Recently, when talking to a young group of future Italian hotel managers, I was asked: ' Sustainability good practices are a powerful branding strategy, when those practices are being communicated correctly. Nevertheless, do we question how the guest feels like when we try to convince we are sustainable?'. At first, I felt uncomfortable with the question…I thought that I was missing something or that the young man was trying to investigate my true knowledge. Then I guessed that it was a unique opportunity to focus on sustainable good practices from a different point of view, and, for sure, the most important one: the guest's will to be sustainable. 'I'm a good person for 350 days a year: I take care of my family, I work all day, I pay attention to the environment and try to be the most respectful I can. But, when I'm on holiday, I do not want to have a 'finger pointed' about the application of good sustainable practices: I know some of them and I'm even ready to learn even others…but no stress, please!'. I can imagine this is a common thought for many of us when looking for a place to relax. Hoteliers must keep this in mind: convey guests to be sustainable, without talking about sustainability. Transform your reduction of meat in menus (meat consumption has a strong carbon footprint) by introducing seasonal vegetables with great recipes, which stimulates curiosity and greed even in the biggest meat-eater! Engage guests to use bikes for free, if they can get to beach easily, without moving their car…transform and personalize your bikes with baskets and children sits to help them to feel comfortable, even better than using a car in a place with no parking…Invite local people to meet tourists : invent a new kind of guided tour with an experienced local person who does not only speak about history and museums, nay he/she knows about the secret, hidden places, about the special cafeterias with a unique history….visit an open market with a housewife or a cook and learn how to recognize fresh fish or how to taste a water melon. Sustainability must be just not an ethical matter. It must become awareness and practice of the only possible way of living , spontaneously. Share your comments and opinions!

The Mediterranea Diet, as Intangible World Heritage (UNESCO 2013) is here reviewed during a coversation between two friends, while sitting around a table, for lunch, in Nicotera (the Calabrian village in Southern Italy, where Prof. Ancel Keys started his pilot survey about the Mediterranean lifestyle and alimentary habits, in 1957). The Mediterranean Diet is nowadays considered a concrete metafore of 'comprehensive ecology' and sustainability: by two words, 'moderation' and 'respect' The Mediterranean Diet goes far beyond the mere alimentary aspect and embraces the urgent need of respect and moderation towards oneself, towards all human beings and the environment. But, everything begins with the fuel of life, with food. This is the the starting point to be considered.
