From the Gallic grinding tools to the Carolingian milling systems. Archaeology of rotary querns and millstones between the rivers Seine and Rhine.
Millstones, as the centerpieces and the best preserved elements of mills, are characteristic of the questions relating to the history of techniques and economics.
Of economics, because analysis of the rocks from which they are made reveal a complex chain including their research, extraction, shaping, distribution and use. The factors on which this chain depends don’t only concern querns and millstones but can be applied to all types of craft production that answer to primary needs of subsistence.
Of techniques because the improving of milling processes is due to a transmission of technical savoir-faire, mixed with a constant research for the best solution to evolving food needs. This notion of technical progress is observed both over a long time scale (1000 years) and during brief political and cultural transitions (the Roman conquest of Gaul, and the Germanic migrations). This evolution is the basis of deep social and economic changes.
Based on field surveys, artifact analysis (querns and millstones) and a literature survey, this thesis presents a regional synthesis on a modest but structuring element of ancient societies and their economies.

Roman bathing in Coriovallum. The thermae of Heerlen revisited., 2020
The querns and millstones coming from the baths area constitute a coherent series for this period... more The querns and millstones coming from the baths area constitute a coherent series for this period and allow us to approach the milling practice of a Roman town close to the limes of the Empire. Importing quality rocks is a necessity to follow the mechanical requirements of grinding. This need is peculiarly sensitive during the Roman period in an area devoid of suitable raw materials. Here, the intensification of exploitation of the Eifel volcanic flows in Roman times coupled with an extremely developed transport network between the Rhine and Meuse rivers largely promoted the search for the best available rocks. And these materials are available from a distance of just over 100 kilometres south-east of Heerlen (fig. 3). The basalt-like lava from the Eifel makes up the majority of the querns and millstones in Heerlen and was probably transported either overland from the Mayen workshops or by a combination of overland and fluvial transport: on the Rhine between Mayen and Cologne and then by the main road leading to Bavay and Boulogne (France). Rocks from the Ardennes saw much more limited use: only one fragment of a large animal driven millstone of true arkose probably coming from the east of the Rocroi massif (Ardennes massif). The Macquenoise sandstone, coming from large quarries located to the west of the Rocroi massif, is only observed on two hand querns without archaeological provenance. Quern and millstone supply of Heerlen is thus oriented by far from the Rhenish region, as is the case in Tongeren where 86 % of the querns and millstones follow this trade pattern (HARTOCH et al. 2015). On the technical side, domestic subsistence milling with small hand driven querns remains omnipresent. Yet animal and water mills enable an increase of the scale of cereal transformation and sustain an urban population which does not take part at this stage in activities related to preparing food. Finally, the location of certain large millstone finds downhill the baths of Heerlen can be linked with their water supply, suggesting the presence of several unidentified watermills.

GB - The analysis of the corpus of rotary millstones from Gallia Belgica and Lower Germania reveals the existence of a very specific type of mill, used between the Somme and Rhine basins between the 1st and 4th centuries AD. In this region, these millstones are present in excess, and make redundancy with the millstones intended for human consumption (manual, hydraulic millstones and other animal-drawn millstones). These are large-format wheels, very flat in shape, whose technical arrangements involve peripheral muscle traction. The rock that constitutes them, a coarse arkose, is also very special since it only provided this type of millstone. Another specificity, these millstones are present almost exclusively in the countryside, from small farms to large villas. A first cross-referencing of molinological, archaeobotanical and archaeozoological data would tend to show that they intervene to prepare cattle feed in an economic production system that must meet both civilian demand and the supply of the Rhine Limes. Keywords : Millstones, Animal-driven mills, arkose, animal feed, Antiquity, rural world.

Production and circulation of ancient millstones along the Channel : research perspectives in Normandy
EN - In the 19th century, Charles de Gerville mentioned Roman millstone quarries on the tip of the Cotentin; Léon de La Sicotière discovered possible millstone cutting workshops in Alençon. Today, thanks to a renewed national dynamic, studies of millstones are multiplying and shedding light on a little-known aspect of the ancient economy. The presence of Tertiary flint pebble puddingstone is predominant along the Channel, at least from Cotentin to Pas-de-Calais; it is also found in the south of England, which reveals certain cross-Channel contacts from the Iron Age and throughout Antiquity. Alongside these very characteristic Norman productions, some sedimentary and plutonic rocks show petrographic variations that reveal a complex millstone supply in western Normandy. Recent studies have highlighted the importation of elements whose geological origin is to be sought at the edge of the Armorican Massif, in the Cotentin and in the granitic massifs of Vire and Athis.

