To investigate the influence of the stage of readiness for changes in food consumption variation among adolescents participating in school-based community trial in Duque de Caxias (RJ), Brazil. It is a secondary analysis of a one-year randomized community trial to prevent excessive weight gain in students attending the 5th grade in 20 public schools in the municipality of Duque de Caxias. The activities conducted discouraged the consumption of sweetened beverages and cookies and encouraged the consumption of fruits and beans. A food frequency questionnaire was applied at the beginning and at the end of the study. The stages of readiness for behavioral change vary in a scale from (1) "I don't think of changing diet" to (5) "I'm already changing my diet successfully". For the longitudinal analyses, we used generalized linear mixed models. There was a greater change in the consumption of fruit and soft drinks among participants in the intervention group who were in the action stage, compared to participants who did not think about changing their diet. The proposed strategy may be used to identify population groups with motivation for changes in dietary behavior.

The aims of the present review are (1) to develop a framework of key methodological elements related to national food consumption surveys, (2) to create an inventory of these properties of surveys performed in the continents North-America, South-America, Asia and Australasia, and (3) to discuss and compare these methodological properties cross-continentally. To characterize energy and macronutrient intakes in Brazil and to describe the top food items contributing to energy and macronutrient intakes. Two non-consecutive 24 h dietary records were collected and energy and macronutrient data were adjusted for usual intake distribution. Brazil has a high admixture of Blacks and Whites, making it possible to compare the prevalence of hypertension among Blacks, Whites, and Mulattos. A population-based health and nutrition survey was carried out in 1996 in the city of Rio de Janeiro, Brazil. Blood pressure, weight, height, food frequency information, and skin color were obtained from a sample of 2,802 private household residents aged 20 years or older. Hypertension was defined as systolic blood pressure >140 mm Hg and/or diastolic pressure >90 mm Hg or the use of antihypertensive medication. The prevalence of hypertension among men was 12.0% among Whites, 13.8% among Mulattos, and 14.4% for Blacks. For women, these prevalences were 12.0%, 16.4%, and 20.2%, respectively. After adjustment for age, calcium and salt intake, physical activity level, body mass index, and waist-hip ratio, we observed (among women only) a trend toward increasing prevalence of hypertension with increasing skin darkness. The adjusted odds ratio of hypertension was 1.52 for Mulatto women compared to Whites and 2.27 for Blacks compared to Whites (P<.05). With further adjustment for income, the odds ratios were reduced to 1.30 (95% CI 0.86-1.95) and 1.75 (95% CI 1.04-2.94). Black women showed increased risk of hypertension independent of socioeconomic factors or overweight status.

OBJECTIVE: To estimate the prevalence of inadequate nutrient intake in the Brazilian elderly. METHODS: This study was based on data from the National Dietary Survey, part of the Household Budget Survey 2008-2009. All individuals aged 60 and over, totaling 4,322 individuals, were included. Individual food intake was obtained from food records from two non-consecutive days. The habitual intake for each nutrient was estimated by the National Cancer Institute method, in which sex and region were included as covariates. The prevalence of inadequate nutrient intake was estimated stratifi ed by sex and region using the EAR method to defi ne cut-off points. RESULTS: A high prevalence of inadequate intake (> 50%) of vitamins E, D and A, calcium, magnesium and pyridoxine was observed for both sexes. Cardiovascular diseases are the leading cause of death and hospital expenses in the state of Mato Grosso, Brazil. To describe the temporal variation on risk and protective factors for cardiovascular diseases in adults (≥18 years old). Data were obtained from population-based telephone surveys carried out between 2006 and 2009 in Cuiabá, the capital of Mato Grosso, Brazil. The prevalence of smoking, alcohol abuse, markers of diet quality consumption, physical activities, leisure, domestic work, and commute was estimated. Statistical significance of temporal variations in these estimators was estimated by logistic regression models, whose dependent variables were the analyzed risk factors (absent = 0; present = 1) and independent variable was the year of the survey. There was an increase in the proportion of men who reported to never have smoked (from 53 to 61%, p = 0.04). The frequency of regular soft drink consumption was reduced by 23% (p < 0.01). Overall, the reference to the consumption of fruits and vegetables increased by 19% (p = 0.02), and among men this increase was clearer (49%; p < 0.01). There was a reduction in domestic work (p < 0.01) and in leisure physical activity among women (from 14 to 10%; p = 0.02). Conversely, there was an increase in the proportion of women and individuals older than 40 years of age who make active commuting every day. Favorable changes in cardiovascular risk and protective factors were mostly observed among men, young adults, and those with more than eight schooling years.

