the four varieties of rice starches were characteristic A-type. Relative crystallinity of each rice starch was further calculated, and a higher crystallization resulted in a higher viscosity. Our study would provide a fundamental knowledge of the relationship between different factors and waxy starch pasting properties, as well as be a reference for controlling the quality of waxy rice starch-based food.

Cadmium (II) contamination in the environment is an emerging problem due to its acute toxicity and mobility, so it is very urgent to remove this species from industrial wastewater before it is discharged into the environment. Thus, a starch-based activated carbon (AC) with a specific surface area of 1600 m2g-1 is used as an adsorbent for the capturing of toxic Cadmium (II) ions from synthetic solution. The sorbent is characterized by BET, SEM, TEM, XRD, FT-IR, TGA, and zeta potential. The maximum uptake (284 mg g-1) of Cadmium (II) ion is obtained at pH 6. The thermodynamics parameters like ∆G, ∆H, ΔS are found to be -17.42 kJmol-1, 6.49 kJ mol-1, and 55.66 Jmol-1K-1 respectively, revealing that the adsorption mechanism is endothermic, spontaneous, and feasible. The experimental data follows the D-R and Langmuir models well. The mass transfer is controlled by pseudo 2nd order kinetics. Furthermore, the density functional theory simulations demonstrate that the activated carbon strongly interacted with the Cd (II) ion through its various active sites. The adsorption energy noted for all interactive sites is highly negative (-0.45 eV to -10.03 eV), which shows that the adsorption process is spontaneous and stable which is in agreement with the experimental thermodynamics analysis.

Pozol is a Mexican beverage prepared from fermented nixtamalized maize dough. To contribute to understanding its complex microbial ecology, the effect of inoculating on MRS-starch pure and mixed cultures of amylolytic Sii-25124 and non-amylolytic W. confusa 17, isolated from pozol, were studied on their interactions and fermentation parameters. These were compared with L. plantarum A6, an amylolytic strain isolated from cassava. Microbial growth, kinetic parameters, amylolytic activity, lactic acid production, and hydrolysis products from starch fermentation were measured. The population dynamics were followed by qPCR. L. plantarum A6 showed higher enzymatic activity, lactic acid, biomass production, and kinetic parameters than pozol LAB in pure cultures. Mixed culture of each pozol LAB with L. plantarum A6 showed a significant decrease in amylolytic activity, lactic acid yield, specific growth rate, and specific rate of amylase production. The interaction between Sii-25124 and W. confusa 17 increased the global maximum specific growth rate (µ), the lactic acid yield from starch (Ylac/s), lactic acid yield from biomass (Ylac/x), and specific rate of lactic acid production (qlac) by 15, 30, 30, and 40%, respectively compared with the pure culture of Sii-25124. Interactions between the two strains are essential for this fermentation.

Postharvest physiological deterioration (PPD) of fresh cassava roots limits its shelf-life to about 48 hours. There is a demand for simple, cheap, and logistically feasible solutions for extending the shelf life of fresh cassava roots at industrial processes. In this study, three different types of bag materials were tested (woven polypropylene, tarpaulin, and jute as a potential storage solution for cassava roots with different levels of mechanical damages. Microclimate (temperature, humidity, CO2) was monitored to understand the storage conditions for up to 12 days. The results showed that fresh cassava roots could be stored for 8 days, with minimal PPD and starch loss (2.4 %). How-ever, roots with significant mechanical damage (cuts, breakages) had a considerably shorter shelf life in the storage bag, compare to whole roots and roots with retained peduncle (stalk where roots are connected to the main plant). Wetting the roots and type of bag material were not significant factors in determining the shelf life and starch loss. Carbon dioxide concentration in the stores significantly correlated with the starch loss in fresh cassava roots and is proposed as a possible method for continuously and remotely monitoring starch loss in large scale commercial operations and reduce postharvest losses.

Dynamic thermogravimetric (TG) analysis under nitrogen environment was used to understand the thermal decomposition process of 3D printing filaments made of wood-filled polylactic acid (PLA)/starch blend. The characteristic temperatures and apparent activation energy (AAE) of the filaments with various starch contents were calculated with well-known kinetic models by Friedman, Flynn-Wall-Ozawa, Coats-Redfern and Kissinger. With the increased starch content in the filament, the onset thermal decomposition temperatures of the filaments decreased gradually from 272.4 to 155.1°C. The thermal degradation degree became smaller, and the transitional temperature interval became larger with increased starch proportion. The AAE values of the three types of filaments with different starch ratios varied between 97 kJ/mol and 114 kJ/mol, depending on material composition and method of calculation. The improved understanding of thermal decomposition behavior of PLA-starch-wood composites can help develop more biodegradable PLA/starch-based filaments for 3D printing.

Starch is considered a major nutritional factor of maize (Zea mays L.) kernels, and can be influenced by the type of endosperm. The effects of endosperm type (vitreous and non-vitreous) and type of soil (clay and sand) on the starch content of kernels of maize, and on the in vitro degradation of starch were investigated in the rumen fluid after harvesting at 6 different maturity stages during 2008 and five different maturity stages in 2009. Starch degradation, in rumen fluid, was determined after 6 h, 12 h and 20 h of incubation, using the technique of gas production. A positive linear relationship was observed during gas production (ml gas/g organic matter) and starch degradation (g kg^-1 starch) at all incubation times, with starch contents of maize kernels to a certain limit of starch accumulation (i.e. at starch contents 451-519 g/kg OM) and negative relationship afterwards. This suggests significant effects of maturity on ruminal starch degradation of maize kernels. At each harvest date, ruminal starch degradation of maize kernels was affected by crop genotype as well as soil type. The in vitro ruminal degradation potential of starch in maize kernels was influenced by the nature of the endosperm, with a higher degradation of non-vitreous kernels than of vitreous kernels. The rumen starch degradation was also influenced by type of soil, with better degradation on clay than sandy soil. For all the incubation times and maturity stages the effects of genotype, soil type and maturity stage were consistent in rumen fluid.