EN - Due to the recent opening of sand quarries at the bottom of the Aisne valley, the protohistoric occupations of Bucy-le-Long are now precisely perceived. Thanks to a systematic collection and study of the remains, our understanding of the economy of lithic raw materials benefits greatly from this dynamic. Stone appears to have been used at different stages in the production and processing of cereals: for liming the soil during Late Iron Age, for threshing the cereal ears in earlier times, and for grinding the grain all along the Protohistory. However simple the technical chain of the first two activities may be, they remained unpublished until now. The ideas formulated remain hypothetical, but are presented as the most credible hypotheses to explain the remains encountered. Concerning the milling equipment, now abundantly discussed in the archaeological literature, its consideration is enriched by a particularly well-documented case study. Until the middle of the Second Iron Age, the saddle querns were manually operated with a limited production capacity. The evolution of the forms and materials used informs us about the technical practices of the inhabitants, but also about their apprehension of the environment since the millstones are extracted from specific geological deposits selected according to precise criteria. The observation of exogenous rocks, from the Final Hallstatt - Early La Tène period, also highlights the activity of workshops that became specialized, leading to commercial relationships with sometimes distant populations. From the Middle La Tène period onwards (mid-third century BC), the mill underwent a major technological transformation with the adoption of rotary motion, but the framework of food processing remained domestic. Apart from the increase in yields and the decrease in effort, the organization of milling activities changed little. On the other hand, the choice of raw materials reveals an evolution in the stone cutting activities: from sandstone used throughout Protohistory, the choice of stonecutters turned exclusively towards Lutetian limestone. On the scale of the micro-terroir of Bucy and through the rocks acquired by its occupants, a whole part of an economy of production and transformation of cereals is revealed.

For some years, a French-Belgian team of archaeologists and geologists is investigating the provenance of ancient quern-stones and millstones. Their study revealed the frequent occurrence of particular coarse sandstones derived from Lower Devonian strata in the Ardenne region, known as either the “Arkose of Haybes” by geologists or the “Arkose of Macquenoise” by archaeologists. Material for Late Iron Age and Roman quern-stones and millstones was quarried from open pits located west of the border between France and Belgium, between the Belgian village of Macquenoise (Commune of Momignies, Province of Hainaut) and the French town of Hirson (Aisne Department, Hauts-de-France region). This paper describes the raw materials, presents the different types of grindstones produced through historical times and provides a detailed diffusion map of the millstones. KEYWORDS: arkose, Lochkovian, milling stone, Gallo-Roman quarry, distribution area, geoheritage.

Comparative petrographical, mineralogical and geochemical analysis allowed an international team of archaeologists and geologists to identify the different raw materials used for the manufacturing of querns and millstones. As a result, (litho-) stratigraphic assignments as well as geological-geographical provenances are suggested or corroborated for the broad spectrum of these natural geo-materials. We give evidence for the exploitation of at least seven different rock types. They include sedimentary rocks (fine- to coarse-grained quartzitic and arkosic sandstones, conglomerates, limestones) and volcanic rocks (vesicular lavas) derived from different geological strata in the following geological-geographical settings: the volcanic Eifel area (Pleistocene lava), the Ardennes Massif (Palaeozoic sedimentary rocks) and the Paris and Northern Sea Basin (Cenozoic sedimentary rocks). Furthermore we show that a large diversity existed within different productions (different types of hand-mills and mechanical powered mills) and distribution patterns. This paper provides new data which will lead to new insights into the socio-economics of the local “Gallo-Roman” communities and into their networks within the northern Roman Empire.

Many Gallo-Roman sites form a nebula on the periphery of the port vicus discovered in 1975 in Pommeœul (B) during the excavation of a canal.
Surveys carried out on one of them allowed the collection of many lithic, ceramic or copper alloy artifacts. These include several fragments of statuettes, the most exceptional of which is a foot on a bow of a ship. This fragment could be attributed to a statuette of Neptune of which very few copies have been recorded.
Despite the numerous material collected and studied by various specialists, the nature of the site remains uncertain in the absence of excavation.

Summary The grinding surfaces of many millstone dating to Antiquity are dressed with radiating furrows or large peckings arranged following a narrow array of patterns. Those identified in the database of the Collective Research Programme "The Typological and Technological Development of Millstones from the Neolithic to the Year One Thousand" provide a wide overview of millstone dressing, a feature that is characteristic to querns and millstones in Belgium, the Paris Basin, and northern and eastern France.

This fruitful collaboration aims at reconstructing the ancient commercial roads and economic organization of territories during that period. In addition to the better-known volcanic rocks from the Eifel area, our study revealed the frequent occurrence of particular Devonian conglomerates and sandstones from the Ardenne area, as raw materials for the manufacturing of querns and millstones. The latter sandstones as well as the related antique millstone quarries, form an important and until now undervalued geological and cultural heritage in Belgium.
Near the Ardenne border between France and Belgium, the earliest Devonian (Lochkovian) sediments deposited on the Caledonian substrate are conglomerates, which are interpreted as continental alluvial fans. The first marine sediments are littoral sandstones/quartzites or shales/slates. A sandstone formation, formally defined as the “Arkose d’Haybes” is closely linked to the former Lochkovian conglomerates (called also the “Poudingue de Fépin”). The outcrops of this particular formation around the reference localities of Haybes, Fépin and Hargnies (Ardennes, France), show a partly recrystallized, well-sorted grey to greenish sandstone (turbidite facies) with wine-red coloured joints. Another important area displaying old quarries in the same formation is located between Hirson (Aisne, France) and Macquenoise (Hainaut, Belgium): here, a more homogenous grey coarse sandstone facies occurs, with a better consistency and small amounts of dark green tourmaline crystals.

