FUNDAMENTALS IN FOOD SERVICE OPERATION
First Semester A. Y. 2021 – 2022

MODULE 2

OBJECTIVES:
1. Discuss about the Food and Beverage Service Operation.
2. Identify and describe the different types of Food Service.
3. Recognize the characteristics of Restaurant.
4. Discuss the type of Table Service.

Introduction
Food and beverage services sector contributes a great deal to the profits in hospitality industry. With the
increase in importance of business meetings, a range of personal and social events, a large number of
customers visit catering establishments frequently. The food and beverage professionals tirelessly work to
intensify customers’ experience through their service.
The F&B Services providing businesses deliver food and beverages to their customers at a particular
location (on-premise) such as hotel, restaurant, or at the customer’s intended premises (off-premise).

DEFINITIONS

Food and Beverage Services - can be broadly defined as the process of preparing, presenting and serving
of food and beverages to the customers.

F&B Services can be of the following two types −


• On Premise − Food is delivered where it is prepared. The customer visits the premise to avail the
food service. The premises are kept well-equipped and well-finished to attract customers to avail
F&B service.
For example: restaurants, pubs, coffee shops and etc.
• Off Premise or Outdoor Catering − This kind of service includes partial cooking, preparation, and
service at customer’s premises. It is provided away from the F&B Services provider’s base on the
occasion of major events which call for a large number of customers.

Categorized of Food & Beverage Services Operations


• Commercial − In this case, food and beverage services is the primary business. The most known
commercial catering establishments are — hotels, all kinds of restaurants, lounges, cafeterias,
pubs, clubs, and bars.
• Non-Commercial − Non-commercial operations are secondary businesses in alliance with the
main business. These food and beverage services mainly cater to their consumers with limited
choice of food and beverages. These establishments often run under contracts. For example, food
and beverage services provided at hospitals, hostels, and prisons.
Characteristics of Restaurants
Nowadays, restaurants have different individuality and uniqueness. However, several may be alike
in some ways, but they differ in other ways. In service expertise, certain restaurants have distinctions
from one another.
1. Restaurant – is a food service establishment that has the expertise in serving food though some
offer beverage but not on the beverage experts’ level. Usual beverages served are beers, sodas,
juices, tea, coffee, and other non-alcoholic beverages.
2. Bar Restaurant – is a food service establishment that is an expert in serving beverages and
secondarily food. It may serve alcoholic and non-alcoholic beverage and may also serve
cocktails of different mix. Along with the beverages, the usual foods being served are food
accompaniments to the beverages such as foods rich in protein and fat to lessen the effects of
the alcohol in the body.
3. Bar and Restaurant – is a food service establishment that has expertise in serving both beverage
and food.
Other Types of Food and Beverage Service Outlets
A. Coffee Shop – specialized in serving coffee. Foods being offered are usually light meals.
Pastries, cakes, sandwiches and desserts are the usual part of the menu. Their distinguishing
feature is that they allow patrons to relax and socialize on their premises long periods of time.
B. Food Hall/Food Court – this outlet has evolved from the traditional cafeteria wherein
customers fall in line, take and pay their food at the counter. There are variety of outlets and
stalls inside a food court. They are often seen in large shopping malls.
C. Pub – is a bar that serves simple food fare. Traditionally, pubs were primarily drinking
establishments where food is a decidedly secondary option.
D. Fast Food Restaurant – also known as a quick service restaurant (QSR) within the
industry, is a specific type of restaurant that serves fast food cuisine and has minimal table
service. The food served in fast food restaurants is typically part of a "meat-sweet diet", offered
from a limited menu, cooked in bulk in advance and kept hot, finished and packaged to order,
and usually available for take away, though seating may be provided. Fast food restaurants are
typically part of a restaurant chain or franchise operation that provides standardized
ingredients and/or partially prepared foods and supplies to each restaurant through controlled
supply channels

Food and Beverage Services – Four Common types of Table Service


1. American Table Service
Today this is a commonly used table service and is characterized by the food being
prepared and plated in the kitchen and brought to you at the table by serving staff. This is
the most common type of service in restaurants the world over as it allows a lot of people
to be served quickly.

2. French Table Service


French table service has two types of presenting food to guests. Originally, French service
involved all the food being placed on the table at once with guests helping themselves and
passing the dishes around the guests, very much as we often do when eating at home with
family. This style is often referred to as ‘family style’ service.
In the more formal style of French service, a server presents a dish of food individually to
each guest and the guest helps themselves onto their plate. Sometimes the food will be pre-
cooked in the kitchen and finished off at the table in front of the guests.
3. Russian Table Service
Russian table service involves different styles depending on the Chef and Host. Often the
food is prepared in the kitchen and then each course is brought to the table sequentially and
carved and portioned by the waiter which the guest then helps themselves to. However,
sometimes the food is prepared and pre-cut in the kitchen and arranged on platters and is
individually served to each guest at the table.

4. Buffet Service
Buffet is a style of food service in which the verities of ready food dishes are displayed
according to the sequence on the buffet counter either hot or cold and Guest's serve those
foods themselves. In some cases, servers are behind the counter and serve the guests what
dishes they like.