In this article, bio-composites derived from starch-glycerol biodegradable matrix reinforced with jute fibers have been fabricated using the wet hand lay-up and compression moulding techniques. Samples having different weight percentages of jute fiber in the starch matrix have been analysed. The fibers surface was chemically treated by alkaline sodium hydroxide for improving the interphase bonding between fiber and matrix. Tensile test for the composites were done and the sample with highest tensile strength was selected for further tests that included water absorption, scanning electron microscopy and thermal analysis. It has been concluded that the ultimate tensile strength was found to be maximum for the composition of 15% fiber by weight composite as 7.547 MPa without epoxy coating and 10.43 MPa with epoxy coating. The major disadvantage of bio-composite is its high water absorption property, which in this study has been inhibited by the epoxy resin layer. Herein, the results of various tests done disclose a noteworthy improvement in the overall properties of bio-composite, in comparison to the neat biodegradable starch matrix.

The issue of managing waste bread is a global concern, with significant environmental and the economic implications. The utilisation of waste bread for bioethanol production, employing energy-saving tech-nology, could prevent these consequences and reduce the consumption of traditionally used fossil fuels. The objective of this study was to evaluate the influence of the type of waste bread (wheat and wheat-rye sourdough) and the mash preparation method on the results of alcoholic fermentation and the concen-tration of selected congeners in the distillates. The highest fermentation efficiency (96% of theoretical) was achieved for both types of bread through the utilisation of the pressureless starch liberation method combined with simultaneous saccharification and fermentation. The separate saccharification of starch did not result in an enhanced efficiency of the process. Despite a slight reduction in efficiency of the process, the hydrolysis of native starch was regarded as a promising solution for the processing of waste bread to ethanol. All of the obtained distillates exhibited a low concentration of methanol. The elevated acidity and aldehydes levels, in relation to the national recommendations, indicate the potential necessity for the separation of the volatile congeners depending on the intended use of the obtained spirit distillates.

Aquaculture contributes to the sustainable development of food security, marine resource conservation, and economy. Shifting aquaculture feed from fish meal and oil to terrestrial plant-derivatives may result in cost savings. However, many carnivorous fish cannot be sustained on plant-derived materials, necessitating the need for the identification of important factors for farmed fish growth and to investigate whether components derived from terrestrial plants can be used in feed. Herein, we focused on the carnivorous fish leopard coral grouper (P. leopardus) to identify the essential growth factors and clarify their intake timing from feeds. Furthermore, we evaluated the functionality of starch, which are easily produced by terrestrial plants. Results reveal that carbohydrates, which are not considered essential for carnivorous fish, can be introduced as a major part of artificial diet. The development of artificial feed using starch offers the possibility of increasing the growth of carnivorous fish in aquaculture.

This research delves into a detailed exploration of the thermal decomposition behavior of bio-based polymers, specifically Thermoplastic Starch (TPS) and Poly(lactic acid) (PLA). The study focuses on the impact of three different heating rates under a nitrogen atmosphere, providing comprehensive insights into the thermal stability of these eco-friendly polymers. In particular, the TPS kinetic model is examined, encompassing the decomposition of three distinct fractions. In contrast, PLA exhibits a simplified kinetic behavior requiring only a fraction described by a zero-order model. The kinetic study involves a systematic investigation into the individual contributions of key components within TPS, including starch, glycerin, and polyvinyl alcohol (PVA). This nuanced analysis contributes to a comprehensive understanding of the thermal degradation process of TPS and PLA, enabling the optimization of processing conditions and the prediction of material behavior across varying thermal environments. Furthermore, the incorporation of different starch sources and calcium carbonate additives in TPS enhances our understanding of the polymer's thermal stability, offering insights into potential applications in diverse industries.

The gel prepared by Nemipterus virgatus (N. virgatus) surimi alone still has some defects in texture and taste. Complexing with polysaccharides is an efficient strategy to enhance the gel properties. The main objective of the study was to analyze the relationship between the gel quality and molecular interaction of N. virgatus surimi gel after complexing with tapioca starch. The results make clear that the gel strength, hardness, and chewiness of surimi gel were increased by molecular interaction with tapioca starch. At the appropriate addition amount (12%, w/w), the surimi gel had excellent gel strength (17.48 N), water holding capacity (WHC) (89.01%), lower cooking loss rate (CLR) (0.95%), and shorted T2 relaxation time. Microstructure analysis indicated that the addition of tapioca starch made the surimi gel evenly distributed in the gel network structure, resulting in a significant reduction in cavities diameter, and the minimum diameter could be reduced to 20.33 μm. In addition, tapioca starch enhanced the hydrogen bond and hydrophobic interaction in the gel system and promoted the transformation of α-helix to β-sheet (P&lt;0.05). Correlation analysis showed that the increased physicochemical properties of surimi gel was closely related to the enhanced non-covalent interactions. In conclusion, the non-covalent complexation with tapioca starch is an efficient strategy to enhance the gel quality of surimi gel.

Corn starch-based nanocomposite films usually have low moisture barrier properties. The addition of virgin coconut oil (VCO) as a hydrophobic component can improve the nanocomposite film's characteristics, especially the film's permeability and elongation properties. This study aimed to determine the role of VCO with various concentrations (0,3,5 wt%) on the physical, mechanical, and water vapor transmission characteristics of corn starch/NCC-based nanocomposite films. The results showed that the concentration of 3 wt% VCO was most effective in reducing the WVTR value of nanocomposite films with a value of 4.721 g/m2.h. While the value of tensile strength was 4.243 MPa, elongation 68.58%, modulus of elasticity 0.062 MPa, thickness 0.219 mm, lightness 98.77, and water solubility 40.51%. However, the addition of 5 wt% VCO was more effective in increasing the elongation properties of the film. The addition of VCO gave the appearance of a porous film surface and a finer structure was formed. The FTIR test on corn starch nanocomposite films with the addition of VCO did not show any new absorption peaks. The results of this study may provide opportunities for the development of nanocomposite films as biodegradable packaging in the future.