In the central part of this area, (more precisely located north-west of the Ardennes hills), the Gallo-Roman territories of the Menapians, Atrebates, Nervians and partially those of the Tungri, were supplied with querns and millstones made of a coarse grey to beige sandstone, originating from lochkovian strata in the Ardennes massif. These essentially food transformation tools come from a production center located between Hirson (Aisne, France) and Macquenoise (Hainaut, Belgium), the activity of which was prodigious during the whole Roman period. The Macquenoise workshops are not linked to any navigable watercourse, but they are situated near a specific geological outcrop that was selected both for the quality of the rock and for its vicinity to the major road Bavay – Reims (France). Nevertheless, the distribution of the querns is clearly directed to the north and does not reach the big capital of Reims/Durocortorum before the Late Roman period (3rd century). This non-concentric picture allows us to approach the great principles of the distribution of a secondary millstone rock and in general of heavy lithic goods.

EN - The study of milling equipment covers several research areas in archeology and history of technology. Taken from a purely material point of view, this type of furniture is the result of a whole chain of production from extraction and processing, that involves reflections on the choice of raw materials and craftsmanship of stone. Addressed as a commercial and consumption product, it offers the opportunity to approach the circumstances of its dissemination, and thus treat natural and human constraints that govern the ancient economic systems. Finally introduced as a transformation tool, it helps to understand the crafts practiced on rural or urban sites.
Before the era of industrial milling, and even before the application of mechanical systems to mills, grain milling is performed by applying a rubbingstone on a lower millstone. The central and essential nature of this protohistoric domestic tool already requires great care to its manufacturing and maintenance. To the sixth or fifth century BC, a wave of technical progress which may have originated in the Ibero-Punic world affects milling methods, and the first rotary mills seem to make their appearance in the north east of the Iberian Peninsula (current Catalonia). New technical constraints require a choice of rocks with specific mechanical properties, and mass production is undertaken by specialized artisans on selected outcrops. It takes several centuries and the end of the Iron Age to see this innovation reach northern Gaul. This period, although very brief, between technological colonization of the rotary mill and the military colonization of the Roman troops, must be considered carefully in order to understand the origin of the economic systems that govern the production and dissemination of querns and millstones throughout the Roman period, through the Civitates composing Belgica Secunda and Germania Inferior. It then seems essential to extend the study to observe the gradual evolution of this furniture in a second political and social transition, the passage from late Antiquity to Early Middle Ages, and so check, on the one hand the possible persistence of manual milling side of mechanical milling and their respective place in society; on the other hand, the continuity or not of rocks exploitation, perhaps announcing medieval choice of raw materials.
An already running collaboration with geologists is therefore essential for the characterization of rocks that compose querns and millstones, their placement in the geological stratigraphy and the geographic location of their original deposits. So, find their mining quarries allows to link with mapping discoveries on archaeological sites in order to understand the terms of circulation of these consuming goods. From the extraction sites, part of which is already known, a dispersion governed by natural constraints of relief and hydrography is suspected, the same who had perhaps already decided on the formation of the Gallic political entities fixed by Augustus at the very end of the first century BC, and form dioceses in outline in late Antiquity."

The
Macquenoise sandstone, coming from large quarries located to the west of the Rocroi massif, is only observed on two hand querns without archaeological provenance.

Sandstones designates as Haybes, Vielsalm or Macquenoise “arkoses” are from primary Ardennes formations dating to the Devonian period. They are known in the Rocroi Massif at Hirson / Macquenoise (Aisne Department and the Belgian Province of Hainaut) and Haybes / Gedinne areas (Ardennes Department in the Belgian Province of Namur). They are also present in the High Ardennes at the Stavelot Massif in the area of Burtonville / Vielsalm (Belgian Province of Luxembourg). Two quarries districts (Macquenoise and Burtonville) in these ranges are characterised by rotary millstone roughouts. Millstones carved from this rock (“arkose” or Devonian sandstone of the Ardennes) are known in both urban and rural sites throughout the north-east of France and Belgium from the end of the Iron Age to Late Antiquity. Their typology, correlated to their chronology and find spots, enables us to offer an overview of their function and distribution in northern Gaul.

A hundred of rotary querns and millstones comes from 24 plots occupied between Late Iron Age and Early Middle Age, and located on a line straddling two Civitas territories of Belgian Gaul. These querns are made of specific rocks selected for mechanical properties, and which supply arrangements are being approached for different ages, linked with communication networks.

These querns are made of specific rocks selected for mechanical properties, and which supply arrangements are being approached for different ages, linked with communication networks.
fragments coming from the excavation of seven sites located in the South of the Entre-Sambre-et-Meuse. These fragments,
studied in their archaeological context, offer the opportunity to examine the grinding process on these sites. Macroscopic
petrographic observation also helps to understand the commercial networks that supply this geographic area with heavy
objects, which, in this case, mostly come from the Massif des Ardennes.
