    Sustainability concerns are receiving increasingly attention by society and in turn, the food sector and consumers as the food sector’s final customers. Investments towards improvements in sustainability along the chain are usually not evenly distributed along the chain which affects the balance in the distribution of costs and returns. Transparency is a means for supporting an appropriate link between costs and returns. Various alternatives are being discussed. The chapter utilizes a case study approach for elaborating on the possibilities of regaining costs through price premiums, the communication of sustainability to consumers and the cooperation through horizontal and vertical networking alternatives that could support developments towards sustainability through gains in efficiency and concerted engagements in dealing with sustainability, costs and returns along the chain.

    In response to sanitary crisis, risk management has become a central issue for food producers and distributors in Europe. Organisational responses to sanitary risks usually implying traceability have been conceived by firms. One of the main tasks here is to deal with coordination of the different operators of a food chain. The European Union has developed a regulatory framework with the Regulation 178/2002. This regulation sets a mandatory traceability considered as a risk management tool. Traceability that was considered as a private initiative has therefore become an obligation with this regulation. This paper tries to evaluate if the problem of the operators' coordination on specific traceability practices that any private organisational of a food chain had to face is solved with the strict application of the Regulation 178/2002.     Enterprises in dynamic supply networks and chains with changing business partnerships are involved in complex dependency structures and interrelationships. Consequently, awareness of developments in the competitive and market environment is of paramount importance for economic success. The research presented in this paper deals with the conception of Internet-based support systems which supply actors in dynamic supply networks and chains with individualised information about their competitive and market environment. The paper builds on the situation in the agri-food sector but the discussions of the theoretical background and the principal system design generally apply to dynamic network scenarios.     This paper focuses on the level of inter-organizational trust-building elements in food chains of different countries. It is based on a theoretical typology of trust elements, developed and tested for an early stage of business to business (B2B) relationships. In a planned study, required data will be collected via qualitative expert interviews. The importance of trust elements will be measured by applying the analytic hierarchy process (AHP). The study will contribute to understanding the influence of cultural background and single key informants on inter-organizational trust. Results will be useful for the implementation of trust elements in B2B e-business applications.

    Electronically supported, innovative transaction processes may lead to efficiency gains and cost reductions enhancing the operational effectiveness. Electronic trade systems improve coordination between buyers and sellers and increase transaction efficiency by raising the operational effectiveness. An increased operational effectiveness compared to competitors may provide companies with a competitive advantage.Prerequisite for realizing efficiency gains is the appropriate process organization of electronic processes for a given market situation and thus the embedment into the given market scenario. The paper shows an exemplary market with small and medium enterprises (SME) with a comparatively high level of complexity and inefficiency where electronic trading could benefit participating enterprises. The benefits derive from improved transaction efficiency by using an embedded electronic trade system, which is shown in experiments by comparing traditional transaction processes with electronic processes in an SME market. The experimental results show major gains in transaction process efficiency for both buyers and sellers in electronic trading. The experiments further covered the support of multimedia elements like interactive media in online negotiations, as negotiations and personal communication are important for specific transaction types. The level of excellence was best for video support.

    The concept of quality management marks a major shift from traditional farm management through its emphasis on process management, process improvement, and customer links to improve customer defined quality of products and services and of process efficiency. This management concept aims at the survival and success of enterprises in sectors with competitive markets. It applies to the agri-food sector as a whole and, increasingly, to the farming sector as well. The shift in management concepts challenges traditional IT management support and requires a new view on management support needs and, consequently, on the requirements for IT management support. This paper analyses the present state of IT management support, specifies support requirements in quality management, and outlines a framework for new challenges in IT applications development.

    ABSTRACT Peptides containing beta-(3,4,5-trihydroxyphenyl)-L-alanine and beta-(3,4-dihydroxyphenyl)-L-alanine with C-terminal styrylamides form the tunichromes of the vanadium concentrating Phallusia mammillata from the subspecies of the tunicates (Urochorda). The structure of 1, the main tunichrome from P. mammillata, was elucidated with mass spectrometry (the fragmentation pattern is shown on the right). The native tunichromes are not bound to vanadium. The equimolar relationship of tunichrome and vanadium in the blood cells of tunicates suggests that tunichromes are responsible for their efficient enrichment of vanadium.

    The driver for this paper is the need to better understand the potential for learning and innovation that networks can provide especially for small and medium sized enterprises (SMEs) which comprise by far the majority of enterprises in the food sector. With the challenges the food sector is facing in the near future, learning and innovation or more focused, as it is being discussed in the paper, ‘learning for innovation’ are not just opportunities but pre‐conditions for the sustainability of the sector.     In the agri-food sector, quality and food safety concerns receive increased attention and have been the focus of initiatives on various levels of activity, reaching from enterprises to the sector as a whole on regional, national and international levels. The initiatives have to integrate the business management approach of 'quality management' (QM) with the interests of society and consumers in food safety and trustworthy safety guarantees. This paper builds on enterprise level quality management concepts, integrates food safety concerns and develops a framework for a sector-encompassing system for quality and food safety assurance. It relates the framework to present sector initiatives and develops recommendations for the design and implementation of a consistent sector assurance system.

    Discussions on the safety and quality of food as well as growing interest in the sustainability of the production, distribution and consumption of food have contributed to the emergence of ‘transparency ’ as a critical success factor for the food sector. However, reaching transparency for different stakeholders from different backgrounds and cultural identities is a dynamic process which depends on certain capabilities of enterprises and organizations along the food value chain but also on the realization of a fitting communication scheme within the sector. This discussion asks for the identification and utilization of an indicator that could identify deficiencies and support enterprises and the sector in reaching a level of transparency that could serve specified transparency needs. 1