A novel starch stabilized Mg/Al LDHs material (S-LDH) was prepared in a facile approach and its fluoride ion removal performance was developed. Characterization of S-LDH was employed by using XRD, FTIR and particle size distribution. The adsorption property was studied through the assessment of adsorption isotherms, kinetic models, thermal dynamics and pH influence. The result shows that a low loading of starch of 10 mg onto LDH could obviously improve fluoride removal rate. The S-LDH had 3 times higher adsorption capacity to fluoride than that of Mg/Al LDH to fluoride. The particle size was smaller and the particle size distribution was narrower for S-LDH than that for Mg/Al LDH. Langmuir adsorption isotherm model and pseudo-second-order kinetic model fitted well with the experimental data. In thermodynamic parameters, the enthalpy (△H0) value was 35.63 kJ mol-1 and the entropy (△S0) value was 0.0806 kJ mol-1K-1. The values of △G0 were negative, implying the adsorption process is spontaneous. S-LDH reveals stable adsorption property in a wide pH range from 3 to 9. The mechanism for fluoride adsorption on S-LDH included surface adsorption and interaction ion exchange.

The paper presents research results on biocomposites made from a combination of extruded apple pomace (EAP) and potato starch (SP). The products were manufactured by hot pressing using a hydraulic press with a mold for producing samples. The prepared biocomposites were subjected to strength tests, surface wettability was determined and color analysis was carried out. Thermogravimetric analysis (TGA), Fourier transform infrared spectroscopy (FTIR) and cross section observed in Scanning electron microscope (SEM) were also performed. The obtained test results showed that the combination of apple pomace (EAP) and starch (SP) enabled the production of compact bicomposite materials. At the same time, it was found that each increase in the share of starch in the mixture for producing biocomposites increased the strength parameters of the obtained materials. With the highest share of starch in the mixture, 40%, and a raw material moisture content of 14%, the material had the best strength parameters and was even characterized by hydrophobic properties. It was also found that materials with a high content of starch are characterized by increased temperature resistance. Analysis of SEM microscopic photos showed well-glued particles of apple pomace, pectin, gelatinized starch and a smooth external structure of the samples. Research and analyzes have shown that apple pomace reinforced only with the addition of starch can be a promising raw material for the production of simple, biodegradable biocomposite materials.

ABSTRACT: Waterlogging is a common abiotic stress in global maize production. Maize flowering stage (from tasseling to silking) is more fragile to environmental stresses among different growth stages. The effects of waterlogging at flowering stage on the grain yield and starch quality of waxy maize were studied using Suyunuo5 (SYN5) and Yunuo7 (YN7). The grain yield and starch concentration of both hybrids were reduced by waterlogging. The size of starch granules and proportion of small-molecule amylopectin increased in SYN5 and decreased in YN7 when plants suffered waterlogging at flowering, in contrast to the change trend of relative crystallinity. The pasting viscosities and gelatinization temperatures were reduced, whereas the gelatinization enthalpy was unaffected by waterlogging in both hybrids. Our study indicated that waterlogging at flowering reduced the grain yield, restricted starch deposition, and deteriorated the pasting property of waxy maize. Between the two hybrids, YN7 and high pasting viscosities and low retrogradation percentage than SYN5, indicated its advantages on produce starch for viscous and less retrograde food. Results provide information for utilization of waxy maize grain in food production.

The aim of this study was to develop sago starch-based bionanocomposite films containing TiO2 nanoparticles and Penganum harmala extract (PE) to increase the shelf life of chicken fillets. First, sago starch films containing different levels of TiO2 nanoparticles (1, 3 and 5%) and PE (5, 10 and 15%) were prepared, and the thickness, barrier properties, and antibacterial activity of the films. Then, the produced films were used for the chicken fillets packaging and the physicochemical and antimicrobial properties of samples were examined during 12-day storage at 4°C. The results showed that the addition of the combination of nanoparticles and extract and increasing their levels in the films increased the antibacterial activity against gram-positive and gram-negative bacteria. The results also demonstrated that during the storage period, the pH, total volatile basic nitrogen (TVB-N), and the number of aerobic mesophilic bacteria, psychrophilic bacteria, coliforms, molds and yeasts in fillets increased (p&lt;0.05). However, coating the fillets with bionanocomposites can significantly reduce the rate of change in chemical properties and microbial growth of the samples. This sample increased the shelf life of the fillets by at least 8 days compared to the control sample.

Purpose: To reassess the results of former meta-analyses focusing on the relationship between novel HES preparations (130/0.4 and 130/0.42) and acute kidney injury. Previous meta-analyses are based on studies referring to partially or fully unpublished data or data from abstracts only. Methods: The studies included in the former meta-analyses were scrutinized by the authors independently. We completed a critical analysis of the literature, including the strengths, weaknesses and modifiers of the studies when assessing products, formulations and outcomes. Results: Both the published large studies and meta-analyses show significant bias in the context of the deleterious effect of 6% 130/0.4-0.42 HES. Without (1) detailed hemodynamic data, (2) the exclusion of other nephrotoxic events and (3) a properly performed evaluation of the dose-effect relationship; the AKI-inducing property of 6% HES 130/0.4 or 0.42 could not be accounted as evidence. The administration of HES is safe and effective if the recommended dose is respected. Conclusion: Our review suggests that there is questionable evidence for the deteriorating renal effect of these products. Further well-designed, randomized and controlled trials are needed. Further conclusions formulated for resource-rich environments should not be extended to more resource-scarce environments without proper qualifiers provided.

Proso millet starch (PMS) as an unconventional and underutilized cereal starch is becoming increasingly popular worldwide due to its health-promoting properties. This review summarizes research progress in the isolation, characterization, modification, and applications of PMS. PMS can be isolated from proso millet grains by acidic, alkaline, or enzymatic extraction. PMS exhibits typical A-type polymorphic diffraction patterns and shows polygonal and spherical granular structures with a granule size of 0.3-17 µm. PMS is modified by chemical, physical, and biological methods. The native and modified PMS are analyzed for swelling power, solubility, pasting properties, thermal properties, retrogradation, freeze-thaw stability, and in vitro digestibility. The improved physicochemical, structural, and functional properties and digestibility of modified PMS are discussed in terms of their suitability for specific applications. The potential applications of native and modified PMS in food and non-food products are presented. Future prospects for research and commercial use of PMS in the food industry are also highlighted.

