Chapter I
Introduction

A lot of children doesn’t want to eat bitter gourd, because of the texture, color and

taste of this vegetables but they didn’t know that this bitter gourd has a lot of nutrients.

(According to Health.com) Bitter Gourd is an excellent source of vitamins B1, B2,

andB3, C, Magnesium, Folate, Zinc, Phosphorus, Manganese, and has high dietary fiber.

It is rich in iron, and contains Twice the beta- carotene of broccoli twice the calcium of

spinach, twice the potassium of a Banana. According to USDA, 100 grams of bitter gourd

has about 34 calories with 13 milligram Sodium, 602 grams’ potassium, 7 grams’ total

carbohydrates and 3.6 grams’ protein.

With all of this nutrients, which is very good for children, can you imagine how

much Nutrients will be wasted if bitter gourd will not be eaten by children. The

anti- microbial and Anti- oxidant properties present in the bitter gourd help in treating

skin problems, blood disorders, removing toxins from the blood purifying it. It also

improves blood circulation and helps to cure issues like’s rashes, acne, psoriasis, blood

boils and even hinders the growth of cancerous cells in the body. Consuming bitter gourd

can help you rid of acne and gives you a healthy and glowing skin. Eating or drinking

juice of bitter gourd stimulates the liver to secrete Acids those are essential for

metabolizing fat in the body. Besides, a 100 grams serving of Bitter Gourd contains just

17 calories making it a great option for fitness enthusiasts. Bitter gourd is an extremely

rich source of vitamins C, which help boost immunity. It also has powerful anti- viral

property, which stimulates the immune system and also aids and digestion. Bitter gourd

has a certain insulin like protein polypeptide P that mimics the action of insulin and

lowers blood sugar levels in diabetic patients. Another report issued in the journal of
chemistry and biology, gave evidence regarding the fact that bitter gourd increases the

uptake of glucose and improves Glycemic control.

There are some tips should be follow to lessen the bitterness of bitter gourd. A

quick tip to reduce the bitterness of the drink is to add some honey or jiggery to it or pair

it with sweet fruits like apple or pears. You can even add lemon juice to lessen the harsh

taste of bitter gourd juice. A pinch of black pepper and ginger can also decrease the

tartness.

Therefore, as a “Student Researcher” we had to do something so at the bitter

gourd any vegetable would become a petting or delicious in our children especially at the

young age of 7-12 years old to encourage them to eat the bitter gourd or any vegetable so

that they will become Healthy and strong. And also to avoid sickness or become

malnourished.

Statement of the Problem

The main purpose of the study was to know how to encouraged the children aged

7-12 to eat bitter gourd.

The researchers seek to answer the following questions:

 What is the common texture of Fresh Lumpia (bitter gourd)?

 What standard solutions to remove bitterness of the bitter gourd?

 Does the fresh lumpia bitter gourd looks presentable to the children?

 Does the fresh lumpia bitter gourd be a better food for snacks?

 Does the fresh lumpia bitter gourd has a lot of scorches?


Hypothesis

A hypothesis is a statement that can be tested by a research. If you want to test a

relationship between two or more things, you need to write hypotheses before you start

your experiment or data collection.

 The fresh lumpia bitter gourd must be served in a more presentable way
especially for the children.

 A survey must be conducted to know if the fresh lumpia bitter gourd is a better
food for snack.

 A researcher seeks to know the solutions to remove bitterness.

 A survey be conducted to avoid scorches.

Objectives of the study

The man objective of the study was to determine the problem of encouraging the

children aged 7-12 to eat Bitter Gourd.

There are some objectives to determine:

1. What is Bitter Gourd?

2. What are the health benefits of Bitter Gourd?

3. What healthy recipes can be used for children to be encouraged to eat Bitter
Gourd?

4. What is the most effective way to lessen the bitterness of Bitter Gourd?

5. What is the bitter Gourd recipes preference children aged 7-12 years old?
Significance of the Study

The significance of the study is for us to gain a better of encouraging the children

aged 7-12 to eat Bitter Gourd. This study is to raise their awareness of the benefits

present in the Bitter Gourd to our body.

This study aimed to determine the bitter gourd and determine health benefits

present in bitter gourd. This study was to know healthy recipes can be used for children

to be encourage to eat bitter gourd. To find the most effective way to lessen the bitterness

of bitter gourd, and find out bitter gourd recipe preference of children aged 7-12 years

old. We conclude that bitter gourd is one of the healthiest vegetables.

Definition of Terms
Bitter Gourd- a rough-skinned, green-colored unripe fruit used in Asian cooking and for
its medicinal properties.

