    Digitalization is a largely ongoing process, affecting the sustainability of the social, economic and administrative systems of all countries. Our work focuses on the public sector and specifically on the university system. We explore the challenge of digital change and its contribution to transparency and anti‐corruption policies, with a look to the opportunities and risks associated with the adoption of digital approaches. Using the content analysis tool, we investigate the efforts of Italian universities in digital transformation and their ability to integrate digitalization with anti‐corruption strategies. Findings reveal that most of these institutions are actively addressing the challenge of digitalization, but few of them consider it as a strategy to strengthen anti‐corruption and transparency, and even fewer assess the risk deriving from adoption of digital technologies. In a previous paper we investigated the characteristics associated by consumers in related to the products “Made in Italy”, detecting the presence or absence of a willingness to pay and quantifying the amount of “premium price” that the consumers are willing to pay for such products. It is come to light both a robust recognition of the products “Made in Italy”, in terms of high-quality, and a manifested willingness to pay, incrementing the price in a range from 10% to 30%, by consumer-side (Cappelli et al., 2016).     Access to healthy food and the introduction of sustainable nutrition practices are two important issues today. The COVID-19 pandemic has brought new challenges to food security but it has also provided opportunities for local food production. The discussion on local food has been gaining attention in recent years, but there is still a lack of clear understanding of the term ‘local food’ in the literature. The relationship between local food and sustainability issues is still unclear and has various connotations. This discordance leads to further discussions on whether buying local food should be considered a sustainable behavior and whether consumer preference for local food can be perceived as a sustainable practice.     The present paper discusses the results of empirical investigation aiming at analyzing the effects Six Sigma implementations in Italian companies. As it is well known, the Six Sigma methodology is focused on reducing business processes variability, improving the effectiveness and efficiency. Regarding the approach of Italian companies towards Six Sigma, the research question addressed is: Does really exist an improvement expressed in terms of economic performance, customer and employees satisfaction? In order to measure what are the effects and the benefits of Six Sigma implementation projects, it was specifically constructed for the survey a questionnaire characterized by 27 questions, using a Likert-type rating scale.

    – The potential of Mid-infrared spectroscopy coupled with chemometric tools was evaluated for the authentication and discrimination of PDO (Protected Denomination of Origin) buffalo mozzarella produced by traditional and industrial cheese-making processes. Samples of mozzarella provided by local producers and supermarkets were analysed through both official destructive methods and Attenuated Total Reflectance-Fourier transform infrared spectroscopy (FTIR/ATR). In particular, destructive methods allowed to determine the content of fatty substances, proteins, moisture and total nitrogen. The results show that only the conjunction of MID-infrared spectroscopy with chemometric analysis can provide a satisfying solution to discriminate between the different types of mozzarella.

    PurposeInvestigate the behaviour and the habits of the consumers from central-southern Italy in relation to extra olive oil consumption, focussing on the impact of protected designation of origin (PDO) and EU–organic certification on purchase intention and quality perception.Design/methodology/approachA specific questionnaire was submitted to 160 consumers; a subsample of ten experts, ten semi-experts and ten habitual consumers of olive oil tested, through a blind test first and a normal one then, three Italian samples: an extra-virgin olive oil (EVOO) without certification, an organic EVOO and a PDO EVOO, which were characterised also from a chemical-physical point of view.     Social isolation during the pandemic contributed to the transition of educational processes to e-learning. A short-term e-marketing education program for a variety of students was introduced in May 2020 and is taught entirely online. A survey was conducted regularly in the last week of training using Google Forms, and three cohorts were surveyed in July, September, and December 2020. A high level of satisfaction indicates an interest in the content and a positive assessment of the level of comfort of an organization adapted to the needs of students; this positive result contrasted with the negative opinion of the remote learning in Russia since March 2020, and this surprising satisfaction of students has motivated the study to try to explain its reasons.     Previous publications have shown that Italian consumers are willing to pay a premium price for certain categories of Made in Italy products. The premium price has proven to be higher in the food sector. This study provides an extensive literature review on the topic and aims to test a hypothesis regarding consumer preferences towards some Made in Italy food products of mass consumption (olive oil, meat and fish), with specific reference to the value systems that influence the purchase. This paper studies the correlation between the potential willingness to pay a premium price for the mentioned products and the characteristics of consumers’ sample. The results obtained confirm the willingness to pay for Made in Italy products and correlate the willingness to pay a premium price with the level of education of the respondents to the questionnaire.     The paper is part of a broader research project studying consumer’s attitude towards “Made in Italy” products through empirical investigation. The research questions addressed are: 1) Does recognition in terms of the qualitative characterization of “Made in Italy” products exist? And if so, 2) are people willing to pay, in quantitative terms, a premium price for such products? From a theoretical standpoint, the research seeks to fill a gap in the literature, since studies combining the “made in” characteristic with measured “willingness to pay” are neither conventional nor numerous.     This paper examines on a wider scale, quality management in Italian higher education institutions, and then progresses to focus specifically on the case of the Master Course in Global Economy and Business (GLEB), held in the University of Cassino and Southern Lazio. An analysis of the way in which the University of Cassino manages quality is undertaken to identify the responsibilities of those accountable for quality assurance. A preliminary study was carried out through the completion of a digital survey distributed to GLEB graduates, to monitor the success of the course. The results obtained highlight that this course is quite appealing to students, and what also emerges is how innovation and improvement are the foundation of quality education. Being only the first step towards a more exhaustive evaluation, this analysis must be extended by collecting more data, to compare the results with similar courses in other universities through a benchmarking process.
