ENCLOSURE A
TREATMENT OF STAINLESS STEEL
DESCRIPTION:
The material is chiefly a steel alloy having a carbon content of 0,05%,
18% chrome and 9,5% nickel (AISI No. 304) . Ths surface is ground with
grit 180.
DAILY MAINTENAHCE:
Stainless steel should be washed daily or according to requirements. Use
a dry wrung cloth. To the water is added a fat-soluble detergent and if
necessary a little ammonia.
Then re-wipe with a dry cloth so that all remnants of the detergent are
removed.
PERIODICAL MAINTENANCE:
Now and then - according to the degree of the water hardness on location -
the surfaces might be coated with a thin layer of limestone so that the
surfaces will have a dull look; furthermore bacteria might grow in the
pores.
The limestone can be removed by means of a cloth wrung in ordinary vinegar
or a special de-liming agent free from acid.
After use of one of these agents re-wash carefully with clean water until
all remnants have been removed.
Take care not to use more water than strictly necessary and never to wash
by using a water hose on units equipped with electric components.
Layers of limestone can also be removed mechanically by polishing with a
nylon sponge (e.g. SCOTCH-BRITE). Polish in the grinding direction and take
care not to use too strong polishing agents.
Do not use other methods than those mentioned above.
REPAIR OF DEFECTS:
Defects, which might arise in stainless steel surfaces, will usually appear
as scratches from mechanical wear or stains from water containing chlorine.
Minor scratches and stains can be removed by mechanical treatment with a
nylon sponge as mentioned above.
In case of deeper scratches the whole surface must be re-ground mechanically.
Apply a grinding wheel grit 180 and give a final polish with a nylon sponge-
This work must always be performed by specialists.
Take care always to work in the original grinding direction.
ENCLQSURE B
ELECTRIC APPARATUS (General remarks)
DESCRIPTION:
Each apparatus where - more or less - power components are installed
e.g. ranges, kettles and dish-washers, is defined as an electric unit.
All units are constructed for the local voltage and cycles.
INSTALLATION:
During installation take care that all units are level before possible
fastening. All internal wiring connections are performed and tested at
the factory before delivery. Take care to obtain an even distribution
on the phases of the load of each unit. If the ampere consumption makes
it necessesary it is advisable to distribute the load on more groups.
There is a manual for each unit stating what may be recommended of
groups/ fuses and cable cross section areas. These recommandations have
to give way for any local law or rule.
Before start-up and when properly installed switch on the heat on the
lowest step of each component and leave for some while in order to eva-
porate any humidity on the heating elements. If this is not done there
is a risk of the elements disintegrating due to steam build up.
DAILY MAINTENANCE:
All kitchen utensils - including the units refered to - should daily or
more often, according to demand, be cleaned for fats or other bits of
food.
Owing to risk of short circuits a water hose for cleaning must under no
circumstances be used neither direct nor indirect on units with electric
components. Use a wrung cloth, Add a fat-soluble detergent e.g. syn-
thetic detergent or soap to the water. Take care to remove all remnants
of such" detergents by rewiping with a dry cloth.
PERIODICAL MAINTENANCE:
According to how often the unit is used a more thorough cleaning will be
necessary i.e, cleaning of compartments, emtying and cleaning of fat
fryer basins, filtering or if necessary oil exchange. Include also clea-
ning of cooking plates, which frequently must be rubbed with vegetable
oil or another oil free of acid in order to give them a protective film.
Take care to grease movable parts such as wheels, worm drives, chain
drives for spits, etc. For this purpose use molybdenum disulphide paste
which is heat-resisting.

DESCRIPTION:
The ovens are des i gned in two sizes h x w x d = 275 x 500 x 600mm resp.
300 x 665 x 600 mm for mounting in a series of kitenen components. The ovens (pos. 1)
are standard designs in black-painted iron sheet, but can also be delivered completely
in.stainless steel. Top and bottom heat (pos. 4} is regulated separately by thermo-
static control (3-pole thermostats 50°C - 300°C with pilot lamps.)
The out s ide of the compartment door is plated with stainless steel , the inside with
iron sheet. A stopping device (pos. 3) in each side secures the door in open {hori-
zontal) position. An adjustable vapeur exhaust valve is mounted in the door.
The suspension of the door is constructed so that this is secured in closed position
and balanced for easy operation. Detail drawing B "shows the construction of the
suspension.
INSTALLATION:
The oven compartment is carefully pushed into the cabinet and fastened by means
of 4 countersunk H 6 screws.
The shaft of the door is cautiously located from the left side, the different
parts 7, 8, 11, 8, 9 and 14 being mounted in the said order. The pointed screws 13
are mounted in the pre-drilled holes in the shaft, and the specially forked piece 11
is screwed to the inside of the door.
Now make a complete, clockwise turn of the shaft by means of the screw pos. 14.
In this way the springs should be adequately tightened. Drill the specially forked
piece and shaft and mount the screws 12.
DAILY MAINTENANCE:
According to Enclosure B.
.12
PERIODICAL MAINTENANCE:
Burnt c o a t i n g s i n the compartment can be removed with a scraper. Heat the oven t o
approx. 100 C and the coatings w i l l be easy to remove.
FÅULT-FIKDING;
Besides the defects mentioned in the enclosures B and G the following defects raay
occur:
1) One or both springs in the door suspension may break so that the door "hangs"
or does not fit tightly to the compartment. This can be repaired according to
the installation instructions.
2) One or more heating elements may be burnt through. The defect will be discovered
through a bad frying/baking result.
The heating elements are mounted in channels welded to the top respectively the
bottom of the compartment. They are only accessible from the rear which involves
that all the compartment must be dismounted and removed from the cabinet. In
order to avoid wrong connection of the supply cables, mark these before the re-
placement. The best way to find the defect heating element (s) is after cooling
of the compartment to start the thermostat again and then with your hånd feel
up and down inside the compartment

