This is my favorite bagel recipe so far

I personally love the bread recipes with Tangzhong (water roux)!

when I add tangzhong in my bread dough, the bread gets extra moist.
Also, it stays soft longer than the one without it!

Ingredients & Instructions

Bagel (10 ea)
Ingredients:

For tangzhong : water 100g + bread flour 50g

Bread flour 500g

powdered milk 30g

Sugar 30g

Salt 10

Honey 20g

Active dry yeast 7g

Olive oil 20g

Butter 20g

Cold water 280g

For water bath : water 1000g + brown sugar 50g

Your favorite bagel toppings (sesame seeds, everything bagel seasoning,


etc.)

Instructions:

1. For Tangzhong : mix water and flour in a saucepan and cook on low heat
until it gets thickens. wrap up and and let it cool.

2. In a bowl of stand mixer fitted with a dough hook, add every ingredients
except butter.

3. beat the dough on low speed for 6 minutes. Add cubed butter and mix on
medium speed for 4~6 minutes.

4. Place the dough in bowl, cover it with a damp cloth or plastic wrap, and let
it rise in a warm place until it gets doubled in size.

5. After the dough has risen, divide it into 10 pieces. Roll each piece into a ball,
cover with damp cloth and wait for 15 minutes.

6. Shape the bagels (see the pictures).

7. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius)

8. In a large pot, bring water and sugar to a boil. Boil the bagels about 10~20
seconds on each side.

9. Place the boiled bagels on a baking sheet and add your favorite toppings.

10. Bake in the preheated oven for about 10 minutes, until they are golden
brown.

11. Let the bagels cool on a wire rack before serving.

Tips to make the best bagels
Use cold water when you beat the bagel dough.

Use room temperature or cold tangzhong.

Do not boil the bagels for too long (10~20 seconds each sides is good).

Adjust the mixing time with your own stand mixer

Adjust oven temperature and baking time with your own oven

Do the windowpane test to check the gluten development.