Starch is a biopolymer with wide potential for the generation of new biodegradable packages due to its high availability and low price. However, due to its weak functional properties, it is necessary to limit the interaction of some hydroxyl, and to evaluate blends with other polymers to improve their performance. Glycerol plasticized acetylated corn starch films were developed by the casting method, and the impact of incorporating chitosan (TPS:CH) at various proportions (75:25, 50:50, and 25:75 v/v) was studied. The effect of the chitosan ratios on the films' physical, mechanical, water vapor barrier, and thermal properties was evaluated. Chitosan protonated amino groups promote the formation of intermolecular bonds, improving the tensile strength, the thermal stability, the water adsorption capacity, and the gas barrier of starch films. Where the film composed of TPS25-CH75 was the one that presented the best barrier to water vapor. These composite films are a good option for development of biodegradable packaging.

Rice-Tartary buckwheat is a special type of Tartary buckwheat with easy hulling thin shell. The local rice-Tartary buckwheat ‘cv. Xiaomiqiao’ (XMQ) was used to explore the characteristics of photosynthesis, starch synthesis, yield and quality, as compared to Tartary buckwheat ‘cv. Jinqiao 2’(JQ2). XMQ showed significantly lower values of net photosynthetic rate, ADPGase activity and starch synthase activity at one or more periods during grain filling, as compared to that of JQ2. The effective branch number and grain number per plant of XMQ were similar to that of JQ2 regardless of different years, but the 1000-grain weight was significantly lighter that resulted in the significantly lower yield. XMQ accumulated similar contents of starch (amylose, amylopectin) and protein (glutelin, albumin, prolamin, globulin) to that of JQ2, but exhibited significantly lower flavonoid content. The values of peak viscosity and hot paste viscosity in XMQ were similar to that of JQ2, but the values of cool paste viscosity, breakdown and setback were significantly lower. In conclusion, XMQ showed low yield due to the insufficient of photosynthesis and starch synthesis. XMQ exhibited high nutritional quality as well as normal Tartary buckwheat and stored 18.88mg g-1 of flavonoid, that can be consumed as daily diet. The present results will provide a basis for food processing and breeding of rice-Tartary buckwheat.

Facilitative glucose transporters (GLUT) are transmembrane transporter of proteins involved in glucose transport across the plasma membrane. To date, there is no information about glucose transporter 2 (GLUT2) in blunt snout bream (Megalobram aamblycephala). In this study, GLUT2 were cloned and characterized from blunt snout bream, and its-expression in response to diets with different carbohydrate levels (17.1%; 21.8%; 26.4%; 32.0%; 36.3% and 41.9% of dry matter). In this study, the full-length cDNA of GLUT2 was 2577 bp, including a 5’-untranslated region (UTR) of 73 bp, a 3’-UTR of 992 bp, and an open reading frame of 1512 bp, encoding a polypeptide of 503 amino acids with predicted molecular weight of 55.046 kDa and theoretical isoelectric point of 7.52. GLUT2 has twelve across the membrane area locating at 7-29; 71-93; 106-123; 133-155; 168-190; 195-217; 282-301; 316-338; 345-367; 377-399; 412-434; 438-460 aimo acids respectively. Conservative structure domains located at 12-477 aimo acids belonging to sugar porter family major facilitator superfamily (MFS) transporter. The blunt snout bream GLUT2 showed high identity to their orthologs in other fish species and mammals. Quantitative real-time (qRT)-PCR assays revealed that GLUT2 expression was high in the liver, intestine and kidney; highest in the liver. Compared with the control group (17.1%), high dietary carbohydrate levels (32.0%; 36.3% and 41.9%) resulted in high plasma glucose at 3h after feeding, but high plasma glucose were back to basal at 24h after feeding. Furthermore, high dietary carbohydrate levels significantly improved the glycolysis and inhibitied gluconeogenesis by augmentation of GK and PK expression, inhibition of PEPCK and G6P mRNA levels (P<0.05). However, GLUT2; GK; PK; PEPCK and G6P mRNA levels were back to basal.

To investigate the effect of nitrogen (N) application on carbon metabolism and yield of flag leaves and grains of spring wheat under drip irrigation in Xinjiang, a split - plot design was adopted from 2020 to 2021, with strong gluten wheat Xinchun 37 (XC37) and medium gluten wheat Xinchun 6 (XC 6) as the main plot factor and different nitrogen application rates as subplot factor. Four nitrogen application rates of 0, 210, 255 and 300 kg·hm-2 (CK2, B1, A1 and CK1, respectively) were set to analyze and compare the nitrogen response of key enzyme activity, soluble sugar, sucrose and starch content in flag leaves and grains to control yield formation. The results showed that with the increase of nitrogen application, Sucrose phosphate synthetase (SPS) and sucrose synthetase (SS) in flag leaves, SS in seeds, activities of adenosine diphosphate pyrophosphorylase (ADPG - PPase), soluble starch synthase (SSS), bound starch synthase (GBSS) and starch branching enzyme (SBE) in seeds, contents of soluble sugar and sucrose and yield in flag leaves increased first increasing and then decreasing. The A1 treatment (255 kg·hm-2) showed significant differences compared to other treatments, with increases of 7.95–158.33%, 8.69–155.12%, 7.65–53.25%, 5.41–62.83%, 2.85–85.52%, 3.08–57.30%, 8.87–79.16%, 9.33–196.55%, 9.43–112.78%, and higher levels of amylose, amylopectin, and total starch content than other treatments by 1.86–30.38%, 10.58–83.69%, and 7.96–63.09%, respectively. Correlation and stepwise regression analysis indicate highly significant positive correlation between yield and solube sugar and sucrose of flag leaves and grains, as well as their key emzymes and starch. Among them, soluble sugar in grains, amylopectin, and sucrose in grains have the greatest impact on the yield of XC37, determining 84.5% of its yield. SSS, soluble sugars in grains, amylopectin, and SBE have the greatest impact on the yield of XC 6, determining 80.4% of its yield. The starch shows a highly significant positive correlation with ADPG - PPase, SSS, GBSS, and SBE. There is a significant interaction effect between nitrogen application rate and variety, with better performance observed in Xinchun 37 compared to Xinchun 6. Under drip irrigation conditions in arid areas, nitrogen application of 255 kg·hm-2 can effectively regulate the metabolism of sucrose to starch in flag leaves and grains of spring wheat, which is conducive to the accumulation of starch in grains and the formation of yield.

