Resumen La chicha de manzana, aunque ostenta un rango de importancia dentro de la cultura del país, no ha sido estudiada, hasta el momento, más allá de alguna mención en textos que abordan las prácticas tradicionales chilenas. Este estudio se enfoca, en forma exploratoria (y en un primer nivel) en la producción de la chicha de manzana y su tipicidad como producto típico. Abstract Despite this importance in the culture of the country, Apple chicha has not been studied, beyond a mention in texts addressing traditional Chilean practices. Through the analysis of the peasants’ stories in the FUCOA collection, this work aims to develop the theme of cultural landscapes in the large northern Chile, specifically in the valley of Codpa and special links of its best product, Pintatani wine in definition of its own terroir. Wondering about a possible identity confusion between two local products (Codpa wine and Pintatani wine). And finally, we want to move forward the potential capacity of the wine production of this original product.

The present study examines the historical evolution of Chiloé apple chicha, as well as its social and cultural implications, between the late 19th and early 20th centuries. The commercial development around this drink is analyzed and how, in spite of the strong commercial competition of the industrialized chicheras towns of Valdivia, Llanquihue and Arauco, the constant attacks of the technocrats, and the fashion and the taste of the time, was able to overcome and, with a production less than that of its neighboring opponents, to obtain an epic development thanks to the cultural and territorial rooting of the product with its people.

El siguiente articulo examina el surgimiento de un grupo especializado de personas con capacidad de apreciar las cualidades de vinos y aguardientes, durante los siglos XVI, XVII y XVIII, en el Cono Sur de America . Ademas, investiga sobre la batalla que sostuvieron los diversos actores contemporaneos, tecnicos y criticos, por la definicion del buen vino. En la actualidad, esta batalla se libra en la arena de la historiografia. Por lo general, los catadores eran con vocados por los cabildos para funcionar como arbitros o peritos en los conflictos civiles y comerciales suscitados en torno a la calidad de vinos y aguardientes; la recurrencia de los pleitos y la necesidad de las partes demandantes de disponer de expertos de reconocida autoridad, generaron las condiciones optimas para el surgimiento de los primeros especialistas en ambitos vitivinicolas. espanolEn el marco de la historia de la fruticultura chilena, el presente articulo se focaliza en las plantas de frutos secos (nogales, almendros y castanos). A partir de documentos originales ineditos (testamentos, inventarios y tasaciones de bienes) se identifico la presencia de estas plantas en Chile y Cuyo. La lentitud de crecimiento del nogal, y el florecimiento temprano del almendro (julio) generaban problemas para el cultivo de estas plantas. No obstante, los altos precios de mercado de nueces y almendras motivaron a los fruticultores chilenos. Por lo general, los nogales se cultivaban en mayor numero de unidades productivas, pero en poca cantidad. En cambio los almendros eran cultivados en menor numero de chacras, pero en grandes almendrales, que llegaban a cientos y miles de plantas. A partir de su fundacion, la Sociedad Nacional de Agricultura (1838) comenzo a publicar revistas sobre temas agrarios. Genero asi un singular corpus documental, dentro del cual el presente trabajo examina los textos dedicados a fruticultura. Se detectaron cerca de 300 articulos sobre el tema, referidos, principalmente, a la forma de cultivar las plantas, enfermedades y plagas, conservacion de frutas y exportacion. Se detectan relaciones con publicaciones agrarias extranjeras, sobre todo de EE.UU. y Argentina. La influencia de la SNA contribuyo a cambiar el paisaje de la fruticultura en Chile, segun se reflejo en el censo agricola de 1936

This paper studies the walls of mud in the cities of Chile and Cuyo (now Argentina) since the Spanish conquest until the late nineteenth century. From archives of original documents, a corpus of documents was built with veritable information about 400 walls of mud. The sources deliver data about the parts of these walls (foundations, mud walls, fences), including measures (length, height, thickness), building materials and molds (mud walls, gates, tampers). The relevance of mud walls as patio and home closures was detected. The link between mud walls and the development of small holdings, working culture and intensive agriculture in the region (vineyards and orchards) also stands out. The mud walls helped build the foundation for these activities in the region that currently represents one of the main centers of the world's fruit growing and viticulture.

Este artículo examina al aporte de los árabes al proceso de construcción de la cultura de apreciación de la fruta y los frutales. Se avanzó en esa dirección no sólo mediante la incorporación y propagación de las plantas, particularmente desde Al Andalus, sino también con su puesta en valor en la cultura universal, a través de Las mil y una noches. Si los botánicos y agrónomos andalusíes aportaron avances científicos sobre las plantas frutales y la forma de cultivarlas y aprovecharlas, los relatos literarios de la cultura islámica complementaron la acción de aquellos, al situar las frutas y los frutales en el centro del imaginario social, en los lugares de mayor prestigio (jardines, palacios, salones) y asociarlos a la sensualidad, la belleza y el placer.

