    This study aims to examine freeze drying techniques and the effect of freeze drying techniques on the quality of freeze-dried strawberries. The material used are strawberries obtained from farmers in Lembang, West Bandung Regency, Bandung. The fruit having postharvest age of 14-15 days after the beginning of fruit formation. Freeze drying was carried out using Buchi type Lyovapor L-200 freeze dryer.  The research stage consists of sample preparation, freezing, freeze drying, and quality observation. Freezing was carried out for 110 to 120 minutes until the temperature of the fruit reaches temperature of -12°C to -15 °C.  Freeze drying was carried out at temperature of -46 oC for 12 hours, 24 hours, and 36 hours. The experimental design used in this experiment was a complete randomized factorial design. The first factor was vacuum pressure (0.5 mBar and 0.1 mBar) and the second factor was drying time (12 hours, 24 hours and 36 hours). The experiment was conducted with 2 repetitions. ...

    Serangan cendawan Thielaviopsis paradoxa dapat menurunkan kualitas buah salak selama penyimpanan. Salah satu cara penanganan pascapanen untuk mempertahankan kualitas buah salak pondoh ialah dengan penambahan bahan tambahan pangan kalsium klorida dan bahan pelapis kitosan. Penelitian ini bertujuan menguji pengaruh CaCl2 dan kitosan untuk mengendalikan T. paradoxa, penyebab busuk hitam pada buah salak pondoh. Perlakuan terdiri atas CaCl2 6%, kitosan 1.5%, CaCl2 6% + kitosan 1.5%, dan kontrol.  Hasil penelitian menunjukkan bahwa kitosan 1.5% lebih efektif dalam mempertahankan kualitas buah salak selama 12 hari penyimpanan dibandingkan dengan perlakuan lainnya. Perlakuan ini menghambat peningkatan populasi mikrob, persentase kerusakan daging buah, persentase susut bobot, dan penurunan nilai organoleptik dibandingkan dengan kontrol pada suhu ±28 °C dan kelembapan relatif 65%–75%.     Mangga gedong gincu merupakan salah satu varietas mangga yang menjadi primadona bagi masyarakat lokal maupun mancanegara karena memiliki kekhasan tersendiri jika dibandingkan dengan mangga jenis lainnya. Tujuan penelitian ini adalah untuk menganalisis : 1) Karakteristik usahatani mangga gedong gincu di kabupaten Indramayu, 2) Kelayakan finansial usahatani mangga gedong gincu, dan 3) Sensitivitas usahatani mangga gedong gincu terhadap perubahan biaya produksi, harga jual, jumlah produksi dan sewa lahan. Pengumpulan data dilakukan dengan cara observasi dan wawancara terhadap 16 orang petani responden pada bulan Oktober-November 2019. Hasil penelitian menunjukkan bahwa mangga gedong gincu memiliki potensi besar untuk terus dikembangkan.  Biaya investasi awal yang dibutuhkan sebesar Rp 52,226,667,-/ha dan untuk pemeliharaan selanjutnya rata-rata Rp. 8,284,000 -/ha/bulan.     In the processing, the red ginger powder was dried at 50°C. Red ginger powder is hygroscopic, so it is easy to absorb moisture. This research aims to determine (i) the isothermic absorption curve model in red ginger powder with different fineness modulus and (ii) the expiration date using the critical moisture content method in various types of packaging materials. Moisture sorption isotherm of red ginger powder was determined by the static gravimetric method at 300C. The relationship equilibrium moisture content between relative humidity (RH) is described by the Hasley, Chen-Clayton, Henderson, Caurie, and Oswin Models. The Estimated shelf life is determined using the ASLT (accelerated shelf-life testing) method and calculated using the Labuza model with a critical water content approach. Seiiring dengan bertambahnya jumlah penduduk, meningkatnya tingkat pendidikan dan pendapatanmaka polakonsumsi masyarakatberobah dan menuntut pangan (beras) yang bermutu baik. Tulisan ini membahas tentang teknologi pengolahan beras ke beras yang meliputi kebutuhan mesin, level teknologi, kapasitas dan konfigurasi mesin yang dapat dijadikan pertimbangan bagi para investor yang tertarik untuk mendirikan usaha pengolahan Beras ke Beras (BKB). Hasil yang dapat disimpulkan adalah bahwa masalah kualitas merupakan hal penting yang harus segera diperbaiki. Rice mill (RMU) in Bogor Regency mostly do not have quality standard comply with Indonesian National Standard (SNI). The purpose of this study was to identify the quality of rice and milled rice produced by RMU in Bogor Regency and evaluate the suitability of the application of rice and milled rice handling in RMU to Good Handling Practices (GHP) and Good Manufacturing Practices (GMP). Every export comodities including melon need proper handlings of quarantine to disinfestation pests / diseases. One of quarantine technique which is appliable for melon is vapor heat treatment (VHT). Aims of this research are to make a simulation of heat distribution during VHT process inside melons, to observe VHT technique effects on melon qualities during storage, and to determine the optimum time of VHT process for melon. Finite difference method is used in designing the simulation using Visual Basic 6.0.     Pengemasan secara atmosfir termodifikasi (MAP) pada penyimpanan dingin merupakan cara yang tepat untuk menjaga kualitas dan kesegaran produk yang diolah secara minimal. Tujuan dari penelitian ini adalah untuk mengkaji pengaruh suhu terhadap permeabilitas gas pada plastik film untuk pengemasan secara atmosfir termodifikasi pada produk olahan minimal. Plastik film jenis polietilen stretch (ketebalan 10 mm) dan polipropilen (ketebalan 10 mm) digunakan dalam penelitian ini. Permeabilitas gas plastik film terhadap gas O2 dan CO2 dianalisis menggunakan kromatografi gas HP 5890 pada suhu 5, 10, 15, 20, dan 25 oC berdasarkan metode konsentrasi meningkat kondisi stabil. Hasil penelitian menunjukkan bahwa permeabilitas gas meningkat dengan meningkatnya suhu penyimpanan.     Juwawut is a food from the grains includes in Setaria italica (L.) P. Beauvois species. Juwawut in the form of flourhas long been a food ingredient in various countries such as in South-Eastern Europe, North Africa, Northern China, and India. Performance test needs to be conducted, includes characteristics of the engine: capacity, yield, shrinkage scattered, power requirements, efficiency and quality of the flour: particle size, degree of fineness, and moisture content of flour. Disc mill performance test conducted by using 1 kg of juwawut seed per treatment with four rolling speed or rotation per minute (rpm): 1,425, 2,850, 4,750, and 5,700 rpm, and using 80 and 100 mesh sieve. The perfomance test result showed that optimum capacity obtained at 5,700 rpm using 80 mesh sieve: engine capacity 20.43 kg/hour, engine yield 91.66%, and shrinkage scattered 1.77 %.
