The present paper aimed at evaluating nutritional value and fatty acid profile of muscle textures of the Caspian Sea wild carp, farmed wild carp and farmed carp. No significant differences were found between chemical composition indices (total lipid, crude protein, moisture) (p>0.05). However, ash contant was significantly higher in wild carp compared with farmed wild carp. There were not significantly differences of SFA, MUFA, PUFA, ω 3, ω 6, EPA+DHA, ω-3/ω-6 and PUFA/SFA between farmed wild carp and farmed carp. But following determination of fatty acid profiles in the Caspian Sea wild carp and farmed wild carp, fatty acid compositions in three groups of fish were found to be significantly different in terms of SFA, MUFA, PUFA, ω 3, EPA+DHA, ω-3/ω6 and PUFA/SFA. Fatty acids have several effects on immune responses. The present study was performed in order to determine the effect of replacement of fish oil (FO) by canola oil (CO) on blood serum enzymes, i.e. Aspartate aminotransferase (AST), Alanine aminotransferase (ALT), Lactate dehydrogenase (LDH), and Alkaline phosphatase (ALP), of the rainbow trout (Oncorhynchusmykiss).Four experimental diets were formulated with partial or complete (0, 33%, 67%, and 100%) replacement of FOby CO.Fish were fed at 4% of their body weight three times a day (at 8, 12, and 18) for 50 days.Average temperature, dissolved oxygen, and pH were 14°C, 7.5 mg.lit, and 7.32, respectively. With considering the abundant sources of Kilka fish in Caspian Sea, the aim of this study was to produce a new product from Kilka in industrial scale with two different types of batters (simple and tempura batter) in order to increase human consumption and evaluation of chemical, microbial and sensory properties.The Kilka fish were battered in the simple and tempura batter, then the fish were breaded with conventional breading crumbs and then pre-fried at 170°C for 30 sec in sunflower oil .The fried samples were immediately frozen through continuous method at -40°C in a spiral freezer and they were packaged. The samples were kept at -18°C. Chemical, microbial and sensory properties were performed on the fried breaded Kilka fish a day after freezing. This study aimed to investigate the effects of dietary olive leaf extract (OLE) on intestinal immune-related genes expression of tumor necrosis factor alpha (TNFa), interleukin 1 beta (IL1b), lysozyme (LYS), and mucin2 (MUC2). For this purpose, common carp (~15 g) were fed with 0 (control), 0.1 (OLE-0.1), 0.5 (OLE-0.5) and 1 (OLE-1) % OLE diets for eight weeks. The fish were sampled after one and eight weeks to study intestinal TNFa, IL1b, LYS, and MUC2 gene expressions. The results showed that dietary OLE administration significantly up-regulated intestinal TNFa gene expression after one (all OLE-treated groups) and eight (OLE-0.5) weeks. Moreover, OLE-0.1 and OLE-1 groups showed up-regulated intestinal IL1b expression, after one week, all the OLE-treated fish had significantly higher intestinal IL1b expression, after eight weeks. OLE had no significant effects on LYS gene expression after one week, but OLE-0.1 and OLE-0.5 had significantly higher gene expressions after eight weeks...