Identification of major sources of energy in the diet helps to implement dietary recommendations to reduce obesity. To determine the food sources of energy consumed by Brazilians, we used the traditional method of ranking energy contribution of selected food groups and also compared days with and without consumption of specific food groups. Analysis was based on two non-consecutive days of dietary record from the Brazilian National Dietary Survey, conducted among 34 003 Brazilians (aged 10 years or more), taking into account the complex design of the survey. Comparison of days with and without consumption gave more consistent results, with sweets and cookies as the most important contributors to energy intake, increasing 992 kJ/d (95 % CI 883, 1096) for those days when consumption of cakes, cookies and desserts was reported compared to days without their consumption. To describe the most commonly consumed foods in Brazil. This analysis is based on food intake data obtained on the first of two non-consecutive days' food records from 34,003 subjects aged 10 or over, resident in 13,569 households selected to participate in the National Dietary Survey 2008-2009 from the probabilistic sample defined for the Household Budget Survey 2008-2009. Consumption patterns were analyzed according to gender, age, regions and per capita family income. The most frequently recorded foods were rice (84.0%), coffee (79.0%), beans (72.8%), bread (63.0%), and red meat (48.7%). The intake of fruit juice (39.8%) and soft drinks (23.0%) is notable, as is the low intake of fruit (16.0%) and vegetables (16.0%). Data from the National Dietary Survey, from the 2008-2009 Household Budget Survey, were used. Food consumption was evaluated through food record on two non-consecutive days. A total of 21,003 individuals (52.5% women), between 20-59 years old, participated in the survey. Usual nutrient intake was estimated according to the National Cancer Institute method. The purpose of the present study was to evaluate the reproducibility and relative validity and calibrate the dietary intake assessment of a food frequency questionnaire (FFQ) using a random sample of 195 adults aged 20 to 50 years from the Central-West Region of Brazil. The reference method used by the study was two 24-hour recalls (24hR) that provided energy-adjusted deattenuated food intake data for comparison purposes. With respect to reproducibility, the average weighted kappa was 0.43 and exact agreement was 41.5%. With regard to relative validity, correlation coefficients ranged from 0.32 (thiamin) to 0.51 (carbohydrates), with a mean of 0.41. Deattenuation and adjustment for energy intake decreased most correlation coefficients in relation to crude values. The food frequency questionnaire showed good reliability and moderate validity for most nutrients based on classification into quartiles of energy and nutrient intake. The calibrated means of the FFQ were more similar to the means estimated from the 24hR and showed lower standard deviation.

We examined whether drinking water per se is associated with drinking less of other beverages and whether changes in BMI are associated with the intake of water and other beverages. Secondary analysis of a randomized trial of fourth graders followed over 1 year. Public schools in the metropolitan area of Rio de Janeiro, Brazil. Participants were 1134 students aged 10-11 years. At baseline, a higher frequency of water consumption was associated with a greater daily intake of fruit juice (P = 0.02) and a higher daily frequency of milk (P = 0.005). In the intervention group, the baseline frequency of water consumption was negatively associated with weight change over 1 year but without statistical significance (coefficient = -0.08 kg/m2; 95 % CI -0.37, 0.24 kg/m2), whereas fruit juice intake frequency was positively associated with weight change: each increase in fruit juice intake of 1 glass/d was associated with a BMI increase of 0.16 (95 % CI 0.02, 0.30) kg/m2. Our findings do not support a protective effect of water consumption on BMI, but confirm consumption of juice drinks as a risk factor for BMI gain. Students who reported high water consumption also reported high intake of other beverages; therefore, the promotion of water consumption per se would not prevent excessive weight gain.

To examine the patterns of consumption of foods high in solid fats and added sugars (SoFAS) in Brazil. Cross-sectional study; individual dietary intake survey. Food intake was assessed by means of two non-consecutive food records. Foods providing >9·1% of energy from saturated fat, or >1·3% of energy from trans fat, or >13% of energy from added sugars per 100 g were classified as high in SoFAS. Brazilian nationwide survey, 2008-2009. Individuals aged ≥10 years old. Mean daily energy intake was 8037 kJ (1921 kcal), 52% of energy came from SoFAS foods. Contribution of SoFAS foods to total energy intake was higher among women (52%) and adolescents (54%). Participants in rural areas (43%) and in the lowest quartile of per capita family income (43%) reported the smallest contribution of SoFAS foods to total energy intake. SoFAS foods were large contributors to total saturated fat (87%), trans fat (89%), added sugar (98%) and total sugar (96%) consumption. The SoFAS food groups that contributed most to total energy intake were meats and beverages. Top SoFAS foods contributing to saturated fat and trans fat intakes were meats and fats and oils. Most of the added and total sugar in the diet was supplied by SoFAS beverages and sweets and desserts. SoFAS foods play an important role in the Brazilian diet. The study identifies options for improving the Brazilian diet and reducing nutrition-related non-communicable chronic diseases, but also points out some limitations of the nutrient-based criteria.

To evaluate the validity of food photographs used to support the reporting of food intake with an FFQ designed for adolescents from Rio de Janeiro, Brazil. A set of ninety-five food photographs was elaborated. The photographs' evaluation process included the acknowledgement of foods and portions in the pictures. In the identification of foods (ninety-five photographs) and typical portions (twelve photographs), the adolescents were requested to answer a structured questionnaire related to the food photographs. The identification of the portion size of amorphous foods (forty-three photographs) was performed using three different portion sizes of actual preparations. The proportions (and 95% confidence intervals) of adolescents who correctly identified foods and portion size in each photograph were estimated. A public school in Niterói, Rio de Janeiro State, Brazil. Sixty-two adolescents between 11·0 and 18·9 years old, randomly selected. At least 90% of adolescents correctly identified the food in ninety-two photographs and the food in the three remaining photographs was recognized by 80-89% of the adolescents. At least 98% of the adolescents correctly identified eleven typical or natural portions in the food photographs. For amorphous foods, at least 70% of teenagers correctly identified the portion size in the photograph of thirty-one foods; for the other photographs, the portion size was correctly recognized by 50-69% of the adolescents for eight foods and by less than 50% of adolescents for four foods. The analysed photographs are appropriate visual aids to the reporting of food consumption by adolescents.
