Dear Colleagues,
In this special issue, we invite original contributions that increase our comprehension of how businesses operating in the tourism and hospitality industry may innovate their business models to promote sustainable goals. We look for papers, with theoretical insights, empirical data analysis, case studies or other suitable methods to shed new light on a variety of topics, such as:
integrating creative and cultural contents with sustainable tourism experiences;
using technology to innovate and increase the sustainability of business models;
developing indicators to evaluate the sustainability of business models in the tourism and hospitality sector;
innovating business model through co-creation for sustainability;
sustainable entrepreneurship;
experiences of sustainable tourism and hospitality SMEs.

ABSTRACT This Research Note analyses the contribution of Cittaslow (slow city) to the governance of tourism destinations by promoting the “slowness” perspective and the concept of sustainable development at the local level. This movement strongly encourages policy-makers to orient its various efforts essentially to define and implement policies, activities and initiatives for sustaining economic development, social well-being and environmental sustainability. In this way, it stimulates the improvement of quality of life for inhabitants and tourists of the involved destinations. Based on a qualitative analysis focused on “Cittaslow Association”, this study concentrates on opportunities and challenges for certified destinations as well as the linkages between practices defined by the Cittaslow Association and sustainable development. From a theoretical point of view, the Research Note contributes to destination development literature, offering significant highlights on the governance of tourism destinations. From a managerial point of view, it supports policy-makers underlining the main opportunities and challenges for a tourism destination in being certified as Cittaslow.

The paper examines the relationship between sustainable tourism governance and Cittaslow certification. As an organised network of small cities, Cittaslow is attempting to focus plans around the primary assets of locality-based identity, by choosing to preserve the unique characteristics of each urban area. Through a quantitative analysis, based on International Cittaslow certified cities, the paper aims to examine the effects of Cittaslow certification on local government for the implementation of more sustainable tourism governance. Findings reveal that interest in being certified acts as a stimulus to the definition and the implementation of more sustainable development, allowing a destination to become part of an international network of cities. The results highlight the need to fully exploit the various opportunities in order to be certified,
moving primarily from the implementation of policy initiatives coherent not only with the many requirements laid down by Cittaslow, but which have a positive impact on areas considered more strategic for small town development, while avoiding the waste of effort and scarce resources on other less focused projects.

Over the past few years, trends in tourist demand evidence the growing importance of the enogastronomic resources in destination attractiveness and image (Trunfio, 2006). Apart from a physical necessity, food represents the identity and uniqueness of a destination, providing travellers with insight into the culture of the place they are visiting. The taste of local products, the food preparation and appearance, and the whole eating environment creates memories that influence the travel experience.

Abstract: Scholars have made valuable contributions to the body of knowledge in the field of tourism; thus tourist satisfaction continues to be a topic of great interest. This paper investigates strategically the determinants of tourist satisfaction in three emerging tourism destinations of South Central Italy. The study applies qualitative and quantitative methods and introduces an empirical model for evaluating the factors affecting expectation and satisfaction of the tourist.

When local food is resourced by restaurants that establish good relationships with other local stakeholders, this can enhance local food production, shape the place identity and image of a destination. While some of these aspects are beginning to receive scholarly attention, there is still too little research that examines the attitude of restaurants toward using and marketing local food as a way of promoting local identity and reinforcing the competitiveness of a destination. This is particularly the case in Italy where, to our best knowledge, there have been no studies published on this topic. This study aims at investigating to what extent restaurant managers are leveraging on local and typical food and what are the main barriers or constraints that, in their view, do not allow them to exploit fully local/typical food products as a positive means of attracting tourists or indeed make the most of opportunities to network with other local stakeholders. To achieve this, the present study draws on quantitative research carried out on a sample of restaurants selected in two Italian regions (Molise and Sardinia). Findings identify key variables in the relationship between local gastronomy, restaurants and the competitiveness of the destination.

In academia as well as in practice there is increasing interest in governing the complex relationships within destinations. Nevertheless, a gap persists in knowledge on how to engage the local community in the tourism development process. This paper analyzes residents’ perceptions, attitudes, and involvement related to tourism development in a mature Italian “Sun, Sea and Sand” tourism destination. Exploratory factor analysis followed by cluster analysis revealed four groups of residents representing different levels of interest towards tourism ranging from euphoria to apathy. The findings and conclusions are useful for tourism policymakers in Italy and elsewhere where there is a critical need for stakeholder management and other strategic management approaches in the public realm.► Our study focuses on Residents’ Engagement in the tourism development process. ► A mature Italian “Sun, Sea and Sand” tourism destination is used as case study. ► Exploratory factor analysis and cluster analysis are conducted. ► A low level of community integration was discovered. ► Internal marketing campaigns are suggested to enhance resident involvement.

Sažetak This study uses institutional theory to investigate the isomorphic pressures affecting quality in the accommodation industry. Following questionnaire development, pretest, and a pilot study, survey data were collected from a sample of 324 accommodation firms in the tourism industry of the Molise Region of Italy. Mimetic, coercive and normative pressures were assessed for influence on firm behaviour regarding visible attributes associated with quality.