The present essay identifies the smellscapes of colonial and early Republican Chile through the reconstruction of botanical aromas in private urban gardens. Using archival documents in the Chilean National Archives, the Franciscan Archives of Chile, the Judicial Archives of San Juan Province and the Historical Archives of Mendoza we identify the botanical contents of enclosed gardens and orchards in upper-class homes. In contrast to previous studies that have linked the bad odors of early modern Latin America to infirmity and poverty, our purpose is to consider the place of pleasant aromas as part of a garden typology in which the garden is a reconstruction of paradise. Through our analysis of inventories and appraisals we identify continuities in botanical contents and structure between private Chilean gardens and prototypes in Moorish Spain. Our data confirms that the aromas of roses, jasmine, and citrus were a feature of the elite Chilean garden alongside native plants, and the resulting pleasant sensorial experiences imparted a paradisiacal ideal adapted from Moorish-Spanish antecedents. Ultimately, we interpret the fragrances of such private gardens as performances of power that gave presence to the hidden sites where elite Chilean networks were forged, and thus served as ephemeral signals of social exclusivity.

FECHA DE RECEPCIÓN: 2 noviembre 2017-FECHA DE ACEPTACIÓN: 16 enero 2018 RESUMEN: El presente estudio examina la evolución histórica de la chicha de manzana de Chiloé, así como también su implicancia social y cultural, entre fines del siglo XIX y principios del XX. Se analiza el devenir comercial alrededor de esta bebida y cómo, a pesar de la fuerte competencia comercial de las industrializadas localidades chicheras de Valdivia, Llanquihue y Arauco, los constantes ataques de los tecnócratas, y la moda y el gusto de la época, logró sobreponerse y, con una producción menor a la de sus contrincantes vecinas, obtener un desarrollo épico gracias al arraigo cultural y territorial del producto con su gente. Pisco is a brandy made from selected grapes, restricted as Appellation of Origin (AO) in 1931 in Chile by executive order number 181 of May 15, and also legally protected by Peru in 1991 by executive resolution of December 12 and executive order 001-91-ICTI/IND of January 16. This AO has given rise to a commercial controversy between producers of both countries, who claim it as their own. This article proposes a new thesis: The AO of pisco is actually bi-national, belonging to Chile as well as to Peru. The reason is that the producers of the two countries contributed to the origin and consolidation of this product. Pisco would not exist without the participation of both of them. Therefore, the two countries have co-ownership rights since they are co-founders.

RESUMEN Se estudia la historia del pipeño, vino típico del centro-sur de Chile. Se trata de un vino elaborado a partir de Uva País, Moscatel de Alejandría y otras variedades criollas. Debe su nombre a las " pipas " , barriles de roble chileno, que se comenzaron a usar en el siglo XVIII. Se trata de vinos elaborados con métodos artesanales, con profundo arraigo en las capas populares y campesinas de Chile. Durante mucho tiempo fue valorado negativamente por los enólogos y especialistas. Pero en los últimos años se ha comenzado a descubrir a partir de su identidad, su historia y su arraigo social. Palabras clave: pipeño, vinos chilenos, industria del vino. ABSTRACT This article studies the history of Pipeño, typical wine of south-central Chile. This is a wine made from grapes Country, Muscat of Alexandria and other landraces. It owes its name to the " pipes " Chilean oak barrels, which were first used in the eighteenth century. These are wines made from traditional methods, with deep roots in folk and peasant layers of Chile. For a long time was negatively valued by wine experts and specialists. But in recent years it has begun to discover from their identity, history and social roots.

The following article examines the emergence of a specialized group of people with the ability to appreciate the quality of wines and spirits, during the sixteenth, seventeenth and eighteenth centuries, in the Southern Cone of America. Furthermore, writing this article will also explain the battles held by contemporary technical and critical actors, to achieve the definition of a good wine. Today, this battle is fought in the arena of historiography. Usually, the tasters were summoned by the councils to act as arbitrators or experts in civil and commercial disputes about the quality of wines and spirits, due to the recurrence of the lawsuits and the need for the applicants to have experts of recognized authority. They generated the optimal conditions for the emergence of the first specialist in viticultural areas. This article wonders about the historiographical debates that support lobbyists and reporters to assert their judgments on the quality of wine and spirits in the colonial period. At the same time, the duties and functions of a rising job, the catavinos (wine taster), are established. The work focuses on Lima, Potosí, Jujuy, Buenos Aires, Mendoza, Santiago and La Serena jurisdictions.

RESUMEN El artículo estudia la elaboración de aguardiente en la Zona Central de Chile, en los corregimientos de Quillota, Colchagua y Cauquenes a partir del padrón de 1777. Se detecta una cultura de elaboración de aguardiente a partir de borras y orujo en la Zona Central de Chile. Ello implica una clara diferencia con las prácticas vigentes en el Norte de Chile, donde se elaboraba aguardiente a partir del vino (pisco). Esta actividad no estaba concentrada sino distribuida entre muchos pequeños productores. Era una actividad transversal a distintos sectores sociales: distinguidos nobles y audaces comerciantes; ricos hacendados y campesinos pobres.
