Riflettere sulle comunità e sull'economia di collaborazione può consen-tire la condivisione di aspetti di conoscenza che, allo stato attuale, sono fondamentali per comprendere modelli di servizi che innovano il modo di gestire la catena del valore, le relazioni tra gli individui e le loro esigenze. Dalla condivisione come un atto interno alle comunità, la fruizione di ser-vizi, prodotti e spazi assume un valore differente rispetto al concetto tradi-zionale. Il volume, riflettendo sull'importanza del ruolo delle comunità, dell'eco-nomia di condivisione, di nuove modalità di collaborazione, illustra l'anali-si di casi studio dove si evidenziano pratiche di innovazione sociale alternative ovvero piattaforme modellate, su iniziative orientate al mercato o per un utilizzo sociale di beni comuni. È una visione dinamica ed evoluti-va del tema, esplorando seppur sinteticamente prospettive d'indagine e percorsi nella riflessione geografica ed economica, che attestino la plura-lità delle interpretazioni dei territori e spazi che scaturiscono nella società odierna.

The aim of the research is to investigate whether purchasing decisions about bakery products (bread, snacks and biscuits) are influenced by concerns about health, climate change, biodiversity loss and food waste. The exploratory survey was carried out in two successive moments before and during the health emergency from COVID-19. Before the health emergency, face-to-face interviews were carried out using a structured questionnaire. Data were analyzed by factor analysis, reliability tests and descriptive analysis. Structural equation modeling (SEM) was employed to test the research hypotheses. The results of the modeling analysis of the structural equations highlighted that health and the environment represent an important background in the consumer experience of the respondents and influence the attitude and intention to purchase safe and environmentally friendly bakery products. The pandemic has accelerated the search for innovative product/process/service solutions in city markets as well as the search for “open innovation challenges” more in line with current needs. The aim of the research is to understand the adaptation mechanisms of the local food system and, in particular, of the public space of the market system. The article analyses the change produced by the COVID-19 pandemic in the municipal markets of Sant Feliu de Guixols, Costa Brava, Spain. The data were collected through a semi-structured questionnaire administered to food sellers and contextually to a group of consumers. Factor analysis and the AGIL model were applied to the data collected and were confirmed with cluster analysis. The purpose of this article is to examine the potential of truffle production and  its market in the Aspromonte area. Through interviews with leading operators, collectors, transformers, retailers and restaurateurs, the strengths and weaknesses of the sector, the risks to the external environment and the opportunities offered by the economic system, as well as the needs raised by the operators who in various ways deal with truffles in the Calabria Region was considered. The results show that truffles are natural biological products and play an important role in the management of woodlands: if they are present they are a formidable indicator of environmental health. This study examines the consumption of the Capicollo Azze Grecanico Slow Food from the province of Reggio Calabria. The research considers the main characteristics of the consumer of Capicollo Azze Anca Slow Food, a typical local product of the grecanic area. To examine the characteristics of the sample of consumers was used the method of multiple correspondence analysis (MCA). In addition, it applied a logit regression for each of the four factors identified to evaluate the relationship between individual motivations and socio- economic characteristics and behavior that most affect the decision making of consumers to purchase a local product. The results show a strong propensity of consumers to the link between territory and product quality and the importance attached to food security.

The research examines the production and environmental characteristics of the wine producing chain that represent the territorial system of the Aeolian Islands. The aim is to analyze the functional integration between production and agricultural landscape and to suggest some actions for the protection of the area. The research has provided a supply of a questionnaire of knowing several information: general, socio-economic and structural data of farms and entrepreneurs. The Aeolian Islands are a remarkable union between nature, art, traditions that can be exploited in an environmentally sustainable way, avoiding crossing the threshold of the carrying capacity and determining negative externalities that are detrimental to the socio-economic environment.

This report has the purpose to investigate on motivations that drive consumers towards purchasing cold cuts and in particular Capicollo Azze Grecanico Slow Food (through a survey carried out in Calabria). The research provides also an analysis of the producers. A Multiple Correspondence Analysis has provided consumer’s motivational profiles. Furthermore, a Logit regression allowed us to evaluate the relationships between individual motivations and some socio-demographic characteristics of local cold cuts and capicollo consumers. The results show a consumers’ propensity to the link between territory and product quality and the importance related to food security. The results are useful for the implications of the choices, the actions and policies of marketing that can offer.