The optimization of production of lignin-nanofiber-filled thermoplastic starch composite film for potential application in food packaging was carried using Response Surface Methodology (RSM), through the adoption of the Box-Wilson Central Composite Design (CCD) with 1 center point. The effects of filler loading on moisture absorption (MAB), tensile strength [TS], percent elongation [PE] and Young’s modulus [YM]) of the films were investigated in order to construct the desirability indices of the composite. The quality of the fitting model was expressed by the coefficient of determination, R2 and the adjusted R2. Results showed that the nanocomposite films were best fitted by a quadratic regression model with a high coefficient of determination (?2) value. The selected film has desirability of 76.80%, close to the objective function, and contained 4.81% lignin and 5.00% nanofibre. The MAB, TS, YM and PE of the selected film were 17.80 %, 21.51 MPa, 25.76 MPa and 48.81%, respectively. The addition of lignin and nanofiber to starch composite reduced the moisture absorption tendency but increased the mechanical properties of the films due to the good filler/matrix interfacial adhesion. Conclusively, results suggested that these films would be suitable for packaging application.

The extrusion of food for human and animal consumption is a unit operation that includes mixing, shearing and force to the materials related to the rheological properties of the materials in the extruder. The present work aims to study the rheological behavior of an extruded fish diet incorporating hydrolyzed protein flour processed by extrusion. The measurement was carried out online with a slit die rheometer, defining the rheological models and parameters that fit the process. During the extrusion process, the raw materials used were hydrolyzed protein meal, fish meal and cassava starch. For the results, the evaluated treatments were adjusted to the Power Law, where an increase in the shear rate decreases the viscosity of the material, corresponding to a pseudoplastic behavior. The incorporation of hydrolyzed protein flour presented a significant effect on the value of n and Klp, increasing the viscosity with the increase in the percentage of inclusion of HPH. The models obtained for the prediction of the viscosity are adjusted to the changes in shear rate, temperature and humidity of the system.

The Aminofunctional starch/Carboxylated nitrile butadiene rubber (ANS/XNBR) latex films were prepared with control (0), 5, 10, 15, and 20 phr of ANS loadings. The films were subjected to soil burial test for 8 weeks, which recovered every two weeks to quantify the degraded properties. The control (week 0) and biodegraded films were subjected to physical tests (crosslink density, tensile, and tear strength tests) and biodegradation quantification (mass loss retention, and water vapor transmission rates). The optimum physical properties of ANS/XNBR films were subjected to further assessment of its degradation properties which include morphological (optical and scanning electron microscopes (SEM)), Fourier transform infrared (FTIR) analysis, and thermogravimetric analysis (TGA) respectively. Overall, mechanical properties of biodegraded ANS/XNBR latex films decreased as biodegradation period elapses. The biodegradation assessment via water vapor transmission rates and mass loss analyses indicates the high degree of biodegradation rates were observed with higher loading of ANS/XNBR latex films. Morphological analyses via optical microscope shows the transformation of the films surface opacity during biodegradation test. SEM images depicted the microorganism remains on the film surfaces. For FTIR analysis, the most significant changes in the spectras of the films appeared in the region of 790–3000 cm⁻¹. TGA thermograph shows the thermal retention of the materials decreased, as the biodegradation period elapses for optimum ANS/XNBR latex films. From the results obtained, ANS/XNBR latex films shows optimum degradation and mechanical properties at 10 phr filler loading.

Starch is widely applied in various industrial sectors, including the food industry. Starch is used as a thickener, stabilizer, or emulsifier. However, arrowroot starch generally has weaknesses, such as unstable under heating and acidic conditions, which are generally applied to processing in the food industry. Modifications were applied to improve the characteristics of native arrowroot starch. In this study, arrowroot starch was modified by heat-moisture treatment (HMT), octenylsuccinylation (OSA), and dual modification between OSA and HMT in a different sequence, namely HMT followed by OSA, and OSA followed by HMT. This study aims to determine the effect of different modification methods on the physicochemical and functional properties of native arrowroot starch. The result shows that both single HMT and dual modification caused damage to native starch granules, such as the formation of cracks and roughness. Especially for single OSA treatment, there is no significant change in granule morphology after modification. All modification treatments did not change the crystalline type of starch but reduced the RC of native starch. Both single HMT and dual modifications (HMT-OSA, OSA-HMT) increased pasting temperature and setback, conversely decreasing the peak and breakdown viscosity of native starch. Whereas, single OSA has the opposite trend compared with the other modifications. HMT played a greater role in increasing the thermal stability and retrogradation ability of arrowroot starch. Both single modifications (HMT and OSA) increase the hardness and gumminess of native starch, conversely for dual modifications. HMT has a greater effect on color characteristics, where decreased the lightness and whiteness index of native arrowroot starch. Single OSA modification increased swelling volume higher than dual modification. Both single HMT and dual modifications increase water absorption capacity and decrease the oil absorption capacity of native arrowroot starch.

The flow behavior of the administrated fluid matrices demands careful assessments for stability as consumed by individuals with dysphagia. In the present study, we incorporate tapioca starch (TS), hydroxypropyl distarch phosphate (HDP), and xanthan gum (XG) as thickeners into different nectars (300±20 mPa.s) undergoing thermal processing and evaluated their stability. The thickened nectars presented better water holding and oil binding capacities at 25 ℃ than 4 ℃, and the nectars with TS provided the best results for both capacities as well as the highest solubility index and swelling power (p<0.05). All prepared nectars appeared to be shear-thinning fluids with yield stress closely fitting the power law and Casson models. XG-contained nectars presented a higher yield stress and consistency index. Matrices thickened by HDP exhibited a higher viscoelastic property compared to those thickened by TS during thermal processing. TS nectars presented viscous behavior, whereas HDP and XG nectars presented elastic behavior at 80 ℃ processing. The 3-min thermal processing HDP-nectars remained stable and met dysphagia-friendly requirements under 4 ℃ storage for 28 days regardless of the types of fluid bases (distilled water, sport drink, or orange juice). The employed thickeners present adequate physicochemical properties to be potentially utilized for producing dysphagia-friendly formulations.