Lumpia- (spring rolls) made of thin paper-like or crepe-like pastry skin.

Scorch- become burned when exposed to heat or a flame.

Chapter II
Review of Related Literature

Bitter gourd (Momordica charantia) is one the world’s major vegetables crops,

which belongs to the family Cucurbitaceous. Bitter gourd grows in tropical and

subtropical areas, including parts of the East Africa, Asia. The Caribbean, and South

America, where it is used not only as a food but also as a medicine. (January 30,2020).

Health benefits as rich source of antioxidants flavonoids and other polyphenol


compounds, bitter gourd may help to reduce your risks for a number of health issues.

Bitter gourd is packed with polyphenols. These compounds are known for their ability to

lower inflammation in the body. (August 22, 2020)

It is a popular vegetable/fruit in many countries. Research output in recent years

has shed light on the multifarious health benefits of bitter gourd seeds, fruits, leaves, and

other parts of the plant. These effects encompass antidiabetic, antiobesity, antitumor,

antifungal, anti-HIV, and antibacterial activities. Most of the plant parts, especially the

seeds, contain oil. Bitter gourd seed oil is rich in stearic acid, oleic acid, and linoleic acid,

and it exhibits antidiabetic and antitumor activities. In view of the fact that bitter gourd is

a common dietary component and its safety has been demonstrated, studies on bitter

melon essential oil are interesting and have promising commercial applications.

Bitter gourd, also known as bitter melon, is a crawling vine that grows well in

tropical countries, particularly in the Philippines. The term Bitter Gourd refers to both

plant in its fruit, which is elongated, green and has a rough and rumpled skin. Known for

its better taste, the Bitter Gourd is at once a staple ingredient in Filipino and Asian

cuisine and a reliable home remedy for various illness, particularly diabetes.

Bitter Gourd has long been popular part of many Asian vegetable dishes. Through

notorious for its better taste. Bitter Gourd is rich in iron, potassium, beta-carotene, and

other nutrients. But aside from its role as a healthy food, Bitter Gourd is especially valued

by diabetes for its known anti-diabetes properties. The traditional remedy is made by

pounding the raw fruits of Bitter Gourd into a bitter liquid, or by boiling the leaves and

fruits for a few minutes; the resulting water then drank as an herbal tea.

Today, you can find bitter gourd growing in fields across Asia, though it has also

become popular in the Caribbean and South America.


Theoretical Framework

Bitter gourd (Momordica charantia) is acknowledged to be nature’s silent healer.

It is a prospective herbal plant applied world widely in traditional systems of medicine

(TSM) to modern medicine. It is medically very effective for various diseases such as

diabetes, blood coagulation, cancer, menstrual stimulation and several diseases.

Momordica fruit is frequently used in TSM, because it is very potent for cure,

multidimensional function and reduces the consequences of diseases. Bitter gourd is well-

known to have hypoglycemic activity. The endeavor of this review is to comprehend the

knowledge of plants used in TSM and in applied biotechnology, for researches in

relation to formulate their use by eloquent their pharmacological properties, therapeutic

agents so that the data and information of this review could be utilized in drawing

approaches for coherent and more systematic and scientific use of medical plants in an

approach that can be complete point of view for scientific and technical analysis in

miscellaneous aspects. Here, we would like to light on its contribution in the field of

biotechnology, and few highlights from TSM. In addition, we will uncover the

supplementary medicinal properties of Momordica Charantia that will help researchers to

pull in concert data regarding the fruit effortlessly.

Chapter III
Method of Research

The researchers initially engaged in viewpoints of participants about the creak

product fresh lumpia bitter gourd given in the premises of the school. The problems have

been cited and other datum are gathered with the use of questionnaire. The experimental

method is facilitated in the research to determine the effectiveness product with the

student’s appeal and reaction.


Respondents of the Study

The respondents for the study are the children’s aged 7 to 12 years old the target

population with sampling methods as specified. The bitter gourd as fresh lumpia product

is presented to the respondents to assessed, with inclusive standards of questions based

upon the identified criteria which will be gathered to weigh the stand of the study and for

the implementation on further judgment. The 30 children were chosen based on random

selection.

Sampling Technique

The Experimental Method was used in this study. The method weighs the

effectiveness of the Bitter Gourd as fresh lumpia in terms of taste, affordability and

health benefits. A method done by performing and creating a product to be assessed and

used as a medium for the respondent’s subjective reaction. A questionnaire is provided,

aside from the mentioned, for every respondent to fill-up after assessing the product. The

questionnaire consists of questions answerable by ‘Yes’ or ‘NO’.