The study examines the phenomenon of transhumance in Calabria, through two case studies. Unlike the other regions, the Calabrian transhumance is characterized by the majority use of sheep breeds, for the brevity of the tracks and for the difficulty of the same. Furthermore, although the phenomenon has historical roots, the passage of animals on “carrere” has always assumed a precarious character and has not left significant structures in the areas concerned. The study examines two transhumance routes in areas very close to the city of Reggio Calabria, in the south of Italy. That deals with routes historically used by shepherds to bring the flocks to higher altitudes and rich in water and pastures in the hot summer months. Local food is increasingly appreciated by consumers who recognize to niche products more sustainable production systems. The aim of this work is to understand the micro supply chain production of a Slow Food brand cheese of an internal area of Calabria (Italy). The producers were interviewed and environmental conditions breeding techniques, productions and ways of selling cheese were examined. Consumer behaviour was explored through a survey, intercepting 230 consumers per comprendere le motivations that influence the consumption of local cheeses produced in internal rural areas and examine the factors contributing to animal welfare and food security of the obtained productions. Research on public markets in small provincial towns is scarce, particularly on the role they play in maintaining a relationship with the local culture, environment and production. This paper examines consumers’ habits and preferences for food shopping in three European regions with respect to the purchase of fish products. The goal is to investigate consumers’ preferences for local fish to highlight the motivations that lead to different choices. A multiple correspondence analysis explores the motivations behind purchasing preferences, showing the complex process that drives individual consumer choices. Based on 504 interviews conducted in cities and areas adjacent to the cities of Girona, Reggio Calabria, and Lipari, we found no evidence of converging habits and homogenization on preferences. It supports the perspective in which the interplay between local culture and consumption of local products is strictly associated.

Additionally, places of purchase and sharing in the choice of food to be consumed have become a network system for families. The aim of this work is to analyse the preferences of Swedish consumers for local/artisanal cheeses and the purchase motivations that guide their choices. We also studied the role played by consumers’ favourite shopping locations (retail store, hypermarket, city market, supply chain). On the one hand, we examined the attractiveness and the power exercised by the various stores and on the other hand, we viewed the consumer in relation to the frequency of purchase, and the confidence with the sales points. The aim of the study is to investigate characteristics and preferences of consumers on the existence of ethical and sustainable reasons in the purchase of local food products. The exploratory survey refers to 300 consumers from two regions of southern Italy for whom a specific questionnaire was created. The data were processed using the SPSS program, using valid tools and methodologies. The results show that consumers’ sensitivity to purchases and therefore their consumption is connected to ethical attributes, to aspects relating to the improvement of local and global environmental conditions; to food safety; support for local farmers and the local economy.

This paper aims to identify how the local fish products of the seaside villages are a key factor in the development strategies and diversification of the “Strait Coast” FLAG area in the Costa Viola and in the Aeolian Islands. The main objective of the research, based on interviews involving 240 consumers, was to examine the consumption of blue fish and local seafood and the motivation to purchase in order to examine the possible strategies to make competitive the fishing “areas” also focusing on the integrated enhancement of fish, touristic, agro-food, artisanal and naturalistic-environmental resources of the territory.

Wine is a key element in the development and promotion of tourism. The purpose of this paper is to investigate, from the perspective of the growers, how a specific area - Aeolian Islands - is organized in order to develop wine tourism. The methodology employed for this study consisted of a combination of surveys, interviews and field observations with the suppliers. Results indicate that the implementation of wine tourism will be a significant challenge as the respondents report a lack of marketing and tourism management skill and knowledge. Most are small sized enterprises which means they have little man power available to devote to developing wine tourism; and there is a low level of reported cooperation amongst stakeholders.

It highlights the impacts that, in the complex framework of the EU reforms, have manifested themselves on economic activities and on society. The aim of the paper is twofold: to examine small-scale artisanal fishing in an area of Southern Italy in order to develop resilience and diversification and at the same time to outline the profiles of local bluefish buyers to highlight development strategies for the sector. The research carried out through a direct survey by administering a questionnaire to fishermen operating in areas of Southern Italy and the data cross-referenced with the opinions of local consumers. A conjoint experiment, followed by a multiple correspondence analysis and cluster identification, was used to outline the profiles of local bluefish buyers. The aim of this study is to examine and highlight the motivations underlying the consumption of local food. The study has been conducted through an exploratory survey carried out in two European regions, both with a borderland character, namely Jämtland in Northern Sweden and Calabria in Southern Italy. These marginal regions lie far from the heart of Europe. They are rich in uncontaminated landscape beauty and gastronomic deposits, with famous traditional dishes. Indeed, with their local landscape cultural mosaics, they can be seen as lost paradises. Using the Multiple Correspondences Analysis (MCA) method, we identified characteristics and motivational profiles of consumers in Sweden and Calabria, capturing differences and similarities that enable a transnational comparison of the case study contexts. The results highlight the strong link between gastronomy, consumption of local food, and the territory.

This research aims at pointing out those constrains and incentives conditioning family farm choices about investments, technical and managerial knowledge and expertness. The planned target has to be achieved through the attainment of three stages. Family farm involves a lot of people by different kind of employee relations, based mostly on a temporary work, that are often within the limits of the work rules. The organization solutions adopted by family farm produce several effects: among which investments and human capital allotment stand out. This research analyses family farm characteristics in a local rural system of the Calabria Region, as the result of the various European Community and domestic interventions and the specific physical, social and economic features in the considered territory; the attention is focused on the olive growing family farm. The survey is made through interviews carried out by qualified operators using questionnaires organized on different modules.