EWPC 960 and 971 Temperature Controllers
All cabinets and counters supplied by Foster fitted with the microprocessor controllers 960/971 will be pre-
programmed according to the type and temperature range of the cabinet/counter.
The chart below shows the 'standard' settings of the two controllers, 960 and 971. These settings apply to the
following ranges:
960 — Storage refrigerators, integral and remote, cabinets and counters.
971 — Storage treezer cabinets with hot gas defrost.
When a 960 or 971 controller is supplied as a spare part the chart entries shown are those that will be pre-
programmed into the respective controllers. If the controller is to be fitted to a cabinet or counter that does not fall
into the above categones, (eg a meat or chili temperature cabinet or counter) ft will be necessary to change some
parameter values. The cnanges required tor the various ranges of cabinets/counters concerned are detailed in a
separate chart overleaf.

General
General
The hydro extractor is an invaluable complement to a washing machine and
other drying equipment:
• it complements the washing machine by very efficient dewatering of the
laundry atter the wash programme is compieted.
• It compiements the tumble dryer or drying cabinet by considerably reducing
the drying time. Drying wash is energy-intensive and an efficient hydro
extractor can save considerable amounts of energy every year.
• The 38 liter extractor can be loaded with 8 kgs, 58 liter with 12 kgs and 88
liter with 18 kgs of dry weight.
Function
^5" The extractor is started by pressing the START-button. The preset extracting
Cl) time is 5 min. The extraction can simply be stopped by pressing the STOP-
button. When the extraction time has elapsed and the drum stopped, the lid can
be opened by pressing the button for lid-opening.
Safety
The safety is controlled by two independently working rotation guards in the
motor. The lid has a mechanic locking device. Furthermore the 38 and 581
extractors have an electronic monitoring, which prevent start of the extractor if
the lid is open. If power failure the lid will remain locked.
Procedure for use
WARNING
The hydro extractor must not be used by
children.
Do not leave children alone unattended in
the vlcinity of the hydro extractor.
If you detect a fault on the hydro extractor,
report It without delay to the technlcal
responsible. Thls is Important for yours and
others safety.
Preparation
Place the load in an even layer around the whole
of the drum
Place long articles in a zig-zag fashion so that
they are not stretched unnecessarily while being
extracted.
Place heavy items at the bottom and light items
at the top.
Check that articles do not hang over the edge of
the extractor's drum.
Starting up
Turn the cover onto the extractor and press it
downwards.
Completion
Rg. When the extracbon time is over, the extractor
(5) stops automatically. Open the lid by pressing the
^i) -button. Turn the lid to the left and take out
the laundry.
Leave the extractor in the condition you want to
find it.
In case of fault on the extractor, e.g. when
the yellow lamp is flashing, report the
matter to the technician as soon as
possible. Thls is Important for yours and
others safety.
CAUTION
The extractor must not be sprayed with
water.
Maintenance
The maintenance intervals apply to normal use in
e.g. a coin-up for exampte.
Halve the times if the hydro extractor is used
intensiveiy in a commercial laundry.
Every 14days
It is important to carry out regular checks of the
hydro extractor's function, particularly where
personal safety is concerned.
Check the following;
• That the cover cannot be opened while the
extraction cycle is in progress.
• That the STOP-button is working.
• That the switch and electrical cabel to the
machine are undamaged.
Installation
Installation
Transport security
The extractor is suppiied bolted on to a
transportation pallet.
Bolts, template, installation instruction, etc. are
clamped on the inside of the crate.
Positioning
Ftg. The extractor shall be located as near to a floor
(?) drain or drainage channel as possible
Rg. The distance to the wall or other equipment shall
(?) be at least 200 mm. The distance on the left side
must be at least 250 mm. To facilitate service, it
is recommended that both distances are
500 mm.
Installation
Base
The hydro extractor drum is relatively rigidly
mounted in the frame. Thus the base must be 38 litre
very stable to be able to absorb the dynamic
forces during hydro extracting. The hydro
extractor*s mounting bolts must be cast into the
base.
An alternative to casting may be to use bolts
which are attached with Chemical anchors.
Contact your local suppiier for further detaiis.
The maximum floor load during the extraction
cycle is:
1,1±0,25kN (38 litre)
1,9±0,4kN (58 litre)
3,0±0,6 kN (88 litre)
1970
Casting a base
Fig. To provide a satisfactory base and the correct 58 litre
(9) working height it is advisable to build up a
foundation. The foundation should be
approximately 100 mm high and should have
minimum dimensions not less than 600x600 mm
(38 litres), 700x700 mm (58 litres) and 800x800
mm (88 litres).

Fresh-air duet
In order for the machine to work optimallyt it is
important to have a fresh-air duet into the room.
The required fresh-air intake appears from the
table - it equals 5 times the area of the outlet
duet.
Outlet duets
So as to avoid problems, it is recommended to
connect the machine to a separate outlet duet,
which must lead directly to the air outrside. The
mouth of the duet must be proteeted against rain
and impurities.
If several machines are connected to the same
outlet duet, all machines must be provided with a
back-pressure throttie in order to prevent moist
air from flashing back into machines that are not
in operation.
If in doubt about the designing of the outlet
system - get in touch with our service
organisation/dealer.
Duet dimensions
The table indicates dimensions of the gathering
pipe (see the 2 examples on page 10). in the
case of duet lengths in excess of 10 m, the pipe
dimension must be increased over the full length,
asstated in table 16.
