1. Greeting
Greeting to the guest based on time.
Ex:
Good mornin Welcome to The Jempiring restaurant. How May I assist?
2. Asking the Reservation
ask about the reservation.
Ex:
Do you have reservation before?
If yes, ask for the guest's name and check that name in the guest reservation list.
Ex:
May I know your name sir/madam?
If no, offer choice of seating.
Ex:
How many people sir/madam?
Do you want to seat at smoking area or non-smoking area?
May I know your name sir/madam?
3. Escorting the guest
Escorting the guest to the table.
Ex:
You are on table number 11. This way/ please follow me sir/madam.
4. Seating the guest
Invite the guest to take a sit. *Table setting are adjusted to the number of guest.
Ex:
Take a sit, please.
5. Unfolding the guest napkin
Unfolding napkin to the guest. *do not forget to unfolding for ladies first
Ex:
Excuse me sir/ madam. May I?
6. Pouring Ice water
Pouring ice water to the guest's glass. Move around the table and serve every guest from
guest right side with right hand when possible.
Ex:
Excuse me
7. Presenting Menu
Present menu in the guest table and open the first page. Ask guest if they have a food allergy
or not.
Ex:
Excuse me sir/ madam, do you have an allergic or no?
If yes, Suggest items that have no possibility of containing the allergen such as simply
prepared food without sauces, garnishes and uncomplicated ingredients.
Ex:
We have a food that no possibility of containing the allergen
Then, avoid items that may have "hidden" ingredients that may cause allergic reactions.
Ex:
Sorry sir/madam, that food is containing of something that may cause allergic reactions
for you. I suggest you to order another menu.
Give guests time to choose the menu they want.
Ex:
Have a look sir/madam. If you ready to order, please call me
8. Taking Order
Staff should have a warm smile and polite attitude.
Ex:
Are you ready to order sir and madam?
9. Repeating Order
Repeat the guest order. Then, inform guest the expected service time
Ex:
Excuse me sir/ madam. I will repeat your order.
10. Serving Bread & Butter
Waiter is serving Bread & Butter to the guest from left side
Ex: This is your bread & butter, enjoy please
11. Serving Order
Make sure the food are made as ordered.
- Serve food to the guest.
- Always serve ladies first.
- Avoid reaching across guests.
- Move around the table and serve every guest from guest right side with your right hand
when possible.
- Repeat the name of the food and any special requests as you serve each food to ensure
that it is correct.
Ex:
Excuse me sir/ madam, this is your order.
Leave the table by saying:

Enjoy your meal
12. Clearing Up
Wait to clear glasses and plates until more than one guest at a table is finished, so guests
who are still eating or drinking do not feel rushed
Ex:
Excuse me sir/madam, may I clear up your plate/glass?
- If the item is served from the right, it must be removed the right. Of course, if the guest
is not easily reachable from that side, one shall collect the items from the other side.
- After the last course, but before the dessert, all plates, cutlery, condiments. Bread &
butter are cleaned from the table and any crumbs are removed.
13. Crumbing Down

14. Serving Dessert
Make sure the dessert are made as ordered.
- Serve dessert to the guest.
- Always serve ladies first.

- Repeat the name of the dessert and any special requests as you serve each dessert to
ensure that it is correct.

17. Farewell to the guest
- Thank the guest by name and bid farewell to all members of the party.
- Help customers leave their table.
- When assisting the guest, ensure ladies first.