The production of recombinant enzymes, mainly used for obtaining pure and functional target molecules, holds significant importance in modern biotechnology. This study aimed to produce recombinant α-amylases (Amy3500 and Amy1974), derived from B. amyloliquefaciens MDC1974 and B. subtilis MDC3500 respectively, using the pBE-S shuttle vector, and to characterize them. Both α-amylase genes were molecularly cloned into the E. coli/B. subtilis pBE-S shuttle vector, both with (Amy1974sig and Amy3500sig) and without their own signal peptides (Amy1974 and Amy3500), along with a signal peptide originating from the plasmid, and tested in flask fermentations. For recombinant Amy3500, the amylase variants resulted in similar levels of volumetric activity (700-750 U/mL). In contrast, the expression of Amy1974 nearly doubled compared to Amy1974sig with double signal peptides, reaching 2000 U/mL. The SDS-PAGE estimated the molecular weight of Amy1974 α-amylase to be 54.6 kDa, which was in accordance with the theoretical molecular mass calculations. However, the estimated molecular weight of Amy3500 amylase was significantly reduced when exiting the producer cells. Ca2+ had no significant activating effect on the activities of Amy1974 amylase and Amy3500 amylase, likely due to its tight binding to the protein scaffold. Both enzymes exhibited broad activity peaks between 45-70°C, with a maximum at 65°C. The Amy1974 and Amy3500 α-amylases demonstrated broad pH optima and pH-dependent thermostability, with optimum pH values at 6.5 and 5.8, and thermal stability peaks at pH 7.6 and 5.9, respectively. Both α-amylases displayed high relative activity against various starches, including corn amylopectin and potato amylose, while showing comparatively lower activity towards cyclodextrins. The Amy1974 amylase converts starch to dextrins of varying lengths, whereas Amy3500 almost entirely converts starch into glucose.

The aim of this study is to examine an efficient and environmental friendly process for hydrolyzing starch, an industrial-derived by-product of the potato processing industry, and to use the produced hydrolysates as substrates for methane production. A full factorial experiment was designed and the optimal concentrations of FeSO4·7H2O, H2O2 and temperature were determined obtaining a yield of 99.5%, with a total carbohydrates content equal to 28.65 g, when the input parameters were at their high level: FeSO4·7H2O 1.00g/L, H2O2 0.51 g/L and temperature 70.0oC. The hydrolysis kinetics were also examined revealing that temperature was the most important factor among the three optimization parameters. Furthermore, biodegradability tests were carried out to measure the methane production potential from the produced hydrolysates. The specific methanogenic activity was reached 0.669 g CODCH4/gVSS-day proving the effectiveness of the hydrolysis process and highlighting the potential of this food manufacturing by-product for bioenergy production. A preliminary cost analysis showed that a small investment for utilizing the starch in an existing wastewater treatment facility of a potato processing industry becomes profitable before the end of the 3rd year obtaining a NPV 37.5% higher than the NPV of the current utilization scenario.

Elevated carbon dioxide (eCO₂) stimulates wheat grain yield, but simultaneously reduces protein (N) concentration. Also other essential nutrients are subject to change. This study is a comprehensive synthesis of wheat experiments with eCO₂, estimating effects on N, minerals (B, Ca, Cd, Fe, K, Mg, Mn, Na, P, S, Zn), and starch. Analysis was made by i) deriving response functions for the relative effect on element concentration in relation to CO₂ concentration, ii) meta-analysis to test the magnitude and significance of observed effects, and iii) relating CO₂ effects on minerals to effects on N and grain yield. Responses range from zero to strong negative effects of eCO₂ on mineral concentration, with largest reductions for the nutritionally important elements N, Fe, S, Zn and Mg. Together with the positive but small and non-significant effect on starch concentration, the large variation in effects suggests that CO₂-induced responses cannot be explained by a simple dilution model. To explain the observed pattern, uptake and transport mechanisms may have to be considered, along with the link of different elements to N uptake. Our study shows that eCO₂ has a significant effect on wheat grain stoichiometry, with implications for human nutrition in a world of rising CO₂.

Over the past few decades, synthetic petroleum-based packaging materials have increased, and the production of plastics has surpassed all other man-made materials due to their versatility. However, the excessive usage of synthetic packaging materials has led to severe environmental and health-related issues due to their nonbiodegradability and their accumulation in the environment. Therefore, biobased packages are considered alternatives to substitute synthetic petroleum-based packaging material. Furthermore, the choice of packing material in the food industry is a perplexing process as it depends on various factors, such as the type of food product, its sustainability, and environmental conditions. Interestingly, due to proven mechanical, gas and water vapor barrier properties and biological activity, polysaccharide-based bioplastics show the potential to expand the trends in food packaging, including edible films or coatings and intelligent and active food packaging. This review discusses the structure, properties and recent developments in polysaccharide-based bioplastics as green and sustainable food packaging materials.

Background/objectives: The health benefits of resistant starch are well known, but there have not been many studies available documenting the effect of basmati rice products containg resistant starch upon blood glucose level and lipid profile in vivo efficacy. Methods: Common cooking methods were used to prepare basmati rice products including two boiling methods viz. boiling 1 (boiling by absorption), boiling 2 (boiling in extra amount of water), frying and pressure cooking. The cooked rice were held at various temperatures and times: it was made fresh (T1), kept at room temperature (20–22°C) for 24 h (T2), kept at 4°C for 24 h (T3), and then reheated after being kept at 4°C for 24 h(T4). Next, the products' proximate composition, total dietary fibre (soluble and insoluble), resistant starch (RS), and In vitro starch digestion rate (rapidly and slowly digested starch) were examined. The effect of RS on blood glucose and lipid profile were measured in humans and rats. Histopathological study of liver and pancreas in rats were also observed. Results: The basmati rice prepared by boiling 1 and stored with T3 was found more effective to control blood glucose and lipid profile. Similarly in rats, the blood glucose level, cholesterol, triglycerides and LDL were reduced about 29.7, 37.9, 31.3 and 30.5% respectively, after consumption of basmsti rice prepared by boiling 1 and stored at T3. Conclusion: Rice products stored at 4⁰C have a high amount of resistant starh, insoluble dietary fibre, slowly digestible starch and low glycemic index. Thus helps to inhibit glycogen and lipid synthesis.

