SERVICE STANDARD ROUTINE

WELCOME

1. GREETING AND WELCOMING


2. ASK IF THEY HAVE RESERVATION
3. SCORTING TO TABLE AND HAVE A NICE QUICK CHAT
4. BRING THE MENU : EXPLAIN MENU ,SPECIAL , MAKE YOUR SALAD AND ASK IF THEY
HAVE ANY ALLERGY OR ARE VEGAN/VEGETARIAN
● ORDER THE BREAD AND WELCOME IN IPAD IN TIME THE CUSTOMER CHOOSE
5. TAKE THE ORDER- collect the menu ( DON'T LEAVE MENU ON THE TABLE )
6. PREPARE AND BRING WELCOME ( don't forget to check ingredients from kitchen first) AND
BREAD --> EXPLAIN TO CUSTOMER WHAT YOU ARE GIVING TO THEM
7.BRING BREAD AFTER ORDER
8. BRING DRINKS AND USE ALWAYS COSTER

DURING SERVICE

7. Always repeat the order to customer before to input


8. Make sure to input correctly and make sure the kitchen and the bar received the order
9. Check the table has all is needed : sharing plates, wine glass, spoon. And bring back the
ceramic we use for the bread and the welcome ball if they've finished.
10. Take off empty plates when customer have finished ( please wait for all to be finish,
especially if they are two, maybe they want to share). and CLEAN the table to make it ready for
the next course.
11. . Always check if they have the second course after you clean the table and if yes tell the
kitchen TO GO for it.
12.When customer need change cutleries use plate service for bring to table ( DON'T GIVE
ANOTHER NAPKIN , THEY CAN USE ONLY 1 NUPKING IN ALL NIGHT )
13. When you serve pizza ask if they need chilly oil
14. when guest are about half of their meal ask if everything is good or if they need something
15. ALWAYS check their drinks and if you see empty bottles or glass ask if they want more.
Pour more wine if they have a bottle.
16. After they finish the last order wait a few minutes ( 5-10 ) and bring the menu for desserts or
coffees. If yes, remember to bring plates and spoons before the order come to the table.

END OF SERVICE

17. ALWAYS offer to customers our complementary small desserts or limoncello ( remember if
they said at the beginning to be vegan or allergic to something :) when they ask for the bill
18. When they ask for the bill double check everything before to print it!