Locale of the Study

This study will conducted at Brgy. Zone 5, Aslong Libmanan Camarines Sur on

randomly selected students. The participants consist of 30 participants, with fifteen (15)

boys and fifteen (15) girls all activities are to be held in this barangay. It is well known

province in the municipality of Libmanan.


Data Gathering Procedure

The Researchers prepared a home-made snack which are properly and aseptically

stored. The researchers provide the snacks to the thirty randomly selected children’s at

Brgy. Zone 5, Aslong Libmanan Camarines Sur. The questionnaires are then distributed

for the respondents to answer. The questionnaire consists of questions with it’s

corresponding possible answers.

Development Procedures

The preparation of Fresh Lumpia Bitter Gourd as follows:

Prepare fresh bitter gourd. Wash the bitter gourd and then cut into small pieces.

Prepare a bowl with water and salt soak it for 3 minutes. Prepare the minced meat and

wash it several times until the blood disappears. Sliced onion and garlic. Sauté the garlic

and onion and follow with the meat and bitter gourd. Then after simmer, prepare the

home-made wrapper and the stewed bitter gourd. Wrap it in the home-made wrapper.

Conceptual Paradigm
The figure above is about the conceptual paradigm of the research study about the

Figure 2 is about the ingredients used in making the fresh lumpia bitter gourd.
These includes the following: 2 cups of bitter gourd, 1 cup of ground meat, 1 tablespoon

of onion,1 tablespoon of garlic, 1 teaspoon of black pepper, 2 tablespoon of salt, 2 cups

of water. For making a home-made wrapper are, 3 pieces of eggs, 1 cup of cornstarch, 1

cup of bitter gourd, ½ cup of water and ¼ cup of sugar. And also for making sauce for the

fresh lumpia are, 1 cup of all-purpose flour, 1 piece of Knorr cubes (meat flavor), 1

teaspoon of oyster sauce, ¼ cup of water, and 1 teaspoon of garlic.

Chapter IV

Presentation, Analysis, Interpretation


This chapter overseen the presentation, analysis and interpretation of data

gathered by the researchers. The purpose of this study is to identify the acceptability of

fresh lumpia bitter gourd to the students of Homobono H. Gonzales National High School

and its health benefits. Questionnaires were given to the children’s aged 7 to 12 years’

old who participated the conducted survey which contains several questions regarding

about the lumpia bitter gourd.

This shows the interpretation of the data gathered by the researchers in every

questions provided in the questionnaires.

lumpia bitter gourd looks very presentable to the public while, 10 of them agreed that it

was presentable. While the texture of the fresh lumpia bitter gourd was said to is large

According to the results, it was shown that the fresh lumpia bitter gourd was

highly accepted by the students who participated the survey and the research. Due to its

savory taste and catchy taste, it suits the taste buds of the students. Even it was made

from the bitter gourd it doesn’t affect the taste of how fresh lumpia tastes like.

CHAPTER V
SUMMARY, CONCLUSION AND RECOMMENDATION

This study was conducted for the purposes of determining the acceptability rate of

the fresh lumpia bitter gourd and to know if it will be beneficial to both farmers and

consumers. Also, if it has a health benefit to our body. The experimental method was

used and the questionnaire technique was conducted in gathering all the needed data’s.

The inquiry and the research was conducted in school year 2020-2021.

The bitter gourd or momordica charantia in its scientific name has a lot of

product and delicacies that can be derived from its seeds to the vegetable itself. As part of

the experiment, the researchers come up with a product named fresh lumpia bitter gourd.

The bitter gourd was soak in a water with salt then was mixed with other ingredients such

as ground meat, onion, garlic, and black pepper. Then, a survey was conducted to the 30

children’s. 15 males and 15 females. Questionnaires were provided to them and they

were asked to answer it truthfully to come up with the desired outcome and result of the

experiments.

To sum up the results of the data’s which was gathered by the researchers, The

fresh lumpia bitter gourd was accepted by the students due to its savory taste and just the

right taste of it. While on the other hand it was said to have some scorches of wrapper. It

happened because the fresh lumpia bitter gourd mixture wasn’t mixed and stirred well.
Also, aside from the taste and its catchy appearance it also has a lot of health

benefits to our body.

Recommendation
It was recommended that the fresh lumpia bitter gourd mixture must be mixed

well to avoid scorching and the bitter gourd must be added more salt to remove

bitterness to the fresh lumpia mixture.