The aim of the study was to determine the effect of the application of different organic matter, UGmax soil conditioner and simplifications in potato cultivation on the content of dry matter, starch, sugars in tubers of the medium-early edible cultivar 'Satina' after harvest and after long-term storage. The highest dry matter (173.4 g kg-1) and starch (124.6 g kg-1 f. m.) content was ob-tained with the simultaneous application of a manure with soil conditioner at 100% mineral fer-tilization. In the case of sugars, the withdrawal of the soil conditioner from the crop proved most beneficial, for total sugars on the stubble intercrop (5.06 g kg-1 f. m.) and for reducing sug-ars (1.99 g kg-1 f. m.) on the straw. Each protection reduction applied resulted in a significant re-duction in starch content. In this regard, the withdrawal of herbicides with simultaneous appli-cation of manure and UGmax proved most beneficial. Long-term storage of tubers caused a sig-nificant reduction in their quality in terms of dry matter and starch content (average by -3.6 and -2.3%, respectively) and an increase in total and reducing sugars (average by 11.8 and 9.6%, re-spectively). The decrease in dry matter and starch content was significantly influenced by the 50% reduction in NPK fertilization applied during the growing season, while the application of soil conditioner with full protection contributed to the increase in reducing sugars after storage at 28.9 pts%. Our research is in line with current trends of used potato cultivation technologies focused mainly on environmental protection, so the results of this study can provide a basis for validation for researchers currently engaged in such evaluation.

The detection and quantification of protein–protein interactions (PPIs) is a crucial technique that often involves the use of recombinant proteins with fusion-protein tags, such as maltose-binding protein (MBP) and glutathione-S-transferase (GST). In this study, we improved the cohesive and sticky properties of gelatinized starch by supplementing it with agarose, resulting in a harder gel that could coat the bottom of a microtiter plate. The resulting gelatinized starch/agarose mixture allowed for the efficient immobilization of MBP-tagged proteins on the coated plates, enabling the use of indirect ELISA-like PPI assays. By using the enzymatic activity of GST as an indicator, we succeeded in determining the dissociation constants between MBP-tagged and GST-tagged proteins on 96-well microtiter plates and a microplate reader without any expensive specialized equipment.

Three kinds of hydrophobic groups grafted starches of maleic anhydride grafted starch (MAH-g-starch), lactic acid grafted starch (LA-g-starch), and methyl acrylate grafted starch (MA-g-starch) were prepared by in-situ solid phase polymerization. The results of Fourier transform infrared spectroscopy (FT-IR) and X-ray photoelectron spectroscopy (XPS) were confirmed successful grafting. The grafting ratios of MAH-g-starch, LA-g-starch and MA-g-starch were 6.50%, 12.45%, and 0.57%, respectively. Influenced by the grafting ratio, LA-g-starch had the best hydrophobic properties and the largest molecular weight, and those for MA-g-starch was the worst. The surfaces of grafted starches were covered with graft polymer, with obvious surface roughness and bond degree of MAH-g-starch and LA-g-starch. The crystalline structure of grafted starches showed some damage, with LA-g-starch exhibiting the greatest decrease in crystallinity, and less of a change for MA-g-starch. Overall, the grafting reaction improved thermoplasticity, with LA-g-starch the most improved, followed by MAH-g-starch, and then MA-g-starch.

Obesity is a complex disease increasing risk of other pathologies. Its prevention or long-term weight loss maintenance is problematic. Gut microbiome is considered a potential obesity modulator. The objective of the present study was to summarize recent findings regarding relationships between obesity, gut microbiota and diet, with emphasis on dietary fiber and resistant starch. Composition of the human gut microbiome and methods of its quantification are described. Products of the gut microbiome metabolism, such as short-chain fatty acids and secondary bile acids including their effects on the gut microbiota, intestinal barrier function and immune homeostasis are discussed in the context of obesity. Importance of dietary fiber and resistant starch is emphasized as far as effects of the host diet on the composition and function of the gut microbiome are concerned. Complex relationships between human gut microbiome and obesity are finally summarized.

(max 200 words): The contamination of groundwater is a serious concern for ecosystems and human health. In this regard, biochar represents a promising low-cost and sustainable material for in-situ groundwater remediation. Herein, biochar waste of biomass energy production process derived from pine wood gasification at 950°C was used as active carbonaceous material in combination with different biopolymers: chitosan (CS), alginate (ALG), potato starch (PST), and carboxymethylcellulose (CMC) to produce BC@biopolymer composite materials. Different concentrations of biochar (0.3–1.0 g·L-1) and biopolymers (0.2–20.0 g·L-1) were tested and blending mode was used as simple and straightforward strategy to obtain BC composites. Scanning electron microscopy (FE-SEM), UV-Visible, infrared (FT-IR) spectroscopy, specific surface area (BET method), pore volume, and pore size distribution (textural parameters), dynamic light scattering (DLS), and ζ-potential were used to investigate the composite chemical structure, stability, and to assess the interaction among counterparts. On optimized formulations, breakthrough tests and batch adsorption isotherms on trichloroethylene (TCE) as a model contaminant were performed to evaluate the capability of composites to be delivered through a porous medium determining the transport properties, (hydrodynamic dispersion retention percentage, and adsorption capacity). This biopolymer-modified biochar holds significant promise as a sustainable and effective solution to address various groundwater pollution challenges.

