The SERVQUAL model was redesigned in relation to the context of the local company MetroPizza, in Los Mochis, Sinaloa; the main change was the orientation of the visual that corresponds to the intensive use of the image of the transnacional franchises, to the taste, that represents a competitive advantage in local firms that know the flavor in the culture of regional. The differences between the expected, and perceived service quality were analyzed through the dimensions proposed by Zeithaml et al. The results show in the tangible, that customers expect more flavor than the image.

The visibility and success ofWireless Mesh Network (WMN) deployments has raised interest among commercial operators in this technology. Compared to traditional operator access networks WMNs have the potential to offer easier deployment and flexible self-reconfiguration at lower costs. A WMN-type architecture considered as an alternative for an operator access network must meet similar requirements such as high availability and guaranteed QoS in order to support triple-play content provisioning. In this paper we introduce an architecture of such a Carrier-grade Wireless Mesh Access Network (CG-WMAN). We then present our contribution, an approach to seamlessly integrate unidirectional broadcast cells (i.e. DVB-T) into such a CG-WMAN. This allows higher layer protocols to utilize broadcast cells like regular mesh links, where beneficial for a given payload and receiver distribution. We then present a typical use case and discuss for which combinations of traffic type, user distribution and QoS requirements the use of longer range broadcast technologies can help to improve the overall CG-WMAN performance in terms of throughput and reliability.

This research, consisting of a descriptive study with a non-experimental design, involved an analysis to determine the validity and reliability of an instrument composed of seventeen items aimed at assessing the quality of service in the financial area of a public university by means of four variables: tangibility, reliability, responsiveness and empathy. The methodological strategy included the design of the measuring instrument; verification of the validity of content and construct; and analysis of internal consistency by means of Cronbach’s alpha. The instrument was applied to 152 users of the service, attaining a reliability coefficient of 0.943. The results show that with respect to specific concepts, the questions were clear; nevertheless we found it necessary to relocate items and rename variables, which resulted in a valid and reliable instrument for measuring the quality of service in the context under study.

This paper discusses the design of a model for service quality in hospitality concepts and proposals using the Viable System Model (VSM) of S, Beer. The object of study is a human activity system whose complexity must be addressed through systemic methods. The study identifies the elements to be considered for a system design approach (with emphasis on quality of service) through the establishment of internal and external environments that integrate it. Through the analysis it is determined that the hotels can function as viable systems, ie may be able to absorb the complexity through the generation of internal tools to manage it.

Hospitality research includes many studies that combine and revisit the quantitative–qualitative debate, and review the arguments for and against using mixed-methods. The aim of this paper is to demonstrate the application of qualitative methodologies based on the combination of techniques which also include quantitative elements in addition to those pertaining to qualitative techniques. The research aims to specifically identify the most important managerial factors which, from the point of view of hotel chain executives, serve to improve the quality of the service they provide. The techniques used are concept mapping and qualitative optimization, both of which are qualitative methodologies though they include quantitative elements to overcome the subjectivity deficits typically found in qualitative methodologies. In addition, the combination of both techniques leads to greater precision of the results obtained. Our methodological proposal combines concept mapping with qualitative optimisation, thereby improving the prioritisation and hierarchical ordering of the ideas obtained and structured. Instead of working with each cluster’s average score in terms of importance (as defined within the concept mapping model), our contribution is based on prioritising these based on their distance to the optimal reference. This allows for experts’ evaluations of each idea in terms of its importance to not be strictly quantitative, that is, the experts are not obligated to assign numbers to their evaluations; rather, they can assess ideas based on qualitative labels.
