ABSTRACT The present work was undertaken to determine the lipid materials of salted and unsalted whey as a byproduct of cheese industry. The general chemical analysis show that the salted whey contained lower amounts of lactase, proteins and lipids compared with unsalted whey. Whey lipids contained palmitic and oleic acids as the most abundant saturated and unsaturated acids, respectively. The presence of salt quantitatively altered the concentration of short-chain fatty acids due to its salting out phenomenon. A wide variety of hydrocarbons was found and C22, C23 constituted over 75% of the total hydrocarbons. The presence of salt in whey remarkably changed the hydrocarbon profile. The most predominant phospholipid was phosphatidyl choline followed by phosphatidyl inositol. Once more, the salt changed qualitatively and quantitatively the whey phospholipid pattern and led to precipitate some of the highly polar phospholipids with cheese during milk processing.

This early report is an example of the scientific analyses I am undertaking within the Tourism Guidance Department, Faculty of Tourism and Hotels, at Fayoum University, Fayoum, Egypt, as a part of my doctoral dissertation, “Food Heritage of Ancient and Contemporary Egypt with Particular Emphasis on Meat Products.” This work aims to explore ancient Egyptian traditions and habits that remain active in Egypt today by drawing links between ancient and contemporary Egyptian cultural heritage, particularly food issues. The traditional cultural and social heritage of Egypt includes different types of meat and meat-based products and meals, cooking traditions, and eating habits. This dissertation particularly aims to survey and describe different meats and meat-based products in Egypt, both past and present. The importance of the study also stems from its contribution to data related to the mobility of food traditions through Egyptian history, with a particular emphasis on meat products. This present paper examines the foreleg of steers (“oxen”) so familiar to Egyptologists. Because most previous studies have attempted to explain only the religious importance of the foreleg, the study offered here explores another important facet of the foreleg, namely its nutritive value, to scientifically examine possible nutritional reasons for the Egyptians’ selection of this specific part of the steer as an essential element in their funerary offerings.

Using websites as a channel for selling products and services is increasing globally. A majority of businesses, including hotels, have adopted websites to sell their services and satisfy their customers. Hotels can use websites to communicate directly with existing customers and reach potential new customers. This study investigates the features of hotel website competitiveness and how this affects the purchasing intentions of customers. The study used a questionnaire to collect data from 311 hotel customers to perceive their opinions on the Egyptian hotel website competitiveness. It has employed structural equation modelling to measure the effect of the antecedents of hotel website competitiveness and its effect on purchasing intention. The study reveals very useful results in the way it evaluated customers’ perceptions of hotel websites and depicts the factors that hotels have succeeded to offer in their websites to support competitiveness and attract customers to purchase hotel s...

Research has a key role in sustainable and comprehensive development for any country. The primary body producing research in Egypt is higher education institutions (i.e. universities). It is claimed that the academic research contribution to tourism industry development is limited. This study aims to investigate the challenges of university research. It examines the effect of research challenges on the tourism industry development. Employing structural equation modeling for analysis purposes of 151 questionnaire forms collected from academics, the findings revealed that lack of clear university research policies, weak financial support, university research environment, researchers-related factors, research output marketing challenges, and field-related challenges are negatively affecting the tourism sector development. This study is useful for research policy-makers to set up research priorities to meet the societal needs.

An appropriate nutritional care with adequate diet in hospitals helps patients to recover and enhance their quality of life. However patient satisfaction depends upon their perceptions of the quality of food they are served which in turn are affected by different factors. This study was conducted to assess the patients’ satisfaction with the food hospital services in Fayoum city, Egypt and to determine factors affecting patient’s satisfaction. A cross sectional study was conducted in four hospitals (teaching, public and two private hospitals) involving 415 patients. An interview questionnaire based on UK NHS for measuring patients satisfaction with food services. Our results revealed that there was positive correlation between patient’s satisfaction and different aspects of food services with more satisfaction in the teaching hospital than the public or private hospitals. Logistic regression analysis revealed that taste, appearance of food, smell of the ward, and food variety were s...

Exhibition venues are an important tool in promoting exhibitors’ destination image. Venues act as a communicative environment for both visitors and exhibitors. This study, using structural equation modelling to analyse responses of 1000 visitors to the Egyptian venue at the Expo 2015 in Italy, examines the effect of the venue image’s dimensions on improving the image of the Egyptian destination and the intentional visiting behaviour of participants. This study fulfils the research gap of testing the effect of exhibition venue image on promoting the exhibitor’s home country’s image. It is revealed that venue design, facilities, staff, available information and comfort have positively affected exhibitors’ country image promotion and the intentional behaviour of visitors. There are some insights to destination marketers on how to use expositions’ exhibitors to market their tourist destinations.

Polyclonal antibodies against an aldrin/dieldrin immunogen have been raised in rabbits and used as the basis of an enzyme‐linked immunosorbent assay (ELISA). This assay can detect dieldrin in milk in the range 5 μg ml to Ing ml reliably. This range differs in skimmed and semi‐skimmed milk, and in cream, reflecting the differences in fat content between these samples.