For the first time, few-layer graphene (FLG) nanosheets were synthesized by the method of self-propagating high-temperature synthesis (SHS) from biopolymers (starch and lignin). We suggested that biopolymers (lignin, tree bark) and polysaccharides, in particular starch, could be an acceptable source of native cycles for the SHS process. The carbonization of biopolymers under the conditions of the SHS process was chosen as the basic method of synthesis. Chemical reactions, under the conditions of the SHS process, proceed according to a specific mechanism of nonsothermal branched-chain processes, which are characterized by the joint action of two fundamentally different process-accelerating factors - avalanche reproduction of active intermediate particles and self-heating. The method of obtaining FLG nanosheets included the thermal destruction of hydrocarbons in a mixture with an oxidizing agent. We used biopolymers as hydrocarbons and ammonium nitrate as an oxidizing agent. Thermal destruction was carried out in the mode of SHS, heating the mixture in a vessel at a speed of 20–30 oC/min to 150-200 oC and keeping at this temperature for 15–20 min with the discharge of excess gases into atmosphere. A combination of spectrometric research methods, supplemented by electron microscopy data, has shown that the particles of the carbonated product powder in their morphometric and physical parameters correspond to FLG nanosheets. An X-ray diffraction analysis of the indicated FLG nanosheets was carried out, which showed the absence of formations with a graphite crystal structure in the final material. The surface morphology was also studied and the features of the IR absorption of FLG nanosheets were analyzed. It is shown that the developed SHS method makes it possible to obtain FLG nanosheets with linear dimensions of tens of microns and a thickness of not more than 1-5 graphene layers (several graphene layers).

Rice prolamins are categorized into three groups by molecular size (10, 13, or 16 kDa), while the 13 kDa prolamins are assigned to four subgroups (Pro13a-I, Pro13a-II, Pro13b-I, and Pro13b-II) based on cysteine residue content. Here, we generated four knockout strains of rice using CRISPR-Cas9, each of which demonstrated selectively reduced expression of specific subgroups of the 13 kDa prolamins. These four mutant rice lines also demonstrated compensatory expression of glutelins and non-targeted prolamins, which resulted in low grain weight, altered starch content and atypically-shaped starch granules and protein bodies. Transcriptome analysis identified 746 transcripts that were differentially expressed in the mutant rice lines during development. These transcripts played roles primarily in RNA processing, protein synthesis, stress response, and transport. After selective suppression/knockout of genes in the Pro13a-I subgroup, compensatory upregulation of genes in the Pro13a-II and Pro13b-I/II subgroups was observed. Compensatory expression of 9 ER stress and 17 transcription factor genes was also observed in mutant rice in which expression of 13 kDa prolamin genes was suppressed. Our results provide valuable insight into the regulatory mechanisms underlying rice seed development and the specific roles played by 13 kDa rice prolamins and their target genes.

Perhaps the greatest challenge in the graft copolymerization of acrylic acid onto starch initiated by Fenton’s is the selectivity of the grafting reaction. Low selectivity means that too much of unwanted homopolymer polyacrylic acid is produced. In this paper, it has been analyzed why with this reaction system, involving a water soluble monomer and indirect initiation, the graft selectivity is such a challenge. Several other grafting reactions, especially with monomers of low water solubility or when direct initiation is applied, show a better grafting performance. A scheme is presented based on reaction engineering principles, that supports an explanation of the observed differences. A more selective activation of starch is a factor, but perhaps even more important is a low monomer to starch ratio at the starting sites of graft reactions. Based on these insights, several methods to improve the graft selectivity are evaluated, with the help of literature data but mostly by experimental explorations in our laboratory. Most promising appears to be a dedicated dosage method, to add monomer in portions over time, tested in a batch reactor with gelatinized cassava starch. This way, both grafting percentage and graft selectivity could be improved. Such could not be realized with the more conventional dosage, which is to add all monomer before the start of the reaction. This can be considered a principal breaktrough. Still, more research and development would be needed to refine the method and to implement the idea also in a continuous reactor at larger scale.

Fourteen Russian potato cultivars (cvs.) grown for three years in field plots of VIR (Northwestern region of the Russian Federation) were evaluated for productivity and a number of biochemical parameters of tubers. The 12 parameters that have been evaluated in tubers annually one month after harvesting and after cold storage (at 2 - 4°C) include the content of dry matter, starch, protein, ascorbic acid, carotenoids and β-carotene, anthocyanins, total sugars and monosaccharides (reducing sugars), phenolic compounds, as well as total acidity, and antioxidant activity. The cultivars differed significantly in productivity and biochemical composition of tubers. Dry matter content ranged from 16.40% in cv. ʻKumachʼ to 27.28% in ʻNayadaʼ, starch content ranged from 8.96 % in cvs. ʻFioletovyjʼ, ʻKumachʼ to 20.08% in ‘Sokur’, the total sugar content reached 2.46% in cv. ʻSiverskij’ whereas ‘Sokur’ has the smallest content of reducing sugars in post-harvest tubers. Protein content ranged from 1.02% to 2.77% with the highest accumulation in cv. ʻSokurʼ. Content of ascorbic acid (vitamin C) ranged from 6.3 mg/100 g FW in ʻKrasa Meŝeryʼ to 26.6 mg/100 g FW in cv. ʻKrasavchikʼ. Carotenoids content ranged from 0.157 mg/100 g FW in cv. ‘Nayada’ to 0.645 mg/100 g FW in cv. ʻGrandʼ. Content of anthocyanins in potato ranged from 1.04 mg/100g FW (not colored tubers of cv. ʻKrasa Meŝeryʼ) to 283.04 mg/100g FW (colored tubers of cv. ʻFioletovyiʼ). The nutritional value of tubers (content of dry matter, sugars, starch and protein) was determined to a greater extent (38-49%) by varietal characteristics, rather than by meteorological conditions in vegetation period. The content of vitamin C, carotenoids, protein and anthocyanins varied depending on the year. The highest content of dry matter, starch and carotenoids was noted in tubers harvested in 2019, marked by low temperatures and precipitation deficit in growing season. The conditions of 2020 with low temperatures and excess precipitation were the most favorable for anthocyanin’s accumulation in potato tubers while not for other biochemical parameters. Of the cultivars, ʻSokurʼ had the highest content of dry matter, protein and starch. Cv. ʻFioletovyiʼ had small starch content and high level of anthocyanins. Cv. ʻPlamyaʼ can be recommended for potato products manufacturing due to dry matter content above 20% and reducing sugars content 0.24%..
